4 ounces linguine pasta
2 boneless, skinless chicken breast halves, sliced into thin strips
2 teaspoons Cajun seasoning
2 tablespoons butter
1 green bell pepper, chopped
½ red bell pepper, chopped
4 fresh mushrooms, sliced
1 green onion, minced
1 ½ cups heavy cream
¼ teaspoon dried basil
¼ teaspoon lemon pepper
¼ teaspoon salt
⅛ teaspoon garlic powder
⅛ teaspoon ground black pepper
2 tablespoons grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add linguini pasta, and cook for 8 to 10 minutes, or until al dente; drain.
  • Meanwhile, place chicken and Cajun seasoning in a bowl, and toss to coat.
  • In a large skillet over medium heat, saute chicken in butter until no longer pink and juices run clear, about 5 to 7 minutes. Add green and red bell peppers, sliced mushrooms and green onions; cook for 2 to 3 minutes. Reduce heat, and stir in heavy cream. Season the sauce with basil, lemon pepper, salt, garlic powder and ground black pepper, and heat through.
  • In a large bowl, toss linguini with sauce. Sprinkle with grated Parmesan cheese.

6 tablespoons butter
3 cups sliced fresh mushrooms
1 cup chopped onion
1 cup chopped celery
1 (14 ounce) can diced tomatoes, drained
2 (10.75 ounce) cans cream of mushroom soup
1 cup chicken broth
1 (4 ounce) can chopped green chiles (such as Old El Paso®), drained
½ cup sour cream
1 teaspoon seasoned salt
¼ teaspoon cayenne pepper
salt and ground black pepper to taste
3 ½ cups chopped cooked chicken
2 cups shredded sharp white Cheddar cheese
¾ cup panko bread crumbs
2 tablespoons melted butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Prepare a 13x9-inch baking dish with cooking spray.
  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally until cooked through but firm to the bite, about 12 minutes. Drain.
  • Melt 6 tablespoons butter in a skillet over medium-high heat. Cook and stir mushrooms, onion, and celery in melted butter until just tender, 5 to 6 minutes; transfer to a large bowl.
  • Stir diced tomatoes, cream of mushroom soup, chicken broth, chopped green chiles, sour cream, seasoned salt, cayenne pepper, salt, and black pepper into the mushroom mixture. Add chicken and Cheddar cheese; stir. Gently toss the pasta with the mixture to coat the pasta completely; transfer to the prepared baking dish.
  • Mix bread crumbs and melted butter in a small bowl; sprinkle evenly over the pasta mixture.

8 oz linguine pasta
2 boneless skinless chicken breasts
2 tsp olive oil
2 Tbsp unsalted butter
2 Tbsp cajun seasoning (divided)
3 garlic cloves (minced)
2/3 cup diced tomatoes
1 1/2 cup heavy whipping cream
1/2 cup grated parmesan cheese
2 Tbsp parsley (finely chopped, to serve)

Steps:

  • Bring a large pot of water to a boil and add 1 Tbsp salt. Cook pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water then drain, cover, and keep warm.
  • Beat the chicken breasts so that they are even in thickness and season all over with 1½ Tbsp cajun seasoning.
  • In a large non-reactive skillet*, heat 2 tsp oil over medium-high heat. Once hot, add the chicken and sear on both sides. Turn heat down to low and saute until cooked through and 165˚F on a thermometer. Transfer to a cutting board, slice into thin strips, and cover to keep warm.
  • In the same skillet over medium heat, saute the butter and garlic for 30-60 seconds or until the garlic is fragrant. Add the diced tomatoes and saute another 2 minutes.
  • Add in the heavy whipping cream, remaining cajun seasoning, and parmesan cheese, and bring to a simmer. Season to taste if needed.
  • Add the sliced chicken and cooked pasta to the sauce and toss until combined and pasta and chicken are warmed through. Add warm reserved pasta water if desired to thin the sauce. Serve with freshly grated parmesan and chopped parsley.

1 teaspoon oregano
1 teaspoon thyme
½ teaspoon garlic powder
½ teaspoon onion powder

4 tablespoons cooking oil
1 pound chicken breasts, cut into 3/4-inch pieces
1 yellow onion, diced
2 bell peppers, diced
3 garlic cloves, minced
1 pound penne pasta
1 cup chicken broth
1 cup milk
3 ounces cream cheese
3 tablespoons fresh basil, diced, for serving

Steps:

  • To make the Cajun seasoning, combine the paprika, oregano, thyme, garlic powder, onion powder, cayenne pepper, black pepper, white pepper, and salt in a small bowl. Mix well.
  • To a large pot or Dutch Oven set over medium heat, add the cooking oil.
  • Add the diced chicken. Season with the Cajun seasoning, reserving 1 to 2 teaspoons.
  • Sauté the chicken for 2 minutes on each side, but don't worry about cooking fully at this point.
  • Add the diced onions, peppers, and minced garlic, and sauté for 2 minutes more.
  • Season with the remaining 1 to 2 teaspoons of Cajun seasoning, and cook for 1 more minute.
  • Add the pasta, broth, and milk to the pot. Whisk until smooth, and stir everything together.
  • Cover with a lid, and allow the sauce to come to a boil.
  • Once boiling, reduce the heat to medium-low, and allow the pasta to cook, covered, for about 10 minutes, stirring every few minutes until the pasta is tender and everything is cooked through.
  • Add the cream cheese to the pot, and stir everything thoroughly.
  • Serve creamy Cajun chicken pasta immediately, topped with fresh basil.

