Easy Cranberry Oat Bars are layered sweet and tart bars with a buttery brown sugar oatmeal crust, cranberry sauce filling, and nutty oatmeal pecan crumble.

1 cup unsalted butter (, softened)
1 cup brown sugar (, packed)
2 1/2 cups rolled oats
1 cup flour
14 ounces cranberry sauce (, whole berry)
1 cup rolled oats
1/2 cup pecans (, chopped)
1/4 cup unsalted butter (, melted)
1/2 cup brown sugar (, packed)

Steps:

  • Preheat oven to 375 degrees and spray a 9x13 baking dish with baking spray.
  • To a stand mixer add butter and brown sugar on medium speed until light and fluffy.
  • On lowest speed add in rolled oats and flour until just combined.
  • Press mixture into baking dish.
  • Spread cranberry sauce evenly over the mixture.

These Chewy Cranberry Pecan Oat Bars are naturally sweetened with honey and coconut palm sugar. They're a perfect make-ahead bar as they freeze well.

4 cups quick cooking oats, (gluten-free, if necessary)
1/2 cup coconut palm sugar , ((or brown sugar))
1 cup pecans, (coarsely chopped)
1 cup dried cranberries
1 tsp cinnamon
2 tsp pure vanilla extract
1 cup honey, (warmed)
1/2 cup coconut oil or butter, (melted)

Steps:

  • Preheat oven to 350°F. Line a 9 x 13" baking pan with parchment paper leaving extra on two sides so you'll be able to lift out the bars after they're baked.
  • In a large bowl, combine oats, sugar, pecans, cranberries and cinnamon.
  • Combine honey, coconut oil and vanilla extract and mix with dry ingredients until well combined.
  • Transfer to the prepared pan, spreading and firmly packing it in.
  • Bake for 25 minutes or until golden. Let cool completely, then using the parchment paper as handles, lift the slab out and transfer to a cutting board. Slice into 24 - 30 small bars or 12-15 large bars. Store in a sealed container. These bars freeze well.

These little bars are great to snack on, are perfect at holiday time, and would be excellent for a cookie exchange. If you have leftover dough after forming the bars, don't worry, I find that the thinner the crust, the better.

2 cups fresh or frozen cranberries
¾ cup sugar
2 tablespoons orange zest
1 ½ cups all-purpose flour
1 ½ cups rolled oats
1 cup packed light brown sugar
1 teaspoon baking powder
½ teaspoon salt
¾ cup butter

Steps:

  • In a small saucepan over medium high heat, combine the cranberries, white sugar and orange zest. Bring to a boil, then reduce heat and cook until the mixture has reduced to about 1 cup.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9 inch baking pan, line with foil, then grease the foil.
  • In a medium bowl, stir together the flour, oats, brown sugar, baking powder and salt. Cut in the butter using your hands or a pastry blender until the mixture resembles coarse crumbs. Press half of this mixture firmly into the prepared pan. Spread the cranberry sauce evenly over the base, then crumble the remaining oat mixture over the top.
  • Bake for 10 to 15 minutes in the preheated oven, until the top is golden brown. Cool completely before cutting into bars.

1 egg
⅓ cup brown sugar
1 teaspoon vanilla extract
1 cup flour
¼ teaspoon baking powder
¼ teaspoon baking soda

¼ teaspoon pumpkin pie spice
¾ cup dried cranberries
¾ cup pecans
¾ cup old-fashioned rolled oats

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease 11x7 inch baking pan.
  • Pour melted butter into a mixing bowl, and beat in the egg, brown sugar, and vanilla extract. Sift the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and pumpkin pie spice together in a separate mixing bowl. Stir the flour mixture into the butter mixture until thoroughly blended. Mix in the cranberries, pecans, and oats until evenly blended. Press mixture into prepared baking dish.
  • Bake in preheated oven until top is dry and edges slightly pull away from the sides of the pan, 13 to 15 minutes. Cool before cutting into squares.

1/3 cup sugar

2 tablespoons sweetened shredded coconut
2 tablespoons chopped pecans

Steps:
