ULTIMATE PASTA CARBONARA RECIPE
This tested and perfected classic pasta carbonara recipe is a winner! The best family-favorite dish with spaghetti, eggs, bacon and cheese.

- Preheat the oven to 400 (200 C) degrees and line a large tray with paper towels.
- Arrange the bacon on a rimmed baking sheet. Bake for 15-20 minutes, flipping the pieces halfway through, until the bacon is deeply colored and crisp. Transfer to the tray to absorb excess fat. Chop the bacon into small pieces.
- Whisk the egg yolks, whole egg, Parmesan and Pecorino cheeses, ¼ teaspoon salt and black pepper in a large mixing bowl. If you have a large pasta serving bowl, use that to mix and serve.
- Bring 4-5 quarts of water to a boil in a large saucepan or pot and add 1 tablespoon salt. Add the pasta and cook according to package directions until al dente (usually about 10 minutes.) Scoop out 3/4 cup of the cooking water before draining the pasta.
- Whisk ½ cup of the hot water into into the egg yolk mixture - this tempers the eggs so they won't scramble.
- Immediately dump the hot pasta into the bowl, then toss it all together quickly and thoroughly, using tongs or two spoons. You can add more water if the sauce seems dry. Sprinkle the bacon and parsley over the pasta and toss to combine. Serve right away, with additional grated cheese on the side.

Now this is our idea of comfort food. Creamy and rich, it's the quintessential dish for a chilly evening. We like to splurge every once in a while and add a knob of butter to the cheesy egg sauce just to round it out. We've left that option up to you, however. Either way, we can't think of a more classic or satisfying pasta dish.

- Bring a large pot of salted water to a boil over high heat.
- Whisk together the eggs, yolks, Parmesan, Pecorino, pepper and butter if using in a large bowl until well combined.
- Add the pasta and cook as the label directs. Reserve 1 cup cooking water, then drain the pasta.
- Meanwhile, cook the pancetta in a large skillet over medium heat, stirring occasionally, until crisp, about 8 minutes. Add the spaghetti and half the reserved pasta cooking water to the skillet and toss to combine.
- Add the egg mixture and toss to coat. Cook, tossing continuously to avoid scrambling the eggs, until the sauce is creamy, thinning it with the remaining pasta water if it becomes too thick (it should be saucy but not watery), about 1 minute.
- Divide the pasta among plates and sprinkle with more grated Parmesan.
CREAMY BACON SPAGHETTI PASTA CARBONARA

- Cook your noodles per package directions and leave in the hot water until ready to add to your skillet.
- In a mixing bowl add your eggs, cream, parmesan, dried parsley flakes, garlic salt, ground black pepper, and minced garlic. Combine your ingredients so that the eggs are all beat together with the other ingredients. I used a hand mixer just to make sure they were all incorporated really good!
- Meanwhile, in a large skillet cook your bacon over medium heat. When done remove from skillet and chop or crumble into small pieces and set aside. And this was the only rare occasion that I didn't pat the bacon with a napkin to remove the grease. I actually wanted a little bit of the grease flavor in the pasta. I know unhealthy.
- Add your onion and mushroom to your hot skillet with a little bit of bacon grease and let cook until onions are tender.
- Once your noodles are done cooking drain all of the water, except for about 2 tablespoons and put the noodles into the skillet with the onions and mushrooms and remove from the burner for a few minutes to let your pan cool down.
- Add the 2 reserved tablespoons of hot noodle liquid to the egg mixture slowly while whisking. Don't add it too fast or you will end up with scrambled eggs which would be bad. Funny, but bad.
- Once you have added the liquid to your eggs you are ready to add your sauce to the noodles. I poured the sauce directly over the noodles in the skillet and turned the burner on med-LOW and kept stirring so that the sauce didn't get too hot in any once place. It's important to warm the sauce up slowly or you will have scrambled eggs in your pasta.
- Now I'm a complete freak and was a little hesitant to make this dish because of the raw eggs in the sauce. The original recipe called for just the noodles into the sauce then it was done... but I cooked mine over med-LOW heat for about 5 minutes until I was sure all of the parmesan cheese was melted and the eggs were done. I did it so slowly enough that I didn't have any problems with my eggs cooking too fast or too much.
- Add your crumbled bacon to the top of your pasta before serving.
- It might sound a little scary to make this but trust me when I say that it was well worth it. This really wasn't hard to make and it really did turn out to be very delicious.

- Adjust oven rack to lower-middle position, set large heatproof serving bowl on rack, and heat oven to 200 degrees.
- Bring 4 quarts water to rolling boil in large Dutch oven or stockpot.
- While water is heating, heat oil in large skillet over medium heat until shimmering, but not smoking.
- Add bacon and cook, stirring occasionally, until lightly browned and crisp, about 8 minutes.
- Add wine and simmer until alcohol has cooked off and is slightly reduced, 6 to 8 minutes.
- Remove from heat and cover to keep warm.
- Beat eggs, cheeses, and garlic together with fork in small bowl.
- When water comes to boil, add pasta and 1 tablespoon table salt, stir.
- Cook until al dente Reserve 1/3 cup pasta cooking water and drain pasta for about 5 seconds, leaving pasta slightly wet.
- Transfer drained pasta to warm serving bowl if pasta is dry, add some reserved cooking water and toss to moisten.
- Immediately pour egg mixture over hot pasta, sprinkle with 1 teaspoon sea salt flakes or 3/4 teaspoon table salt-- toss well to combine.
- Pour bacon mixture over pasta, season generously with black pepper, and toss well to combine.
- Serve immediately.

PASTA CARBONARA WITH BACON
This is my answer to poor planning. I usually have all the ingredients on hand. This is a family favorite. For those with gluten intolerance corn spaghetti substitutes nicely.

Steps:
- Cut bacon into little pieces, approximately 1" square and saute in a small frying pan with the butter until bacon barely begins to brown. It should be a bit crunchy but not dry.
- Microwave half and half for one minute and add bacon and butter. Add the vinegar; this will turn the half and half into cheese. Simmer gently for about 15 minutes, or until sauce cooks smooth.
- Boil spaghetti al dente. Drain and return to the pan. Immediately throw in the eggs, bacon sauce and grated cheese. Add salt and pepper to taste, toss and serve immediately.

- Start adding about 2 liters or 2 quarts of water in a pot, and bring it to a boil. Salt it with about 1 ½ tbsp of table salt. Cook pasta for the amount of time stated in the package. Drain it reserving 2 cups of the cooking water.
- In the meantime, chop the bacon (or pancetta), and make sure that cheese is grated and garlic is minced.
- In a skillet, cook bacon until crispy. When bacon is ready, remove it from pan and set it aside. Leave about 1 tablespoon of bacon fat in the pan and add the chopped garlic. Sauté it until it starts changing color, being careful not to burn it since it changes color really fast. Remove it from pan quickly, so it won't continue cooking, and put it together with the bacon.
