GREEN BEAN "FRIES"

2 tablespoons olive oil
1/2 pound green beans, trimmed
1/4 teaspoon kosher salt
Serving suggestions: your favorite dip or lemon wedges

Steps:

  • Heat a large skillet over medium-high heat for 3 minutes. Add the oil and heat another minute.
  • Scatter the beans evenly in the pan and sprinkle with the salt (see Cook's Note). Allow the beans to cook undisturbed until browned, blistered and beginning to split on the first side, about 3 minutes. Using tongs or a slotted spatula, flip the beans and continue to cook another 2 minutes. Flip one more time and cook until all the beans have a good amount of golden brown, an additional minute. Remove to a paper towel-lined plate to drain. Serve with your favorite dip or simply with a squeeze of lemon.

Vegetable oil cooking spray
Two 15- ounce cans chickpeas, rinsed and drained
2 tablespoons extra virgin olive oil
2 teaspoons smoked salt

Steps:

  • Position an oven rack in the center of the oven and preheat to 350 degrees F. Spray a baking sheet with vegetable oil cooking spray.
  • Put the chickpeas on a clean kitchen towel or several sheets of paper towel and dry thoroughly. In a medium bowl, toss the beans with the olive oil to coat. Sprinkle the smoked salt and toss again. Arrange the chickpeas in an even layer on the prepared baking sheet.
  • Bake, shaking the pan halfway through the baking time, until the chickpeas are crunchy, 50 minute to 1 hour. Let cool for at least 1 hour; the beans will become crunchier as they cool.
  • These are best eaten within 1 day.

3 cups fresh green beans
1 (10 3/4 ounce) can cream of mushroom soup (regular sized)
2 tablespoons onion soup mix

Steps:

  • Preheat your oven to 400°F.
  • Cut ends off of beans.
  • Fill a small lasagna pan, cake pan, or casserole dish with the beans, mushroom soup and onion soup mix.
  • Mix together well.
  • Cook, uncovered, for 45 minutes up to an hour, stirring occasionally.
  • Remove from oven, and serve.

½ teaspoon garlic salt
1 tablespoon chopped fresh oregano
¼ teaspoon black pepper
1 cup milk

3 (14.5 ounce) cans Del Monte® Cut Green Beans, drained
1 pita bread round, split horizontally and cut into thin strips
2 tablespoons olive oil

Steps:

  • Preheat oven to 350 degrees F. For sauce, melt butter over medium heat in a small saucepan. Stir in flour, garlic salt, dried oregano (if using) and pepper. Stir in milk. Cook and stir over medium heat until thick and bubbly. Cook and stir for 1 minute more. Remove from heat. Stir in sour cream and fresh oregano (if using). Place beans in a 1-1/2-quart baking dish. Pour sauce over and toss to coat.
  • Toss pita strips and oil in a medium bowl. Top casserole with pita strips. Bake, uncovered, for 30 minutes or until pita strips begin to brown and green bean mixture is heated through.

1 pound trimmed green beans
Juice from 1/2 lemon

Steps:

  • Pulse pita in a food processor until coarsely ground. Heat 2 tablespoons olive oil in a pan over medium-high heat. Add pita crumbs and cook, stirring, until golden and crisp, 3 to 4 minutes.
