Almond Joy Cake With Creamy Coconut Butter Frosting image

Chocolate, Almond, & Coconut make up this 2 layer cake. One layers is the coconut layer and the other is chocolate almond. This is made for a crowd. You can make the whole cake or just each layer. If baking both cakes at once be sure to rotate them in the oven for even baking.

1 (3 ounce) package coconut pudding mix
1 cup water
1 (18 ounce) package white cake mix
1/2 cup vegetable oil
4 eggs
1/4 cup coconut rum
1 (18 ounce) package devil's food cake mix
1 (3 ounce) package instant pistachio pudding mix
3/4 cup vegetable oil
1/2 cup almond liqueur (Disaronno)
1/8 cup water
4 large eggs
1/4 cup almond liqueur
2/3 cup butter
1/2 teaspoon salt
1 teaspoon vanilla extract
1 teaspoon coconut extract
2 lbs sifted confectioners' sugar
1/2 cup coconut milk
1 cup flaked coconut, toasted

Steps:

  • Butter and dust with flour 2 9x13 pans.
  • Combine the first 6 ingredients for the Coconut cake Layer in a mixing bowl and beat on medium speed for 3 minutes.
  • Pour into 1 of the prepared pan and bake for 30-45 minutes until toothpick comes out clean.
  • Cool at room temperature for 15 minutes.
  • Invert onto rack and brush 1/4 cup coconut rum over cooled cake.
  • Let sit for 1 hour.
  • Combine the first 6 ingredients for the Chocolate Almond cake Layer in a mixing bowl and beat on medium speed for 3 minutes.
  • Pour into prepared pan and bake for 30-45 minutes until toothpick comes out clean.
  • Cool at room temperature for 15 minutes.
  • Invert onto rack and brush 1/4 cup almond liqueur over cooled cake.
  • Let sit for 1 hour.
  • Meanwhile cream butter, salt, and extracts, beating until light and fluffy. Add sugar gradually, beating after each addition. Add milk, beating until smooth. Beat in additional milk until desired spreading consistency is reached.
  • Frost cooled cake and garnish with toasted coconut!

1 Cup Chocolate Milk (Whole Chocolate Milk)
1/2 Cup Half and Half
1/4 Cup Almond Milk Creamer (Silk Sweet & Creamy Almond Milk Creamer)
½ Teaspoon Almond extract (Up to 1 Teaspoon can be used based on preference.)
1 Tablespoon Cream of Coconut (Coco Real) (Coco Real)
1 Teaspoon Coconut (Toasted- Add more if desired)
1 Teaspoon Sliced Almonds (Toasted- Add more if desired)
1 Teaspoon Chocolate Chips (Mini- Add more if desired)

Steps:

  • Combine ingredients (except the mix-ins) in a Ninja Creami pint container.
  • Freeze for 24 hours. Make sure the pint container is level in the freezer.
  • After 24 hours, remove from the freezer and put the pint into the outer container. Place into the Ninja Creami machine and process on Ice Cream. Once the process has completed, re-spin once.
  • Remove the pint from the Ninja Creami machine. Remove lid.
  • Add mix-ins. Add toasted coconut, toasted almonds, and mini chocolate chips (if desired). Place back into the Ninja Creami and process using the mix-ins function.
  • Serve with a bit of toasted coconut and almonds on top as well if desired. Maybe a little chocolate sauce as well!

1/4 lb butter, softened
8 ounces cream cheese, softened
2 lbs confectioners' sugar
1/4 teaspoon salt
1 1/2 teaspoons vanilla
15 ounces flaked coconut
20 -23 ounces semi-sweet chocolate chips (almost 1 lg. bag)
28 -30 unsalted almonds, 2 for each egg

Steps:

  • Mix the butter and cream cheese together. (I put mine in the microwave for 30-45 secs. until softened).
  • Add the confectionary sugar about 1 cup at a time, salt, and vanilla, and mix well. (I use my hands).
  • Add the coconut, and mix until well blended. (I use my hands).
  • Place the mixture in the freezer to chill for at least 20 minutes.
  • Take out of the freezer and form into egg shapes with your hands. (It is helpful to put some confectionary sugar on your hands so the eggs don't stick to them, when rolling out the dough).
  • Place each egg on a cookie sheet, covered with aluminum foil.
  • When you are done, add 2 nuts on the top of each egg, pressing in slightly, so they don't fall out.
  • Place in the freezer again for at least 25 minutes.
  • Melt the chocolate in a a double boiler.
  • Dip the bottom of the egg into the chocolate, then place it on a small flat dish.
  • Take a lg. spoon, and spoon some melted chocolate on top, spreading around with a butter knife. Make sure you don't get it on too thick, or you won't have enough for the whole batch.
  • To put the egg on the cookie sheet, use a sharp knife, and run it under the egg to transfer to the cookie sheet lined with aluminum foil.
  • When done making eggs, put in the freezer for a few minutes to harden.
  • Place each egg in pastel paper cupcake cups.
  • Store in the refrigerator, covered with aluminum foil.

This is a creamy fudge with coconut and almonds that's easy for the beginner. I brought it to my sons'for Thanksgiving to top off the "turkey dinner" and it was a huge hit.

1 1/3 cups sugar
2/3 cup sweetened condensed milk
1/4 cup butter or 1/4 cup margarine
2 cups mini marshmallows
2 pinches salt
1 (11 1/2 ounce) package chocolate chips
1/2 teaspoon vanilla extract
1 1/2 teaspoons almond extract
1 cup sweetened flaked coconut
1 cup chopped almonds
1 whole almonds, for the top

Steps:

  • Blend together in a stainless saucepan the first five ingredients.
  • Bring to a boil over medium heat, stirring constantly.
  • Boil for 4 minutes being careful not to let the mixture scorch the bottom of pan.
  • Remove from heat and add chips, coconut, vanilla and almond extract, and chopped almonds.
  • Blend thoroughly with rubber spatula.
  • Pour into a foil lined 8x8 pan.
  • Sprinkle more coconut on top and press into fudge then top with whole almonds.
  • Chill in refrigerator till firm, about 2 hours.
  • Cut into bite size pieces.
