CRANBERRY ORANGE COMPOTE RECIPE

2 12 oz. bags cranberries (6 cups)
1 tbsp. grated orange zest
1 cup fresh orange juice
3/4 cup granulated sugar
3/4 cup brown sugar
1/4 cup grenadine syrup
2 tbsp. red-wine vinegar

Steps:

  • Combine all ingredients in a large sauce pan or skillet and bring them to a boil.
  • Simmer at a low temperature for 5-10 minutes or until the fresh cranberries are nice and soft and the liquid turns to a thick syrup. *I ended up simmering for 10 minutes to be sure the cranberries were softened and the recipe was well mixed.
  • Stir to combine all ingredients and remove from heat. Allow the cranberry orange compote to cool slightly.
  • You can serve this orange cranberry dish warm, refrigerate it, or eat it at room temperature, either way is delicious!

My mother-in-law makes this every year for Christmas and I finally obtained the recipe from her. It's super simple and is a nice variation to traditional cranberries

15 ounces fresh cranberries
20 ounces crushed pineapple in juice
2 oranges (peel only one)
1 -2 cup sugar

Steps:

  • Using food processor or blender, process cranberries until they are finely chopped.
  • Add oranges to food processor (leave the peel on one. I cut the hard part off the end) and blend until oranges are well chopped.
  • Add pineapple, including juice, and blend briefly.
  • Pour into large bowl.
  • Add 1C of sugar and stir thoroughly.
  • Add remaining sugar 1/4C at a time until dish reached desired sweetness.

1 navel orange
1 (12 ounce) package fresh cranberries
½ cup white sugar
⅛ teaspoon ground cinnamon

Steps:

  • Grate 2 teaspoons of zest from orange; discard remaining peel and pith from orange. Divide orange into sections.
  • Place orange sections, orange zest, cranberries, sugar, and cinnamon in a food processor; pulse until finely chopped.
  • Transfer relish to a bowl and cover; refrigerate to allow flavors to blend, at least 2 hours.
