This is a very elegant dish good for a nice simple meal. Tasty and pretty enough for company, but my husband and I enjoy it as a nice weekend meal. The brining of the shrimp takes the longest, but is very easy and improves the taste and texture of the shrimp.

- Dissolve the kosher salt in 1 gallon of water in a large pot. Add the shrimp, and refrigerate 2 to 4 hours. Drain and pat shrimp dry with paper towels.
- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the angel hair pasta, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through but is still firm to the bite, 4 to 5 minutes. Drain well in a colander set in the sink.
- Meanwhile, melt the butter and olive oil in a large skillet over medium-low heat. Stir in the garlic, and cook until softened, 3 to 4 minutes. Add the shrimp, white wine, lemon juice, and red pepper flakes. Cook and stir until the shrimp is no longer translucent in the center, about 6 minutes. Stir in the black pepper, parsley, and lemon zest before tossing with the angel hair pasta.

- Preheat the oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
- Heat 1 tablespoon butter and vegetable oil large oven-safe skillet over medium heat. Add garlic; cook until fragrant, about 30 seconds. Add shrimp, 2 tablespoons parsley, and dill. Cook and stir, flipping shrimp halfway, until pink, 3 to 4 minutes. Move shrimp to a plate and set aside.
- Melt the remaining 2 tablespoons butter in the skillet, stirring into the shrimp juices. Add flour; whisk until fully combined and starting to turn golden, 30 seconds to 1 minute. Add chicken broth and milk in that order; whisk to combine. Stir in tomatoes, lemon juice, salt, and pepper. Bring sauce to a simmer.
- Stir 1/2 cup Parmesan cheese and Romano cheese into the sauce until cheeses begin to melt and sauce is creamy. Add 1 tablespoon mozzarella cheese. - Cook the pasta in a large pot of salted boiling water until al dente. Drain and reserve 1 cup of cooking water.
- In the meantime, melt 2 tablespoons of butter in a large skillet/frying pan and cook the prawns in batches until golden brown and opaque. Season the prawns to taste.

- In a medium-sized saucepan, boil water and salt it. Add your pasta, and cook according to the package instructions until al dente. When the pasta is cooked, reserve 1 cup of the pasta water and drain the pasta.
- In a skillet over medium heat, melt the butter, and add olive oil. Cook the shrimp for a minute, then season with salt, pepper, and Old Bay Seasoning or paprika if using.
- Continue to cook the shrimp until it's pink. Do this in batches if you're worried that you may overcook the shrimp. Remove the shrimp onto a plate and set aside.
- In the same pan, melt butter and add garlic, cook for 30 seconds or until it's fragrant. Add the heavy cream, and with the spatula deglaze the pan.

I was in the mood for shrimp so I choose the Lemon Garlic Linguine flavor. I also bought the Roasted Garlic Herb Fettuccine (Recipe: Ginger Beef Stir Fry with Roasted Garlic Herb Pasta). - Cook pasta until al dente (8-10 minutes). Reserve 1/4 C of the cooking liquid. Return to the pot and toss with 1 tablespoon of olive oil and reserved liquid. Cover to keep warm.

- Melt 2 tablespoons of butter over medium heat in a large skillet.Add the garlic and red pepper flakes and cook for 1 minute.
- Add shrimp, salt, pepper, and cajun seasoning and cook until shrimp are mostly pink. (They will cook more later so they don't need to be all the way cooked.)
- Remove shrimp from skillet and set aside. Add lemon juice to skillet and cook until reduced a little.
- Add heavy cream and stir to mix it into the lemon juice. Bring to a boil and simmer for 3 to 4 minutes to thicken it some. Turn heat down a little. Cut the remaining butter into slivers and stir it into the sauce until melted.

- In a large pot bring salted water to a boil and add pasta. Cook according to the directions on the package.

- Heat the butter (or oil) in a large skillet over medium-high heat until butter has melted and pan is hot. Fry the shrimp (prawns) for 2 minutes each side until pink and 'just' cooked. Transfer to a plate.
- Add the garlic to the remaining butter (or oil) in the pan and fry until fragrant (about 1 minute). Reduce heat to low-medium heat, add the milk (or cream). Bring the sauce to a boil; season with salt and pepper to your taste; add in the parmesan cheese and and allow sauce to simmer for about 2 minutes until thicker. Add the cornstarch/water mixture into the centre of the pan and whisk through fast to combine into the sauce. It will begin to thicken immediately.
- Take off heat and stir in the lemon juice. Add the shrimp (prawns) back into the pan; top with lemon slices, parsley, extra parmesan cheese, cracked pepper and salt (if needed), to serve.

- In a large dutch oven or large pan with high walls or, cook pasta to al dente. Drain, In the same pan the pasta was cooked in, heat olive oil and butter over medium heat. Alternatively, you can cook the shrimp in a separate skillet.
- Once the oil and butter starts to sizzle, add the garlic and cook until fragrant. Set stove to medium high. Add the shrimp and seasonings and cook for about 2 minutes or until the shrimp has turned pink.
- Set stove to medium. Quickly add the butter, heavy whipping cream, and lemon juice. Add a bit of the lemon zest if you like or save it for garnish. Cook for about 2-3 minutes.
- Add the shredded parmesan cheese. Stir the sauce until smooth and the cheese is melted and heated through. Add the drained pasta. Toss to coat the pasta in the sauce. Garnish with lemon zest and more parmesan cheese. Serve immediately.
