2 1/2 cups water
2 cups frozen mixed vegetables
1 (7.25-ounce) package macaroni & cheese mix
1 teaspoon salt
1/2 teaspoon black pepper
3 cups milk
2 cups shredded sharp Cheddar cheese

Steps:

  • In a soup pot over medium-high heat, bring water to a boil. Stir in mixed vegetables, macaroni from package (reserving cheese packet), salt, and pepper. Return to a boil and cook 5 minutes, stirring occasionally.
  • Add remaining ingredients, including reserved cheese packet. Reduce heat to low and simmer 8 to 10 minutes, or until slightly thickened and creamy, stirring occasionally.

1 ½ cups whole-wheat elbow macaroni
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
2 teaspoons Dijon mustard
4 cups low-sodium chicken broth
1 (10 ounce) box frozen pureed winter squash, thawed slightly
2 cups half-and-half
1 (8 ounce) package reduced-fat cream cheese, cubed and softened
1 ½ cups shredded Cheddar cheese
2 teaspoons cornstarch
2 teaspoons white-wine vinegar
¼ teaspoon ground pepper
Sliced chives for garnish

Steps:

  • Cook macaroni according to package directions. Drain and set aside.
  • Meanwhile, melt butter in a large pot over medium heat. Add flour and mustard and whisk for 2 minutes. Gradually add broth, stirring constantly. Bring to a boil.
  • Add squash and return to a boil. Stir in half-and-half and bring to a simmer. Add cream cheese, whisking constantly until it is melted. Remove from heat.
  • Combine Cheddar and cornstarch in a medium bowl, tossing to coat evenly. Slowly add the cheese to the soup, stirring constantly until melted. Stir in the macaroni, vinegar and pepper. Top with chives, if desired.

1 package (14 ounces) deluxe macaroni and cheese dinner mix
9 cups water, divided
1 cup fresh broccoli florets
2 tablespoons finely chopped onion
1 can (10-3/4 ounces) condensed cheddar cheese soup, undiluted
2-1/2 cups 2% milk
1 cup chopped fully cooked ham

Steps:

  • Set aside cheese sauce packet from macaroni and cheese mix. In a large saucepan, bring 8 cups water to a boil. Add macaroni; cook for 8-10 minutes or until tender., Meanwhile, in another large saucepan, bring remaining water to a boil. Add broccoli and onion; cook, uncovered, for 3 minutes. Stir in the soup, milk, ham and contents of cheese sauce packet; heat through. Drain macaroni; stir into soup.

5 teaspoons chicken bouillon granules
1-1/2 cups sliced celery
2 large carrots, shredded
1 large onion, chopped
1 medium green pepper, chopped
2-1/2 cups uncooked elbow macaroni
1 cup butter, cubed
3/4 cup all-purpose flour
6 cups whole milk
1 pound Velveeta, cubed

Steps:

  • In a stockpot, bring water and bouillon to a boil. Add celery, carrots, onion and green pepper; cook for 4 minutes or until tender. Add macaroni. Cover and return to a boil; boil 2 minutes. Remove from the heat; let stand for 8-10 minutes or just until macaroni is tender., Meanwhile, melt butter in a large saucepan. Add flour, stirring until smooth. 1 lb macaroni
4 tablespoons butter
2 1/2 cups shredded cheddar cheese (I use combination of freshly shredded medium cheddar and extra sharp cheddar)
10 1/2 ounces cheddar cheese soup, undiluted
12 ounces evaporated milk
1/4 cup sour cream
2 eggs, beaten (optional)
1/2 teaspoon salt
1/2 teaspoon white pepper
1/4 teaspoon mustard powder (optional)

Steps:

  • Cook macaroni 4-6 minutes, keeping macaroni very al dente. Drain. Toss hot pasta with butter.
  • In a greased crock pot, add cheese, soup, milk, sour cream, eggs, salt, pepper and mustard powder. Mix to combine.
  • Add pasta to crock pot. Stir to combine well.
  • Cook on low 2 1/2 hours, stirring occasionally. (Careful because when I cooked mine 30 min too long, it started to become grainy!).

Steps:

  • Combine the pasta, water, butter, salt, mustard, garlic powder and onion powder in a 6-quart Instant Pot. Lock on the lid and set to pressure cook on high for 5 minutes. Allow the pressure to naturally release for 10 minutes, then manually release any residual pressure.
  • Carefully open the lid and turn on the sauté function. Stir in the evaporated milk, whole milk, cheddar, mozzarella, cream cheese, black pepper and chili powder until the cheese has melted and is creamy. Turn off the pressure cooker and serve warm.
  • Tip: If you want a golden brown topping, you can transfer the mac and cheese to a casserole dish. Top with cheese and bread crumbs, then place under the broiler until golden brown.
