6 to 6-1/2 cups all-purpose flour
1 cup old-fashioned oats
1/2 cup whole wheat flour
1/3 cup packed brown sugar
2 teaspoons salt
1 package (1/4 ounce) active dry yeast
2-1/2 cups water
2 tablespoons butter
1-1/4 cups dried cranberries or cherries
3/4 cup chopped walnuts, toasted

Steps:

  • In a large bowl, combine 3 cups all-purpose flour, oats, whole wheat flour, brown sugar, salt and yeast. In a small saucepan, heat water and butter to 120°-130°. Add to dry ingredients; beat just until moistened. Stir in the cranberries, walnuts and enough remaining all-purpose flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down; divide in half. Shape into loaves; place in two greased 9x5-in. loaf pans. Cover and let rise until doubled, about 45 minutes. Bake at 350° for 45-50 minutes or until golden brown. Remove from pans to wire racks to cool. To serve, cut into thick slices and toast.

1 cup water
1 cup white sugar
½ cup orange juice

  • Combine cranberries, water, sugar, and orange juice in a saucepan. Cook over medium heat until cranberries soften and turn jammy, 20 to 25 minutes.

Nonstick cooking spray, or 1 tsp. butter
1/3 cup vegetable oil
3/4 cup granulated sugar
1/4 cup milk
2 large eggs
1 teaspoon vanilla extract
1 teaspoon orange zest, from 1 orange
1 cup fresh or frozen cranberries, chopped
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup pecans or walnuts, chopped
1 cup powdered confectioners' sugar
2 Tbsp. fresh orange juice, from 1 orange

Steps:

  • Heat oven to 350 degrees F.
  • Using nonstick cooking spray or butter, grease 1 whole loaf pan or 2 mini loaf pans. Put a thin strip of parchment paper in the bottom of the pan, and lightly grease over the parchment paper.
  • In a large bowl, combine oil, sugar, milk, eggs, vanilla, orange zest and cranberries. Mix well. Stir in flour, baking powder, and salt. Fold in chopped nuts. Pour into prepared pan(s).
  • Bake 1 whole loaf for 50-60 minutes, or 2 mini loaves for 30-40 minutes. Meanwhile, whisk together ingredients for orange glaze and set aside.
  • Remove loaf from oven. A toothpick inserted in the loaf's center should come out clean. Let cool 10 minutes.
  • With a blunt knife, loosen sides of loaf from pan(s) and remove by lifting strip of parchment paper. Immediately brush glaze over each loaf. Cool completely on wire rack before slicing. Store tightly wrapped in refrigerator up to 1 week.

2 c flour + 1/2 tbsp for cranberries, unless using dried
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 c sugar
1 egg ~ room temp
2 Tbsp melted, butter
1/2 c chopped nuts, ~ optional, i didn't use
1/2 c + 1 tablespoon - orange juice
1/3 - 1/4 c orange zest - to your liking
2 Tbsp warm water
1 c whole cranberries ( mine were froze ) i coated with flour ~ or can use dried

Steps:

  • 1. Preheat oven to 350 degree F. I used 3 mini loaf pans or can use a 9 x 5 loaf pan. Spray with non stick cooking spray.
  • 2. In a large bowl, mix the dry ingredients. Add all other ingredients and stir only until all dry ingredients are blended well. I added my cranberries now too, you can always wait and fold them and nuts in last.
  • 3. Spoon batter into prepared pan or pans, evenly. Batter will be thick. Bake in 9 x 13 for 50 - 55 minutes or mini pans for 30 - 35 minutes or until pick comes out clean.
  • 4. When done, place on cooling rack for a few minutes, then if you like remove from pan and finish cooling.

1/2 cup fresh orange juice
2 1/2 cups all-purpose flour

2 cups fresh cranberries or 2 cups frozen cranberries, coarsely chopped
1 cup walnuts, chopped (optional)

Steps:

  • Preheat oven to 375°F.
  • Grease a 9x5-inch loaf pan and have it ready.
  • In a mixing bowl, mix together flour, sugar, baking powder, baking soda, and salt.
  • In another small bowl, beat eggs lightly with a whisk or fork, then stir in melted butter, orange peel, and orange juice.
  • Add the wet mixture to the flour mix, and stir with a spoon until the batter is just mixed, then fold in the cranberries and walnuts (batter will be stiff).
  • Pour the batter into the loaf pan and bake in the preheated oven for 55-60 minutes or until a toothpick inserted in the middle comes out fairly clean (a crumb or two can stick to it but you don't want wet batter).
  • Cool in the pan on a wire rack for 10 minutes, then remove from the pan and finish cooling on the wire rack.

