CRANBERRY BROWNIES

6 oz. dark chocolate (coarsely chopped)
½ cup (4 oz.) unsalted butter
¾ cup (5¼ oz.) granulated sugar
¼ cup (2 oz.) light brown sugar
2 eggs
1 teaspoon vanilla extract
½ teaspoon salt
1 tablespoon cocoa powder
⅔ cup (2¾ oz.) all-purpose flour
¼ cup dried cranberries
1 cup chocolate covered cranberries (or substitute with chocolate chips)
1 cup fresh or frozen cranberries

Steps:

  • Preheat oven to 350ºF. Line with parchment and lightly grease an 8×8" baking pan.
  • In a medium bowl, whisk the flour, salt, and cocoa powder together.
  • Put the chocolate and butter in a large glass bowl and microwave for 30 seconds. Stir, and repeat until the chocolate and butter are completely melted and smooth. Add the sugars. Whisk until completely combined. The mixture should be room temperature.
  • Add 2 eggs to the chocolate mixture and whisk until combined. Add the vanilla and stir. Do not overbeat the batter at this stage or your brownies will be cakey.
  • Sprinkle the flour mixture over the chocolate mixture. Using a rubber spatula (not a whisk), fold the flour mixture into the chocolate until just a bit of the flour mixture is visible. Fold in the dried cranberries, chocolate covered cranberries and fresh cranberries.
  • Bake in preheated oven for about 30 minutes or until a toothpick comes out with moist crumbs attached.
  • Cool brownies completely before cutting into 16 equal squares with a very sharp knife.
  • Brownies will keep in an airtight container at room temperature or in the refrigerator for up to 1 week, or in the freezer for up to 3 months.

1 1/2 cups all-purpose flour, plus more for dusting (see Cook's Note)
1/3 cup finely ground dehydrated unsweetened cranberries
1 tablespoon sugar
1/2 teaspoon kosher salt
1 stick (8 tablespoons) very cold butter, cut into cubes
5 tablespoons very cold vodka
2 teaspoons apple cider vinegar
1/4 cup triple sec (see Cook's Note)
1 teaspoon unflavored powdered gelatin
2 1/2 cups fresh or frozen cranberries
1 teaspoon orange zest plus 1/4 cup orange juice
1/2 teaspoon ground ginger
1/2 cup plus 1 tablespoon sugar
1 cup very cold heavy cream
1 large egg white
1/2 cup fresh cranberries
1/2 cup granulated sugar
Orange peel, cut into thin strips, for garnish
Sweetened whipped cream, for serving

Steps:

  • For the crust: Add the flour, cranberries, sugar and salt to a food processor and pulse to combine. Add the butter, pulsing until you have pea-sized pieces. Mix together the vodka and apple cider vinegar in a small bowl. Add 3 tablespoons of the vodka mixture to the flour mixture and pulse, adding more of the vodka mixture a tablespoon at a time as needed, until the dough comes together when gently pinched (you may not need to add all of it). Dump the dough onto a sheet of plastic wrap, flatten into a disc and wrap tightly. Refrigerate for at least 1 hour and up to overnight.
  • Put the dough on a lightly floured work surface and roll into a 1/4-inch-thick round. Use the rolling pin to help guide the dough into a 9-inch pie plate. Press gently into the corners of the pie plate and crimp the edges decoratively. Refrigerate for 1 hour.
  • Arrange an oven rack in the bottom third of the oven and preheat to 375 degrees F. Prick the bottom of the dough all over with the tines of a fork. Place a piece of parchment on top of the dough and fill with pie weights or baking beans. Bake for 20 minutes, then remove the parchment and pie weights and bake until golden around the edges and light golden in the center, an additional 25 to 30 minutes. Cool completely.
  • For the filling: Add 2 tablespoons triple sec to a small bowl and sprinkle the gelatin over top; set aside.
  • Add the cranberries, orange zest and juice, ginger, 1/2 cup sugar and remaining 2 tablespoons triple sec to a small saucepan and place over medium-high heat. Bring to a boil and continue to cook until the cranberries begin to pop and break down, about 10 minutes. Remove the saucepan from the heat and stir in the gelatin mixture until completely dissolved and combined. Transfer the mixture to a blender and let cool slightly, then puree until very smooth. Pour into a large bowl and set aside to cool to room temperature, stirring occasionally.
  • When the mixture has cooled, add the heavy cream to a stand mixture fitted with a whisk attachment. Beat on high, streaming in the remaining 1 tablespoon of sugar slowly, until the mixture reaches stiff peaks. Stir one-third of the whipped cream into the cranberry mixture to lighten it. Then fold the cranberry mixture into the remaining whipped cream until no streaks remain. Add the filling to the pie crust. Cover loosely with plastic wrap and refrigerate for at least 3 hours and up to overnight.
  • For the decorations: Before serving, beat the egg white together with 1 tablespoon water. Toss the cranberries in the egg white mixture, then drain completely using a wide-mesh strainer. Put the sugar in a medium bowl, add the cranberries and toss to coat completely. Transfer to a parchment-lined baking sheet to dry.
  • Pile whipped cream in the center of the pie, top with the cranberries and sprinkle with the orange peel strips.

