SOUR CREAM PESTO DIP WITH PROSCIUTTO DIPPERS

- Preheat the oven to 180°C. Place the pre-rolled rectangle of puff pastry on a lined baking tray and brush with the mustard. Sprinkle over the Parmesan then make a layer of prosciutto so the pastry is mostly covered. Press down slightly so everything sticks together a little easier
- . Cut the pastry into 14 strips across the way then double them up making sure the Prosciutto sides are facing each other. You should now have 7 long prosciutto pastry sandwiches. Each dipper can be cut in half at this point if you want to serve more smaller portions.
- Twist each dipper into curly straws and place back onto the baking sheet. Brush each dipper with egg then bake for 10-15 minutes until golden and crispy.
- Meanwhile make the pesto. Place the basil, parmesan, garlic, pine nuts and olive oil in a bowl and blitz together with an immersion (handheld) blender until completely smooth. Season with salt and pepper and add the sour cream, stir then transfer to serving bowl.
- Once the dippers are golden and crispy, remove from oven and let cool slightly before serving with the sour cream pesto dip.

Serve this delicious sauce over your favorite pasta for a quick, delectable meal. Do NOT substitute half-and-half for the heavy cream if you want a thick sauce. Heavy cream contains at least 36% milkfat. Half-and-half, just like the name says, is half milk and half cream and is no more than 18% milkfat. If half-and-half is used, the sauce will only be half as thick as it would if heavy cream were used. Also, if the amount of butter is reduced, that will also make the sauce thinner, as butter is 80% milkfat.

- If using two chicken breasts, cut chicken in half lengthwise, so you have two thing portions. Use a mallet to slightly flatten the chicken. If using four small breasts, use a mallet to slightly flatten chicken.
- Add chicken to a large plastic ziplock bag. Add in lemon juice, olive oil and garlic. Place in a shallow dish and marinate in the fridge for at least 30 minutes and up to two hours.
- Once chicken is marinated, preheat grill. Dry chicken off, and sprinkle both sides with salt and pepper. Spread a teaspoon of pesto on top each chicken breast. Cover with a slice of prosciutto. Use two toothpicks to secure the prosciutto to the chicken.
- Grill, prosciutto side-down until prosciutto is crisp, about 3 minutes. Flip and cook another 3-4 minutes or until chicken is cooked through.
- While the chicken cooks, add heavy cream to a small saucepan.Bring to a boil and reduce to a simmer until slightly thickened, about 2 minutes. Turn the heat off and whisk in cheese. Once cheese is incorporated whisk in remaining pesto. Season to taste with salt and pepper
- Serve grilled chicken with pesto cream sauce and sprinkle with toasted pine nuts.

CHICKEN WITH PESTO AND PROSCIUTTO
Came up with this when I had leftover cream cheese-pesto appetizer spread. It's similar to Cordon Bleu but with different ingredients.

Steps:
- Preheat oven to 375 degrees.
- Mix softened cream cheese and pesto and set aside.
- Season flour with salt and pepper on sheet of wax paper. Set aside.
- Mix egg and water in bowl. Set aside.
- Pour panko into flat container. Season with thyme or oregano, if desired. Set aside.
- Pound chicken breasts to 1/4 inch thickness. Place prosciutto slice on top of chicken and put about 1.5 T of cream cheese mixture on top. Roll chicken breast and secure ends with toothpicks.
- Dredge chicken in seasoned flour, roll in egg wash, and then cover with panko crumbs. Sprinkle olive oil over to ensure crumbs will brown.
- Place in shallow, greased baking pan and bake 15-20 minutes. Turn oven to broil and broil 3-4 minutes to crisp up and brown the outside.
- Serve.

- Preheat oven to 400°F.
- Cut just the top end of the garlic head off to expose the tips of the garlic bulbs. Place the garlic onto a piece of aluminum foil that will be large enough to wrap around the whole head. Drizzle the garlic with the olive oil and then wrap aluminum foil tightly around the garlic. Place the garlic into your oven for 30 to 40 minutes until the garlic has caramelized and softened.
- Reduce the heat of the oven to 350°F.
- Break apart the garlic head and squeeze out each bulb of garlic into the bowl of a mixer. Add in the cream cheese and mix the mixture until it is well combined.
- Spread the garlic cream cheese into the bottom of a small baking dish. Spread the pesto over the top of the cream cheese in a nice even layer.
- Slice all of the tomatoes in half and spread over the top of the pesto.
- Bake for 20 to 30 minutes until the cream cheese is bubbly.