This is a (slightly) healthier version of one of my favorite comfort foods, which I adapted from my sister-in-law. You can always add more veggies to make this dish healthier...They'll be smothered with cheese so you won't even notice they're there, which is great for the kids! I recommend saving unused vegetable parts for a homemade stock. And, for easy clean up, use a plastic Crockpot liner.

4 chicken breasts
2 (14 1/2 ounce) cans low fat reduced-sodium cream of mushroom soup
2 (14 1/2 ounce) cans fat free low-sodium cream of chicken soup
1 (28 ounce) can original Rotel Tomatoes
32 ounces 2% Velveeta reduced fat cheese product
1 large onion
3 stalks celery
1 (32 ounce) box whole wheat spaghetti
Tony Chachere's salt-free cajun spice

Steps:

  • Trim fat off of chicken breasts and save for chicken stock bag.
  • Boil the chicken in large pot with water for 45 minutes.
  • Wash vegetables. Dice onion and chop celery.
  • Heat small amount of canola oil in a medium skillet over medium-high heat.
  • Saute celery until translucent, about 3-4 minutes. Add onion and saute until translucent. Set aside.
  • Remove chicken from stock pot and allow to cool.
  • In remaining chicken stock, cook whole wheat spaghetti noodles according to package directions.
  • Shred or cut chicken breasts into small pieces and transfer to a large bowl.
  • Cut Velveeta into cubes.
  • Mix Velveeta, cream of chicken, cream of mushroom, Rotel, onion, celery, spaghetti noodles, and seasoning to bowl, stir until well mixed.
  • Throw everything in the Crockpot or oven until cheese melts and spaghetti is warm throughout.

1 chicken breast
1 teaspoon cajun seasoning (to taste)
1/3 cup light cream
1 teaspoon cornflour, more if needed

Steps:

  • Cook pasta according to directions.
  • Dice chicken and remove all fat.
  • Spray a small frypan with non stick spray and cook chicken until brown.
  • Add cajun spice and cook for a couple minutes. You could also add the spice at the beginning of cooking the chicken.
  • Add the cream and cornflour and stir until sauce thickens.
  • Serve over cooked pasta and garnish with parmesan cheese, if desired.

I love creamy cajun pasta! But using the heavy cream or the half and half is just not the healthiest thing. So, I thought that I would try using condensed milk and it worked wonderfully! With the cajun flavor, you would never guess that it wasn't made with heavy cream.

1 lb boneless skinless chicken breast
1 lb pasta, either fettucine or 1 lb linguine
1 green pepper, sliced
1 red pepper, sliced
1 yellow pepper, sliced
1 small purple onion, sliced
1 (8 ounce) can condensed milk
1 teaspoon cornstarch
cajun seasoning
olive oil (for cooking)

Steps:

  • 1. Pound chicken to help with even cooking. Season with cajun seasoning. Saute chicken in some olive oil on medium heat until cooked thru and set aside.
  • 2. Add some more olive oil to the pan and add the peppers and onion. Saute until desired doneness.
  • 3. Set aside 1 Tbsp of condensed milk and pour the rest in with peppers. Season with cajun seasoning to taste. (I add then taste to see if it is hot/flavorful enough and add until I get to my desired heat/flavor). Bring to a boil.
  • 4. Mix cornstarch and reserved condensed milk. Add to sauce and bring to a boil to thicken.
  • 5. Slice chicken. Serve pasta with sauce over it and chicken on top.

12 ounces vegetarian chicken strips or 12 ounces Morningstar Farms Meal Starters chicken strips, thawed and cut into thirds
8 ounces campanelle pasta (your favorite pasta will work) or 8 ounces linguine, cooked al dente (your favorite pasta will work)
4 teaspoons cajun seasoning (see below for recipe)
1 -2 tablespoon butter
3 thinly sliced green onions
1 -2 cup heavy whipping cream (I use one cup heavy cream and one cup milk)
4 tablespoons chopped sun-dried tomatoes
kosher salt, to taste
1/2 teaspoon dried basil
1/4 teaspoon ground black pepper
1/4 teaspoon garlic powder
1/4 cup grated parmesan cheese
1/2 teaspoon oregano
1/2 teaspoon thyme
1 teaspoon paprika (I use Hungarian Hot Paprika)
1/4 teaspoon cayenne
1/2 teaspoon black pepper
1/4 teaspoon sugar
1/2 teaspoon cumin
1/2 teaspoon garlic powder

Steps:

  • Add Cajun Seasoning to a medium sized bowl.
  • Spray thawed chik'n pieces with a little bit of Pam and toss in bowl to coat with seasoning.
  • In a large skillet over medium heat, sauté chik'n pieces in butter until heated through, about 2-3 minutes.
  • Reduce heat and add green onion, heavy cream, sun dried tomatoes, basil, salt, garlic powder, black pepper and heat through until sauce slightly thickens. If the sauce gets too thick you can just add more milk and stir.
  • Pour over hot pasta and toss,with Parmesan cheese.