2 tablespoons cornstarch
2 tablespoons all-purpose flour
1/2 teaspoon kosher salt
4 large eggs
1/2 cup heavy cream

4 cups cranberries, thawed if frozen (from a 12-ounce frozen bag)
Orange slices, for topping
1/4 cup granulated sugar

Steps:

  • For the crust: Add the flour, sugar and salt to a food processor. Process a few times to combine. While pulsing, add the cubes of butter. Keep pulsing until the mixture looks like a coarse meal. Add 2 tablespoons of the water and process again a few times. Add more water until the dough starts to come together. Transfer the dough to a lightly floured work surface. Shape into a round and wrap in plastic. Refrigerate until firm, about 1 hour.
  • Preheat the oven to 350 degrees F.
  • Remove the pie dough from the refrigerator and roll out into a large round, about 12 inches. Transfer to a 9-inch pie dish, fold over the sides and use a fork to press a design into the edges.
  • For the filling: Whisk together the sugar, cornstarch, flour and salt in a medium bowl. In a large bowl, whisk the eggs until uniform in color and no egg white is visible. Whisk in the sugar mixture until smooth. Add the heavy cream, vanilla and orange zest and whisk to combine. Add the cranberries to the bottom of the pie crust and pour the custard over the top.
  • Bake until the custard is set with a slight wobble in the center, about 50 minutes. Let cool completely.
  • For the assembly: Sprinkle the orange slices with the sugar and use to decoratively garnish the pie before serving at room temperature or chilled.

1 1/2 cups fine vanilla wafer cookie crumbs (from about 40 cookies)
1 stick (8 tablespoons) unsalted butter, melted
1 1/2 teaspoons unflavored gelatin
2 cups Brandied Cranberry Sauce, recipe follows
1/2 cup granulated sugar
1 heaping teaspoon finely grated lime zest
1 tablespoon freshly squeezed orange juice
3 large egg whites, at room temperature
1 cup granulated sugar
1/8 teaspoon fine salt
6 cups fresh cranberries
3 cups granulated sugar
2/3 cups brandy

Steps:

