Sour Cream Pesto Dip with Prosciutto Dippers image

You will love this Sour Cream Pesto Dip with Prosciutto Dippers Recipe. Homemade pesto is swirled with sour cream and served with mustard, Parmesan and Prosciutto pastry twists.

30 g basil leaves
10 g pine nuts
20 g Parmesan (freshly grated)
1 clove garlic (cut in half)
40 ml olive oil (extra virgin)
100 g sour cream
pinch salt and pepper (to season)
230 g puff pastry (pre-rolled rectangle)
1 tbsp (heaped) Dijon mustard
1 tbsp (heaped) Parmesan (freshly grated)
100 g Prosciutto Crudo (good quality)
1 egg (beaten)
pinch pepper (to season)

Steps:

  • Preheat the oven to 180°C. Place the pre-rolled rectangle of puff pastry on a lined baking tray and brush with the mustard. Sprinkle over the Parmesan then make a layer of prosciutto so the pastry is mostly covered. Press down slightly so everything sticks together a little easier
  • . Cut the pastry into 14 strips across the way then double them up making sure the Prosciutto sides are facing each other. You should now have 7 long prosciutto pastry sandwiches. Each dipper can be cut in half at this point if you want to serve more smaller portions.
  • Twist each dipper into curly straws and place back onto the baking sheet. Brush each dipper with egg then bake for 10-15 minutes until golden and crispy.
  • Meanwhile make the pesto. Place the basil, parmesan, garlic, pine nuts and olive oil in a bowl and blitz together with an immersion (handheld) blender until completely smooth. Season with salt and pepper and add the sour cream, stir then transfer to serving bowl.
  • Once the dippers are golden and crispy, remove from oven and let cool slightly before serving with the sour cream pesto dip.

140g pack grissini stick (bread sticks)
90g pack prosciutto
1 tbsp pine nut
extra-virgin olive oil , for drizzling

Steps:

  • Mix the soft cheese with 2 tbsp basil pesto. Take the pack grissini (bread sticks) and halve each one. Cut the prosciutto into strips and wrap around the end of each grissini. Serve alongside the pesto dip. Scatter the pine nuts over dip and drizzle with extra virgin olive oil before serving.

If half-and-half is used, the sauce will only be half as thick as it would if heavy cream were used. Also, if the amount of butter is reduced, that will also make the sauce thinner, as butter is 80% milkfat.

1 lb chicken breasts (2 large breasts or 4 small)
1/3 cup lemon juice
1 tbsp olive oil
2 large garlic cloves, grated
1/4 cup pesto
1/2 cup heavy cream
1/4 cup grated parmigiano reggiano
2 tbsp toasted pine nuts

Steps:

  • If using two chicken breasts, cut chicken in half lengthwise, so you have two thing portions. Use a mallet to slightly flatten the chicken. If using four small breasts, use a mallet to slightly flatten chicken.
  • Add chicken to a large plastic ziplock bag. Add in lemon juice, olive oil and garlic. Place in a shallow dish and marinate in the fridge for at least 30 minutes and up to two hours.
  • Once chicken is marinated, preheat grill. Dry chicken off, and sprinkle both sides with salt and pepper. Spread a teaspoon of pesto on top each chicken breast. Cover with a slice of prosciutto. Use two toothpicks to secure the prosciutto to the chicken.
  • Grill, prosciutto side-down until prosciutto is crisp, about 3 minutes. Flip and cook another 3-4 minutes or until chicken is cooked through.
  • While the chicken cooks, add heavy cream to a small saucepan.Bring to a boil and reduce to a simmer until slightly thickened, about 2 minutes. Turn the heat off and whisk in cheese. Once cheese is incorporated whisk in remaining pesto. Season to taste with salt and pepper
  • Serve grilled chicken with pesto cream sauce and sprinkle with toasted pine nuts.

Came up with this when I had leftover cream cheese-pesto appetizer spread. It's similar to Cordon Bleu but with different ingredients.

1/2 lb boneless chicken breast
4 ounces softened cream cheese
1 tablespoon prepared pesto sauce
2 -4 prosciutto, slices
1 egg
1 teaspoon water
1/4 cup flour
1/2 cup panko breadcrumbs
salt and pepper
olive oil

Steps:

  • Preheat oven to 375 degrees.
  • Mix softened cream cheese and pesto and set aside.
  • Season flour with salt and pepper on sheet of wax paper. Set aside.
  • Mix egg and water in bowl. Set aside.
  • Pour panko into flat container. Season with thyme or oregano, if desired. Set aside.
  • Pound chicken breasts to 1/4 inch thickness. Place prosciutto slice on top of chicken and put about 1.5 T of cream cheese mixture on top. Roll chicken breast and secure ends with toothpicks.
  • Dredge chicken in seasoned flour, roll in egg wash, and then cover with panko crumbs. Sprinkle olive oil over to ensure crumbs will brown.
  • Place in shallow, greased baking pan and bake 15-20 minutes. Turn oven to broil and broil 3-4 minutes to crisp up and brown the outside.
  • Serve.

1 tbsp Pine nuts

Steps:

  • First spread the soft cream cheese over the bottom of a baking dish.
  • Next spread the pesto over the cheese.
  • Then sporadically place the tomato halves on the pesto layer and sprinkle with pine nuts.

1 head of garlic
1 teaspoon olive oil
8 oz cream cheese
1/2 cup pesto
1 pint cherry tomatoes

Steps:

  • Preheat oven to 400°F.
  • Cut just the top end of the garlic head off to expose the tips of the garlic bulbs. Place the garlic onto a piece of aluminum foil that will be large enough to wrap around the whole head. Drizzle the garlic with the olive oil and then wrap aluminum foil tightly around the garlic. Place the garlic into your oven for 30 to 40 minutes until the garlic has caramelized and softened.
  • Reduce the heat of the oven to 350°F.
  • Break apart the garlic head and squeeze out each bulb of garlic into the bowl of a mixer. Add in the cream cheese and mix the mixture until it is well combined.
  • Spread the garlic cream cheese into the bottom of a small baking dish. Spread the pesto over the top of the cream cheese in a nice even layer.
  • Slice all of the tomatoes in half and spread over the top of the pesto.
  • Bake for 20 to 30 minutes until the cream cheese is bubbly.
  • Serve with toasted baguette's or your favorite vegetables.
