- In a large saucepan, heat 2 cups broth, reserving remainder, over medium heat. Bring to a boil; stir in rice, salt and garlic powder. Reduce heat; simmer, covered, until most of the liquid is absorbed, about 20 minutes., Stir in Parmesan cheese. Add reserved broth, 2 tablespoons at a time, stirring constantly, until liquid is absorbed after each addition. Cook just until creamy and rice is almost tender, 5-10 minutes. Stir in parsley. Serve immediately.

Steps:
- Heat the oven to 350°F or 180°C.
- Put the rice, stock, cream, garlic and parmesan into an ovenproof casserole dish.
- Cover with foil and put in the oven to cook for 40-45 minutes.
- Check on the rice at 35 minutes- stir it gently and lay knobs of butter over the top. Re-cover and put back in the oven to finish cooking.
- When the rice is done- stir, serve immediately and enjoy!

Steps:
- Heat oven to 350°F.
- Mix cream cheese spread, milk and seasonings in large bowl until blended. Stir in marinara sauce. Add rice, chicken, green beans and basil; mix well.
- Spoon into 2.5-qt. casserole dish, mine is 4x13x9, sprayed with non-stick cooking spray; cover.
- Bake 30 minutes. Uncover and stir. Combine remaining ingredients; sprinkle over casserole. Bake 20-25 minutes or until casserole is heated through and topping is golden brown. Let stand 5 minutes before serving.

- Preheat oven to 450 degrees F (230 degrees C).
- Spread rice in the bottom of a 9x13 inch baking dish; set aside.
- In a medium saucepan melt butter or margarine and stir in flour until smooth. Gradually add milk, bouillon granules, seasoned salt, garlic powder and pepper. Stir all together and bring to a boil. Let simmer and stir for 2 minutes or until thickened and bubbly. Reduce heat; add chicken, cheese and sour cream. Stir until cheese is melted. Mix all together and pour mixture over rice.
- Melt 1/2 cup butter or margarine in saucepan and toss with crushed cracker crumbs. Sprinkle crumb mixture over casserole. Bake in the preheated oven for 10 to 15 minutes or unti heated through.

CREAMY WILD RICE AND CHICKEN BAKE
This rice dish is absolutely delicious, I have made it quite a few times and my family just goes wild over it! Prep time does not include pre-boiling the long grain and wild rice. I have even added in chopped jalapenos. If you cannot find uncooked long grain and wild rice use two (250 gram each) packages Uncle Ben's Bistro Express Long Grain and Wild rice with Fine Herbs, it is already precooked, do not preheat the package of rice just add to the recipe as directed. This complete recipe can be doubled, use three packages of the precooked rice for this, not four if you are doubling the recipe.

Steps:
- Set oven to 400 degrees.
- Butter a 2-quart casserole dish (use a large dish if you are doubling the recipe).
- Cook the rice according to package directions; set aside.
- In a skillet melt butter, add in onion, drained mushrooms and garlic, cook stirring until soft (about 5 minutes).
- Stir in flour, salt, pepper, half and half cream and broth; cook stirring until thickened (about 5 minutes).
- Stir in Parmesan cheese, and cook for another 2-3 minutes.
- Add in cooked chicken, pimiento, parsley, nuts and the cooked rice; mix well with a wooden spoon to combine.
- Spoon into a casserole dish.
- Sprinkle with more grated Parmesan cheese.
- Bake uncovered for about 25-30 minutes.
- Delicious!

- Heat oil in large nonstick skillet on medium-high heat. Add scallops; cook 5 min. or until opaque, turning occasionally. Remove from skillet; cover to keep warm.
