Make the best use of leftover cranberry sauce and whip up these easy Cranberry Sauce Muffins!

1/4 cup butter (softened)
1/2 cup sugar
1/4 cup brown sugar
2 eggs
1 teaspoon vanilla extract
1/2 cup Greek yogurt
3/4 cup cranberry sauce
1 3/4 cup flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt

Steps:

  • Preheat oven at 375F and line a 12 cup muffin tin with liners.
  • In the bowl of a stand mixer, add the butter, sugar and brown sugar and cream together until light and fluffy. Add the eggs, vanilla and Greek yogurt and continue mixing until incorporated.
  • On a low setting, add the baking powder, baking soda, salt and flour until combined and the batter is smooth.
  • Remove the bowl from the stand mixer and gently fold in the cranberry sauce. Do not over-stir, you want a more marbleized effect.
  • Scoop the batter into your muffin tin, filling each cup 2/3 full. Bake for approximately 22-25 minutes or until a toothpick inserted in the middle of the muffin comes out clean. Cool for 5 minutes in the pan then transfer to a cooling rack to cool completely.

1 egg, slightly beaten
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease 18 muffin cups or line with paper muffin liners.
  • Whisk flour, brown sugar, white sugar, baking powder, salt, cinnamon, and cardamom together in a bowl. Beat cranberry sauce, milk, oil, egg, and vanilla extract together in a separate bowl. Stir flour mixture into cranberry sauce mixture until batter is just-moistened; pour into prepared muffin cups.

1 teaspoon baking powder
1/4 teaspoon baking soda

1/4 cup full fat sour cream

  • Preheat oven to 375 degrees F. In small bowl, whisk together flour, baking powder, baking soda and salt. 1 1/2 tablespoons butter
1/4 cup water
1/2 cup sugar
1/4 cup evaporated milk
1 cup raw cranberries
1 cup flour
1/2 teaspoon salt

Steps:

  • Mix butter, water, sugar and evaporated milk or cream. Add sifted dry ingredients and cranberries. Spoon into greased muffin tin and bake at 350° for 25 minutes.
  • Meanwhile, make the sauce. Combine the last four ingredients in saucepan and bring to a boil, stirring constantly.
  • Serve muffins with sauce. My kids break their muffins apart and drizzle a little sauce over the whole thing.

3/4 cup sugar, divided

CRANBERRY BUTTER:
1 cup dried cranberries
1 cup confectioners' sugar
1/2 cup butter
1 tablespoon lemon juice

  • Preheat oven to 375°. Combine cranberries with 1/4 cup sugar; set aside. Sift together flour, remaining sugar, baking powder, salt and baking soda. Cut in butter until mixture resembles coarse meal. , Lightly beat together egg, buttermilk and orange juice concentrate.
