Lunch for two has never been easier to whip up than with this cranberry chicken salad that can be served on any type of bread, lettuce or crackers.

2 cups chicken breast (cooked and chopped)
1/4 cup mayonnaise
1/2 celery stalk (halved and chopped)
1/8 cup dried cranberries (chopped, if you prefer)
1/4 tsp yellow mustard
8 cherry tomatoes (quartered)
salt and pepper (to taste)

Steps:

  • Add all ingredients to a bowl and stir to combine.
  • Season with salt and pepper to taste.
  • Cover and refrigerate for 20-30 minutes before serving.
  • Serve on bread of choice, crackers or veggies like cucumber, red pepper or lettuce.

1/2 cup plain non fat Greek yogurt
1 Can Mandarin Oranges
1 Rotisserie Chicken

Steps:

  • On a stovetop bring a pot of water to a boil. Boil the pasta for 7-9 minutes, drain, and rinse.
  • While waiting for the water to come to a boil, and while the pasta is cooking.
  • Place the pasta, mandarin oranges, 1/2 cup non-fat Greek yogurt, chicken, and cranberry pasta salad packet in a bowl.
  • Stir the ingredients together until everything is coated, and chill for one hour.

1 (12 ounce) package bow-tie pasta (farfalle)
8 ounces diced ham
½ cup thinly sliced celery
½ cup dried cranberries
½ cup sliced almonds
1 cup mayonnaise
¼ cup apple cider vinegar
½ cup white sugar

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook the bow-tie pasta at a boil until cooked through yet tender, about 12 minutes; drain.
  • Rinse the pasta in cold water until completely chilled; drain. Transfer cool pasta to a large mixing bowl.
  • Toss the ham, celery, dried cranberries, and sliced almonds with the bow-tie pasta to mix evenly.
  • Stir the mayonnaise, apple cider vinegar, and sugar together in a bowl.

This is a combination of a couple of chicken salad recipes we have enjoyed, also - had leftover chicken from a rotsserie chicken we had for dinner this evening and with the heat wave we're still experiencing here in Southeast GA, this recipe works well for a cool lunch on a hot day.

3 cups diced boneless skinless chicken
1 stalk celery, chopped
1/4 cup dried cranberries
1/4 cup pecans, chopped
1/4 cup light sour cream
1/4 cup mayonnaise (made with canola oil preferably)
3 teaspoons lemon juice (fresh squeezed preferable)
1/8 teaspoon poultry seasoning
salt & pepper

Steps:

  • Cut up cooked chicken into bite size cubes - should be enough to fill 3 cups & place in large bowl. Add dry seasonings, celery, dried cranberries, and pecans - toss with hands so as not to break up chicken cubes.
  • In a small bowl, mix together the mayonnaise, sour cream, and lemon juice with small wire whisk & add to chicken mixture - gently toss all ingredients together and chill until ready to serve.

2 skinless chicken breasts
4 tsp olive oil
2 red onions , thinly sliced
200g mixed leaves
½ cucumber , deseeded and sliced
25g dried cranberries
85g/3oz cranberry sauce
juice 1 lime

Steps:

  • Slice each chicken breast in half horizontally to give 4 thin breasts, then rub with half the oil and season. Heat a non-stick frying pan and fry the chicken for 3 mins on each side until cooked through. Set aside on a plate.
  • Heat the remaining oil in the pan and fry the onions for 5 mins. Slice the chicken, collecting any juices, and layer up with the onions, leaves, cucumber and dried cranberries. Mix the cranberry sauce, lime juice, 2 tbsp water and any chicken resting juices, and drizzle over the salad.

2 stalks celery, diced
2 tablespoons light mayonnaise
1/4 cup dried cranberries
1/4 teaspoon kosher salt
1 teaspoon chili powder
1 3/4 teaspoons sugar

Steps:

  • Mix salt, chili powder and sugar. Sprinkle on both sides of the chicken.
  • Bake the chicken at 350F for 20 - 25 minutes, until cooked through.
  • Allow the chicken to cool and cut it into small cubes.
