This Creamy Salsa Chicken combines tender chicken breast with rich salsa, tangy sour cream, and two cheeses for a Mexican inspired meal that everyone enjoys! It is all baked in just one casserole dish for easy prep and even easier clean up!

Steps:
- Preheat the oven to 375˚F.
- Lay the chicken breast flat in a large baking dish.
- Mix the cream cheese, sour cream, and salsa together until combined. Then spread over the chicken.
- Top with cheddar cheese. Then bake for 25-35 minutes or until the chicken is cooked through (165˚F internal temp.)
- Remove from oven and garnish with cilantro if desired. Enjoy!

Creamy Chicken dish with mild flavors. Serves great as filling dinner with chips to dip, flat breads, hoagie rolls or just by itself. My family consists of 1 adult, 2 big and 2 small children, we always have leftovers.

Steps:
- Empty bag of chicken into crockpot, if thawed lessen time by 1 hour.
- Pour in Salsa.
- (if using regular rice put in now).
- cook high 4 hours or low 6-8.
- During last 30-60 mintues I add corn, beans, minute rice and cream cheese.
- Chicken will fall apart and generally is shredded into recipee.
- Yummy with tortilla chips, flat bread, rolls, or just in a bowl.
- This recipee can be altered and turn out fine, I have changed it many times and always had success.

CREAMY CHICKEN ENCHILADAS VERDE

Steps:
- 1. HEAT oven to 350 degrees F.
- 2. MIX sour cream and salsa until well blended.
- 3. Cook and stir onions and garlic in hot oil in large skillet on medium heat 4 to 5 min. or until vegetables are crisp-tender.
- 4. Stir in chicken, 1 cup sour cream mixture, chiles and 1/2 cup cheese .
- 5. SPOON about 1/3 cup chicken mixture down center of each tortilla
- 6. Roll up.
- 7. Place, seam-sides down, in 13x9-inch baking dish sprayed with cooking spray. Top with remaining tomatillo sauce and cheese. Cover.
- 8. BAKE 15 to 20 min. or until heated through.
- Serving Suggestion:
- Serve with a side of hot cooked rice to round out the meal.
- Special Extra:
- Sprinkle with chopped tomatoes and sliced green onions just before serving.
- Variation:
- Prepare as directed, omitting the oil and substituting 1 lb. extra-lean ground beef for the chicken. Brown meat with onions and garlic; continue as directed.
- How to Shred Cooked Chicken:
- Place cooked chicken on cutting board. Use 2 forks or your fingers to pull meat lengthwise in opposite directions, separating it into long shreds.
EASY CREAMY SALSA CHICKEN
This is a quick weeknight recipe with only a few ingredients but lots of possibilities. Goes together quickly, then in the oven while you prepare sides and garnish. We poured the salsa chicken over jasmine rice in homemade baked tortilla bowls, garnished with shredded cheddar cheese. Yummy! Can be served with Spanish rice, garnished with cheese, black olives and green onions! Endless!

Steps:
- Coat chicken tenders with 1/3 of the taco seasoning.
- Brown tenders thoroughly in hot oil, remove from pan to a baking dish prayed with non-stick spray.
- Pour salsa into skillet, add remaining taco seasoning and stir to warm.
- Pour salsa over chicken, cover and bake for 30 minutes at 350 degrees.
- Let chicken sit for 5 minutes then stir in sour cream.
- You can break the chicken up into bite size pieces or shred it if you like.
- Serve over hot rice, regular or Spanish style, garnished with shredded cheese, black olives, chopped green onion, etc.

- Spray liner of crock pot with vegetable spray.
- Add the chicken breasts on the bottom.
- Don't lay them on top of each other.
- Sprinkle with taco seasoning mix with salsa poured on top.
- Cook on low for 6 to 8 hours.
- When ready to serve, remove chicken from crock pot and place on meat platter covered with aluminum foil.
- Mix together 3 Tablespoons water and 2 Tablespoons cornstarch.
- Add to salsa mixture in crock pot and stir well.
- Turn crock pot to high and sauce should begin to thicken in five minutes.
- Next, stir in sour cream.
- Enjoy!

One of my new coworkers, Maria, brought me a zip-top bag of washed and prepped ingredients and told me to just throw it all in a blender. In a matter of seconds, this delicious salsa verde was born! The salsa gets its creaminess from the addition of avocado. For a mild salsa, remove the seeds and membranes from all 3 jalapenos; for extra spicy, leave them all in. I prefer to leave the seeds in only 1 jalapeno.
