I've had the recipe for these crispy cinnamon-sugar roll-ups for years. They're one of my family's favorites and so easy to make. We enjoy them at breakfast with a cup of coffee. -Emily Engel, Quill Lake, Saskatchewan

Number Of Ingredients 11

2-1/2 cups all-purpose flour
1 teaspoon baking powder
1 cup cold butter
1/2 cup milk
1 large egg, beaten
1 cup sugar
4 teaspoons ground cinnamon
OPTIONAL GLAZE:
1 cup confectioners' sugar
1 to 2 teaspoons ground cinnamon
4 teaspoons 2% milk

Steps:

  • Combine flour and baking powder in a large bowl; cut in butter until crumbly. Stir in milk and egg. Divide into three portions; shape each portion into a ball., Combine sugar and cinnamon; sprinkle a third over a pastry board or a surface. Roll one ball into a 12-in. circle; cut into 12 wedges. Roll up from wide edge. Repeat with the remaining dough and cinnamon sugar. Place rolls with point side down on a lightly greased baking sheets; form into crescent shapes. Bake at 350° for 16-18 minutes or until lightly browned (do not overbake)., For optional glaze, combine confectioners' sugar, cinnamon and milk until smooth. Drizzle over cooled crescents.

1 cup butter, softened
1 package (8 ounces) cream cheese, softened
2 cups sugar
1 large egg
1 teaspoon vanilla extract
1/4 teaspoon almond extract
3-1/2 cups all-purpose flour
1 teaspoon baking powder
1-1/2 cups miniature chocolate chips
Glaze:
3 cups semisweet chocolate chips
1/4 cup shortening
1-1/4 cups ground walnuts

Steps:

  • In a large bowl, cream butter, cream cheese and sugar until light and fluffy. Beat in egg and extracts. In another bowl, whisk flour and baking powder; gradually beat into creamed mixture. Stir in chocolate chips., Divide dough into 10 portions. Shape each into a disk; wrap in plastic. Refrigerate 2 hours or until easy to roll., Preheat oven to 375°. On a lightly floured surface, roll each portion into a 24-in. rope; cut into 2-in. lengths. Place 1 in. apart on ungreased baking sheets; curve to form crescents. Bake 6-8 minutes or until edges are light brown. Remove to wire racks to cool completely., In a small bowl, melt chocolate chips and shortening; stir until smooth. Dip each cookie halfway into chocolate mixture; allow excess to drip off. Sprinkle with walnuts. Place on waxed paper; let stand until set., To Make Ahead: Dough can be made 2 days in advance. Wrap in plastic and place in a resealable bag. Store in the refrigerator., Freeze option: Freeze cookies, layered between waxed paper, in freezer containers. To use, thaw before serving.

1/2 lb butter
2 cups flour
2 cups really finely chopped pecans
1/2 teaspoon salt
5 tablespoons sugar
2 teaspoons vanilla
1 tablespoon water

Steps:

  • Cream butter and add sugar, vanilla and water.
  • Sift flour and salttogether and stir into mixture. Add pecans and stir well.
  • Using portions about the size of a small walnut; roll into cresent shape.
  • Bake in slow oven, that means 325 degrees, about 20 minutes.
  • While cookies are still warm; roll in powdered sugar.

1 (12 ounce) can seamless crescent rolls
8 ounces cream cheese, room temperature
1/3 cup sugar
2 teaspoons vanilla
3/4 cup peanut butter chips (use a mixture) or 3/4 cup chocolate chips (use a mixture)

Steps:

  • Beat sugar, cream cheese and vanilla together until smooth and creamy.
  • Unroll the crescent roll sheet onto lightly floured surface. . Stretch the dough out, I use a rolling pin to do this, then trim the edges to give it a good rectangular shape. A pizza cutter is great for trimming edges of dough. Pinch together seams on pre-cut crescents if necessary.
  • Spread the cream cheese mixture over the top of the crescent sheet, leaving a gap at the edge about 1/2 inch.
  • Sprinkle your chips on top of cream cheese - press them in lightly to aid in rolling.
  • Roll the crescent sheet up tightly and wrap in cling wrap.
  • Place in freezer for at least 2 hours it won't get really solid as the cream cheese mix won't freeze hard.
  • When chilled preheat oven to 350°.
  • Line a cookie sheet with parchment paper (prevents sticking and helps in cleanup).
  • Slice the crescent roll into 1/4" slices. They won't keep the precise round shape, but that is fine!
  • Bake on prepared cookie sheet for 12 -14 minutes until crescent roll appears golden brown.
  • Cool on the parchment paper or wire rack.

  • If using crescent rolls, unroll the dough and separate into 2 long rectangles. Press each into a 12×4-inch rectangle and press the perforations to seal. If using dough sheet, unroll dough and cut lenghtwise into 2 rectangles. Press each into a 12×4-inch rectangle.
  • Spread the cream cheese mixture evenly over the top of the dough. Sprinkle the chocolate chips evenly over. Starting on the short side, roll up each rectangle and press the edge to seal. With a serrated knife, cut each roll into 6 slices; place cut side down on an ungreased baking sheet.
