Steps:
- In a large saucepan, combine the first seven ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 5-10 minutes or until thickened, stirring occasionally., Meanwhile, in a shallow bowl, whisk egg and salad dressing. Place bread crumbs in another shallow bowl. Dip zucchini slices in egg mixture, then coat with bread crumbs. Cook on an indoor grill for 2-3 minutes or until golden brown. Serve with marinara.

CRISPY ZUCCHINI FRIES WITH BUTTERMILK RANCH DIPPING SAUCE

- For the buttermilk ranch dipping sauce: In a bowl, combine the buttermilk, mayonnaise, chives, dill, celery salt, garlic powder and onion powder. Mix well. Cover and chill for 1 hour.
- For the zucchini fries: Add the flour to a shallow baking dish. In a second baking dish, lightly beat the eggs with 1/2 teaspoon salt and 1/4 teaspoon black pepper. In a third baking dish, combine the panko, Parmesan, garlic powder, 1 teaspoon salt and 1/4 teaspoon pepper; gently crush all the ingredients together with your hands--this will ensure an even coating on the zucchini.
- Lightly coat the zucchini sticks in the flour and then dip into egg mixture, coating evenly. Gently shake to remove excess egg and then generously coat the zucchini in the panko mixture. Transfer the breaded zucchini to a baking sheet.
- Fill a high-sided skillet with about 1 inch of oil--make sure the oil does not rise more than halfway up the side of the skillet. Heat over medium-high heat. Working in batches to avoid overcrowding, add the zucchini sticks to the pan. Cook until light golden brown, turning once, 2 to 3 minutes. Immediately remove the zucchini to a cooling rack set over a baking sheet. Keep warm in a 175-degree oven until ready to serve.
- Serve the zucchini fries with the dipping sauce on side.

- Preheat the oven to 450 degrees F. Coat a baking sheet with cooking spray.
- Slice the zucchini into 1/4-inch thick rounds. In a medium bowl, toss the zucchini with the oil. In a small bowl, combine the Parmesan, bread crumbs, salt, and a few turns of pepper. Dip each round into the Parmesan mixture, coating it evenly on both sides, pressing the coating on to stick, and place in a single layer on the prepared baking sheet.
- Bake the zucchini rounds until browned and crisp, 25 to 30 minutes. Remove with spatula. Serve immediately.

- Preheat oven to 400 degrees.
- Prepare baking sheet with heavy spray of non-stick cooking spray.
- Place eggs or egg substitute in shallow bowl; set aside.
- Mix together dry ingredients in another shallow bowl; set aside.
- Cut zucchini into fingers 3/8"x3".
- Dip zucchini into egg substitute, then roll in bread crumbs, coating thoroughly.
- Place on baking sheet.
- Lightly spray tops of zucchini with non-stick spray.
- Bake at 400 degrees for 8 minutes; turn with spatula, then bake 7-8 minutes more, or until crispy and golden.

- Spread each slice of zucchini with a thin layer of yogurt. Mix crumbs and parmesan together and sprinkle on both sides of zucchini.
- Preheat oven to 400 degrees. Place zucchini on parchment paper and bake until golden brown - approx. 20 min.
- Carefully flip zucchini and brown on the other side. Remove and place on a platter along with marinara sauce.
- For Marinara Sauce -- add all ingredients and mix well - cover and simmer for approx. 30 minutes or until sauce is thickened.

- Spoon sauce over zucchini; mix well.
- Sprinkle cheese over sauce; cover.
