- In a Dutch oven, combine milk, broth and dressing mix; bring to a boil. Add broccoli; cook, uncovered, until tender, 3-5 minutes. Stir in process cheese until melted. Add rice and chicken; heat through, stirring occasionally.

Steps:
- Break the broccoli into small florets and cook in a saucepan of lightly salted boiling water for 3 minutes Drain then plunge into cold water and set one side.
- Melt the butter in a saucepan over a medium heat, add the onion, rice and chicken and cook for 5 mins, stirring frequently.
- Remove the saucepan from the heat and stir in the flour. Return to the heat and cook for 2 mins, stirring constantly. Stir in the milk and chicken broth, bring to the boil, stirring constantly, then reduce the heat and simmer for 10 minutes.
- Drain the broccoli and add to the soup with the sweetcorn and salt and pepper to taste. Simmer for 5 mins or until the rice is tender, then serve.

- In a soup pot, bring broth to a boil over med-high heat.
- In a skillet; heat oil over med-high heat; saute shallot and broccoli 3 minutes.
- Add to broth; decrease heat to medium.
- Melt butter in skillet over medium heat.
- Add flour; stir until mixture forms a paste.
- When roux begins to bubble, stir in hot cream; whisk until smooth.
- Add cream mixture to broth along with half-and-half and chicken.
- Simmer, without boiling, 10 minutes.
- Add salt and pepper to taste.
- Remove from heat and serve with grated Parmesan cheese over the top.
