1 cup julienned sweet red pepper
1 cup sliced fresh mushrooms
1/4 cup chopped green onions
3 garlic cloves, minced
1/4 cup butter, cubed
2 cups heavy whipping cream
1 teaspoon dried basil
2 grilled boneless skinless chicken breast halves, thinly sliced
1/2 teaspoon salt
Hot cooked angel hair pasta

Steps:

  • In a large skillet, saute the red pepper, mushrooms, onions and garlic in butter. Add the cream, basil, chicken and salt; cook and stir until slightly thickened. Serve over pasta.

A meal that comes together in less than 30 minutes is always a win in my book. This easy and delicious lemon chicken pasta is just that!

4 chicken breasts
2 tbsp olive oil
1 tsp paprika
½ tsp garlic powder
1-2 tsp salt
1 tsp pepper
2 tbsp butter
4 garlic cloves (crushed)
2 tsp fresh thyme
1 cup cream
2 tsp lemon juice
salt and pepper (to taste )
500 g (1lb) spaghetti

Steps:

  • Slice the chicken breasts in half, lengthwise, resulting in two thin fillets.
  • Drizzle with olive oil then season with paprika, garlic powder, salt and pepper.
  • Heat a large pan over medium-high heat then add the chicken and cook for 2-3 minutes per side until golden brown and cooked through. Remove from the pan and set aside.
  • In the same pan, melt the butter then add the crushed garlic, lemon zest and thyme.
  • Cook for 30 seconds then pour in the cream and lemon juice. Season with salt and pepper and bring to a simmer.
  • Allow to cook for 5 minutes until the sauce coats that back of a spoon easily. Add the chicken back to the pan to warm through.
  • Serve the pasta topped with the chicken and sauce.

1 pound boneless skinless chicken breasts, cubed
2 tablespoons butter
2 garlic cloves, minced
1 package (16 ounces) frozen broccoli-cauliflower blend, thawed

2 skinless, boneless chicken breast halves
½ teaspoon salt, or to taste
⅛ teaspoon ground black pepper, or to taste
1 (16 ounce) package farfalle (bow-tie) pasta
2 tablespoons unsalted butter
2 tablespoons olive oil
½ cup dry white wine
3 cloves garlic, minced, or more to taste
1 lemon, zested and juiced, divided
½ (8 ounce) package cream cheese
2 tablespoons all-purpose flour
1 cup sour cream
2 cups chicken stock, or more as needed
1 tablespoon dried parsley
1 teaspoon dried thyme
½ teaspoon crushed red pepper, or to taste
salt and ground black pepper to taste
¾ cup grated Parmesan cheese, divided

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a casserole dish or 9x13-inch pan.
  • Slice or cube chicken and season lightly with 1/2 teaspoon salt and 1/8 teaspoon pepper.
  • Bring a large pot of lightly salted water to a boil. Cook farfalle at a boil, stirring occasionally, for 6 minutes. Drain, cover, and set aside.
  • Heat butter and olive oil in a large pan over medium-high heat. Add chicken and cook until lightly browned, about 5 minutes. Add wine and cook, 1 to 2 minutes. Add garlic and lemon juice and cook, 1 to 2 minutes. Don't allow garlic to brown.
  • Reduce heat to medium-low and add cream cheese, stirring until melted and blended. Add flour to sour cream, mix well, and stir into the pan. Add chicken stock, parsley, thyme, red pepper, salt, and pepper. Bring to a simmer until slightly thickened. Add more stock if sauce is too thick. Remove from heat.
  • Add 1/2 cup Parmesan and lemon zest, stir well. Taste and adjust seasoning. Add partially cooked farfalle and blend well. Pour into the prepared baking or casserole pan and sprinkle with remaining Parmesan cheese.
  • Bake, covered, in the preheated oven for 15 minutes. Uncover and continue to bake until lightly browned, 7 to 10 minutes more.

I found this recipe in a booklet I picked up at the grocery store. I adapted it to a lower sodium recipe because the original recipe had 1000 mg. of sodium. Which I think is an insane amount of sodium.

1 1/2 cups baby carrots, quartered lengthwise
1 lb asparagus spear, trimmed and cut into 1 1/2 in. piece
8 ounces fettuccine pasta, whole wheat is preferred
2 cups unsalted chicken stock
2 tablespoons cornstarch
1 teaspoon lemon pepper
1/2 teaspoon garlic powder
1 lb boneless skinless chicken breast, cut into strips
2 teaspoons dried basil
2 teaspoons lemon peel, grated, fresh

Steps:

  • Steam carrots and asparagus together until tender. Try not to overcook. Keep warm.
  • Cook the whole wheat fettucine according to package directions. Try to time this to get done when the chicken is done cooking.
  • Blend together the chicken stock, corn starch, lemon pepper and garlic powder in a bowl and set aside.
  • Cook chicken breast strips until no longer pink. Approximately 8 minutes.
  • Pour the chicken stock mixture into pan and boil until it starts to thicken. Add in the fettucine, asparagus, and carrots. Stir well.
  • When all combined stir in the basil and lemon peel. Cook an additional minute. And serve.
  • You can sprinkle parmesan cheese on top of each serving if desired. Just know that the parmesan is not figured into the nutrition info listed.

3/4 cup water

1 (16 ounce) package california-blend frozen vegetables
4 cups cooked chicken breasts, cubed

Steps:

  • Cook spaghetti.
  • While spaghetti is cooking, in a saucepan, combine soup, water, lemon juice, basil, garlic powder, salt and pepper. Stir in vegetables, bring to a boil. Reduce heat; cover and simmer 3-5 minutes, until vegetables are tender.
  • Stir in chicken; heat through.
  • Drain spaghetti, add to chicken mixture and toss to coat.
  • Sprinkle with Parmesan to serve.