  • Preheat the oven to 350 degrees F.
  • For the crust: Toss the cookie crumbs with the melted butter in a medium bowl until well combined. Press into a 9-inch pie plate and bake until golden, about 15 minutes. Cool completely before filling.
  • For the filling: Put 2 tablespoons water in a small bowl and sprinkle the gelatin evenly over the top. Let stand 3 minutes.
  • Meanwhile, put the Brandied Cranberry Sauce, sugar and lime zest in a medium saucepan and bring to a simmer over medium-high heat. Remove from the heat and stir in the gelatin mixture and orange juice; set aside to cool slightly, about 15 minutes. Pour the filling into the prepared crust and refrigerate until set, at least 4 hours.
  • For the meringue topping: Once the pie is set, put the egg whites, sugar and salt in a heatproof bowl set over, not in, a saucepan of simmering water. Whisk until the sugar is dissolved and the egg whites are foamy and warm to the touch. Remove from the heat, and whip in a stand mixer on medium-high to stiff, glossy peaks.
  • To assemble the pie: Spread the meringue over the top of the set filling. Using a kitchen torch, brown the meringue all over. Slice and serve.
  • Combine the cranberries, sugar and brandy in a medium saucepan and bring to a simmer over medium-high heat. Cook, stirring occasionally, until thickened and some of the cranberries have burst, about 20 minutes. Use right away or refrigerate, covered, for up to 1 week.

Steps:

  • Heat the oven to 180C/fan 160C/gas 4. Butter a non-stick baking tin (about 31 x 17 x 3.5cm) or line the base if you prefer. Break the chocolate into a saucepan, add the butter, sugar and juice or milk, then warm gently, stirring frequently until melted and evenly mixed. Allow to cool slightly, then beat in the eggs one at a time. Fold in the flour, cinnamon and cranberries.
  • Spread half the mixture into the prepared tin, scatter over the nuts, then gently spread the rest of the mixture on top. Bake for 25-30 mins. Cut into squares while still warm. Will keep in an airtight container for up to a week.

185g unsalted butter, cubed
185g high-quality dark chocolate, chopped
85g plain flour
40g cocoa powder
3 large eggs
275g golden caster sugar
6 mince pies or 9-12 mini mince pies
icing sugar, for dusting

Steps:

  • Melt the butter and chocolate in a medium bowl, either in a microwave - cooking for 1 min on High, then stirring and continuing to heat in 20-second blasts - or by setting the bowl over a pan of simmering water and stirring occasionally. Once melted, leave the mixture to cool.
  • Heat the oven to 180C/160C fan/gas 4. Line the base of a shallow 20cm square tin with non-stick baking parchment. Sieve the flour and cocoa into a medium bowl. Whisk the eggs and sugar with an electric mixer on maximum speed until thick and creamy, about 3-8 mins, or when the mixture runs off the beaters and leaves a trail for a second or two.
  • Pour in the cooled chocolate mixture, then fold together with a rubber spatula in a figure of eight, moving the bowl round until the mixture is a mottled dark brown. Be gentle so you don't knock out the air.
  • Sift in the cocoa and flour mixture and continue gently folding. The mixture will look dry and dusty, then fudgy. Stop just before you feel you should, as you don't want to overmix it.
  • Spoon a little mixture into the prepared tin, then add the mince pies, leaving them whole. Scrape over the rest of the mixture, gently easing it between and over the pies. Level the top. Put in the oven for 25 mins. If the brownie mixture is very wobbly in the middle, it's not quite done, so bake for another 5 -10 mins, or until the top has a shiny, papery crust and the sides are just beginning to come away from the tin. Take out of the oven and leave to cool in the tin. Dust with icing sugar. Cut into quarters, then cut each quarter into four squares. Will keep in an airtight container for a week and in the freezer for up to a month.

Something Special from Wisconsin. The state fruit is the cranberry, and of course, Wisconsin is the dairy state. The ingredients in this seasonal pie bake up into a wonderful treat for Thanksgiving. Our family first had this pie at the Elegant Farmer in East Troy Wisconsin. It took us quite a few attempts to recreate it. I think this is pretty close. You can make your own crust, or use a prepared one. Timing based on using prepared crust.

