This is a second version of another member's yummy casserole. It has all the creamy and wonderful flavor of chicken cordon bleu with a little of the fat and hassle removed.

1 (8 ounce) package wide egg noodles
2 cups chopped cooked chicken breast
8 ounces cooked ham, cubed
8 ounces Swiss cheese, cubed
1 (10.75 ounce) can reduced-fat, reduced-sodium cream of chicken soup (such as Campbell's® Healthy Request)
½ cup 2% milk
½ cup light sour cream
2 tablespoons butter
⅓ cup seasoned bread crumbs
¼ cup grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch casserole dish.
  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain and transfer noodles to the prepared casserole dish; top with chicken, ham, and Swiss cheese.
  • Mix cream of chicken soup, milk, and sour cream together in a bowl; spoon soup mixture over noodle mixture.
  • Melt butter in a skillet over medium heat; cook and stir bread crumbs and Parmesan cheese in the melted butter until crumbs are coated with butter and cheese, 2 to 3 minutes. Sprinkle bread crumb mixture over casserole.
  • Bake in the preheated oven until casserole is bubbling and lightly browned, about 30 minutes. Allow casserole to cool for 10 minutes before serving.

This easy creamy chicken casserole is my mother's recipe and a family favorite. It's one of our comfort foods and regular easy recipes to make through a busy week. Can easily be prepared in advance, then popped in the oven for a nice hot meal. If making for the first time, add half of the sour cream and taste first. Add more if desired, tasting as you go, to reach desired flavor. Serve over cooked white rice.

1 sleeve buttery round crackers (such as Ritz®), crushed
2 tablespoons butter, melted
4 cups water
1 (32 fluid ounce) container chicken stock
salt and ground black pepper to taste
3 skinless, boneless chicken breast halves, cubed
1 (24 ounce) container sour cream, or to taste
1 (26 ounce) can condensed cream of chicken soup

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Mix the crackers and melted butter together in a bowl; set aside.
  • Bring water and chicken stock to a boil in a pot over high heat. Season with salt and black pepper. Add the chicken. Reduce heat to a simmer, and cook, stirring occasionally, until chicken is no longer pink in the center, 5 to 7 minutes. Drain the chicken; set aside. 1 cup sour cream
1 (10.5 ounce) can cream of chicken soup
1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®)
1 (4 ounce) can chopped green chiles, drained
¼ cup salsa
⅛ teaspoon salt
12 corn tortillas
6 cups shredded cooked chicken
1 (6 ounce) can black olives, drained and sliced
1 ½ cups shredded Monterey Jack cheese
1 cup queso fresco, crumbled

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Combine sour cream, cream of chicken soup, diced tomatoes, green chiles, salsa, and salt in a large bowl. Spread 1/3 of the mixture in the bottom of the baking dish.
  • Lay 3 tortillas on top of the mixture. Split a fourth tortilla in half and place it on the sides, covering the mixture fully. Sprinkle 1/3 of the chicken, olives, Monterey Jack cheese, and queso fresco on top. Repeat twice more with remaining ingredients, ending with cheese on top.
  • Bake in the preheated oven until hot and bubbly, about 45 minutes.

2-1/2 cups frozen mixed vegetables
1/2 cup chopped onion
1/2 cup butter, divided
1/3 cup all-purpose flour
1/2 teaspoon dried sage leaves
1/2 teaspoon pepper
1/4 teaspoon salt
2 cups chicken broth
3/4 cup 2% milk
3 cups cubed cooked chicken
1 can (14-1/2 ounces) sliced potatoes, drained and quartered
2 cups seasoned stuffing cubes

Steps:

  • Cook vegetables according to package directions; drain. , Meanwhile, in a large saucepan, saute the onion in 1/4 cup butter for 2-3 minutes or until tender. Stir in the flour, sage, pepper and salt until blended. Gradually add broth and milk. Bring to a boil; cook and stir until thickened. 3 -4 boneless skinless chicken breasts (cut into bite-sized pieces,seasoned to taste with salt, pepper garlic powder, stir-fried in small am)
1 (10 3/4 ounce) can cream of chicken soup
1 cup sour cream
1 (4 ounce) can mushrooms
1 (15 ounce) can vegetables, of choice (we like peas)
1 roll Ritz cracker, crushed
1/2 cup margarine, melted
1 can grands refrigerated biscuit (buttermilk or Southern style are good)

Steps:

  • Melt margarine in large frypan, stir in crushed Ritz until coated.
  • Set aside.
  • In large bowl, mix together cooked chicken, soup, sour cream, mushrooms and peas.
  • Pour into greased 2 quart casserole.
  • Sprinkle crumbs over top.
  • Bake in 350 degree oven for 30 minutes.
  • Serve over biscuits.
  • (hot noodles or rice are good too).

3 cups cut-up assorted fresh vegetables, I use onion, broccoli, Italian green beans, cauliflower, and green peppers
2 tablespoons olive oil
1/2 lb boneless skinless chicken breast, cut into strips
1 cup milk
4 ounces cream cheese, cubed, 1/3 less fat is fine
1 cup parmesan cheese, shredded, divided
salt and pepper, to taste

Steps:

  • Cook pasta as directed on pkg., adding vegetables during last 3 minutes of pasta cooking time, and drain.
  • Heat oil in skillet on med. heat. Add chicken and cook and stir 8 minutes or until cooked through. Remove chicken, and set aside.
  • Heat milk, cream cheese, and 3/4 cups of the Parmesan cheese in skillet, on low heat, stirring constantly until mixture is smooth.
  • Toss with pasta mixture and chicken.
  • Sprinkle with remaining 1/4 cup Parmesan cheese.
  • Salt and pepper, to taste.
  • Serve.

Preheat oven to 400 degrees. In a 13X9 baking dish, combine rice, soup, water, black beans, and coriander. Stir until well combined, and smooth out to create one even layer. Top with vegetables, followed by salsa and chicken. Cover with aluminum foil and bake for 45 minutes.