This is a quick bread made with cornmeal, adapted from a Williams-Sonoma holiday cookbook. They suggested serving it as a bread with your holiday meal, but we've always liked it for breakfast during the holiday season. Eat plain, or toast individual slices in your toaster oven (it's too crumbly for a regular toaster) and top with butter and orange marmalade. Yum! Because of the cornmeal, the bread has a bit of a crunch to it when toasted.

1 1/2 cups fresh cranberries or 1 1/2 cups frozen cranberries
1 orange, zest of, grated
1 cup sugar, divided
1 1/2 cups all-purpose flour
1/2 cup yellow cornmeal
1/2 teaspoon salt
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
3 tablespoons unsalted butter
1 egg, lightly beaten
1/2 cup fresh orange juice
1/2 cup water

Steps:

  • Position a rack in the middle of the oven and preheat oven to 325.
  • Grease an 8x5 or 9x5 loaf pan. Cut a piece of wax paper or parchment paper to line the bottom of the pan, then grease the bottom again. (otherwise your lovely loaf might stick to the pan!).
  • Sort the cranberries and discard any soft ones. Coarsely chop the cranberries (I pulse a couple of times with my food processor) and place in a small saucepan over low heat. Add the orange zest & 1/2 cup of the sugar and heat slowly just to a simmer, stirring to dissolve the sugar. Set aside to cool.
  • In a bowl stir together the flour, cornmeal, salt, baking powder & baking soda.
  • In a separate bowl combine the butter and remaining 1/2 cup sugar. Beat until light & fluffy, about 3 minutes. Beat in the egg.
  • Stir in half the flour mixture, and then the orange juice & water. Stir in the remaining flour mixture and then the cooled cranberry mixture. Don't overmix.
  • Spoon the batter into the prepared loaf pan. Place in the oven and bake until a toothpick inserted in the center of the loaf comes out clean, 55-60 minutes.
  • Remove from the oven and let rest for 5 minutes. Turn out onto a wire rack, peel the wax paper from the bottom of the loaf, and cool completely. Slice & serve.
  • Note: This recipe doesn't double well. The batter is light & airy, and too voluminous even for my Kitchenaid stand mixer. If I want to make 2 loaves, I mix them up separately. But I put each loaf in the oven as soon as it is mixed up because the baking powder is already activated. Then I know if, for example, 10 minutes have passed before the 2nd loaf goes in, I will pull the 1st loaf out when the timer goes off, then set the timer again for another 10 minutes for the 2nd loaf.

⅓ cup (75 g) sour cream or Greek yogurt
⅓ cup (75 g) butter, (melted)
½ cup (125 ml) orange juice
2 large eggs, (beaten)
1 teaspoon (4 g) vanilla extract

2 ¼ cup (281 g) flour
1½ teaspoon (6 g) baking powder
½ teaspoon ( 2) baking soda
Zest from 1 large orange
¾ teaspoon (3.75g) salt
1 cup (100 g) cranberries, (chopped)

Steps:

  • Preheat the oven to 350℉/177℃. Spray a 9x5 loaf pan with baking spray. Set aside.
  • Combine the Greek yogurt, melted butter, orange juice, eggs, vanilla, and sugar in a large mixing bowl. Whip on medium speed for a few minutes until the eggs are completely incorporated.
  • Combine the dry ingredients-flour, baking powder, soda, orange zest, and salt in a separate bowl. Then sift the dry ingredients into the batter, mixing it on medium speed for around 30-60 seconds, or just until the flour is incorporated. Do not overmix the batter.
  • Next, fold in fresh cranberries and almonds until thoroughly combined.
  • Pour the cranberry orange batter into a greased loaf pan and bake in the preheated oven for 50-60 minutes or until an inserted toothpick comes out clean; the sides will be a rich, golden brown color. Take the bread from the oven when it's done and cool on a wire rack for about 30 minutes.
  • For a super easy orange glaze, juice the large orange used earlier for the orange zest. Put 3-4 tablespoons into a mixing bowl and add the confectioner's sugar. Then whisk in the orange zest until a smooth glaze forms. If you'd like a thicker glaze, add more sugar; for a thinner glaze, add more orange juice.
  • Drizzle the prepared glaze over the cooled cranberry loaf. You can store it well-wrapped in plastic at room temperature.