200g fresh or frozen cranberries
50g golden caster sugar
800g mixed boneless game , such as rabbit, venison, wild boar, pheasant, partridge or pigeon, finely chopped
300g pork belly , minced (ask your butcher to do this, or pulse in a food processor)
200g smoked lardons
150g cooked chestnuts , roughly chopped
½ tsp ground mace
2 large pinches of ground nutmeg
small bunch sage , finely chopped
1 tsp chopped thyme
1 tsp ground white pepper
200g lard , cubed, plus a little for greasing
575g plain flour
1 egg , beaten
4 gelatine leaves
300ml chicken stock

Steps:

  • First, make a cranberry sauce for the centre of the pie. Tip 150g of the cranberries and the sugar into a saucepan, add 1 tbsp water and bring to a simmer. Bubble for 4-5 mins until the cranberries have softened and you have a glossy sauce. Cool completely. Mix the remaining filling ingredients (including the remaining cranberries) in a large bowl and season well.
  • When you're ready to make the pastry, boil the kettle and grease a deep 20cm loose-bottomed cake tin with a little lard. Tip the flour into a bowl and season with 1 tsp salt. Measure 220ml hot water into a jug and add the lard. Stir until melted, then pour into the flour and mix with a wooden spoon to form a dough. It's best to roll hot water crust pastry while it's warm, so - working quickly - remove a quarter of the pastry, wrap and set aside. Roll the remaining pastry on a floured surface to the thickness of a £1 coin. Use the warm pastry to line your cake tin, leaving any excess pastry overhanging, and pushing it right into the corners. If it tears, patch it up with the excess - this pastry is very forgiving, so you don't have to be too gentle with it. Heat oven to 180C/160C fan/gas 4.
  • Pack half the filling into the bottom of the lined tin, making sure there are no air pockets. Spread the cranberry sauce over the meat, then pack the remaining filling on top, creating a slightly domed shape in the middle. Use a pair of scissors to trim the excess pastry to about 2cm all the way around, then brush the inside rim with some of the beaten egg. Unwrap the remaining pastry and roll out to the same thickness as before. Cut into wide strips and use to create a lattice on top of the pie, tightly weaving the pastry strips under and over each other. Pinch the pastry together around the edges, then roll the excess in towards the centre to create a neat edge. Brush the top of the pie with more egg.
  • Cook in the oven for 45 mins, then reduce the heat to 160C/ 140C fan/gas 3 and cook for a further 1 hr 30 mins. Leave to cool at room temperature, then chill overnight, or for at least 4 hrs.
  • Soak the gelatine in cold water for 5 mins, then remove and squeeze out the excess water. Heat the stock until almost boiling. Remove from the heat and stir in the gelatine. Leave to cool to room temperature.
  • Pour the stock into the pie through the holes in the lattice, using a funnel. Pour in a little at a time, allowing a few seconds before each addition (you may not need all the stock). Put in the fridge for another 2 hrs to set the jelly, then serve in wedges. Eat within 3 days.

2/3 cup butter (1 stick plus 2 Tbsp.)
2 cups sugar
4 eggs
1 1/4 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
3/4 cup heavy cream, whipped
3 tablespoons powdered sugar
1 cup whole berry cranberry sauce
1/2 cup chopped pecans
1/3 cup hot fudge (your own or purchased)

  • Preparation:.
  • Preheat oven to 350°.
  • Grease a 10" springform pan and an 8x8" square pan and set aside. Melt unsweetened chocolate and butter together in a heavy saucepan over low heat, stirring frequently until blended and smooth. Remove from heat; beat in the sugar and eggs until smooth. Add flour, baking powder and salt and mix well.
  • Spread half of the batter in a greased 10" springform pan, and the other in a greased 8x8" square pan. Bake at 350° for 15 minutes, until just set. Don't overbake these! If they are underbaked a bit, that's just fine. The springform pan brownies will probably bake faster than the square pan brownies because they will be thinner, so check frequently. Cool both completely.
  • Cut the brownies in the 8" square pan into cubes. In large bowl, beat cream with powdered sugar until stiff; fold in cranberry sauce. Spoon half of this mixture over the springform pan brownies. Top with half of the brownie cubes and half of the pecans. Repeat layers. Drizzle with hot fudge sauce. Chill for a few hours in the refrigerator, then cut into wedges.
