Cranberries lend a burst of tart flavor and bright color to this quick bread sent in by Phyllis Schmalz of Kansas City, Kansas. Dotted with crunchy nuts, slices of the moist loaf are good for breakfast with a cup of coffee or as a snack anytime of the day.

Yield 1 loaf (16 slices).

Number Of Ingredients 11

1-1/2 cups all-purpose flour
3/4 cup sugar
1-1/2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
2 eggs
2 tablespoons canola oil
2 cups chopped peeled tart apples
1 cup fresh or frozen cranberries
1/2 cup chopped walnuts

Steps:

  • In a large bowl, combine the flour, sugar, baking powder, cinnamon, baking soda and salt;. In a small bowl, whisk eggs and oil. Stir into dry ingredients just until moistened (batter will be very thick). Fold in apples, cranberries and walnuts. , Transfer to an 8x4-in. loaf pan coated with cooking spray. Bake at 350° for 60-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.

2 cups apples, peeled and chopped
1 egg
1/2 teaspoon baking soda
1 cup cranberries
3/4 cup sugar
1 1/2 cups flour
1 teaspoon cinnamon
2 tablespoons cooking oil
1 1/2 teaspoons baking powder

Steps:

  • Preheat oven to 350 degrees.
  • Combine apples, sugar and oil in medium mixing bowl.
  • Add egg; mix well.
  • Combine dry ingredients in seperate bowl.
  • Add apple mixture, mixing just until moist.
  • Stir in cranberries.
  • Sprad batter in greased loaf pan.
  • Bake @ 350 degrees 1hour.
  • Cool in pan 15 minutes before removing.

I like to prepare my bread batter ahead of time and thaw it out the night before I serve it. Just pop it in the oven in the morning and you have fresh breakfast bread. Enjoy!

2 cups peeled, cored and chopped apple
¾ cup white sugar
2 tablespoons vegetable oil
1 egg
1 ½ cups all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon baking soda
1 teaspoon ground cinnamon
1 cup fresh or frozen cranberries
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch baking pan.
  • Stir together apples, sugar and oil. Add egg; mix well. In a separate bowl, sift together flour, baking powder, baking soda and cinnamon. Stir flour mixture into wet ingredients, mixing just until dry ingredients are moist. Stir in cranberries and walnuts. Spread batter into prepared pan.
  • Bake in preheated oven for 35 to 45 minutes, until toothpick inserted into center of loaf comes out clean.

1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder

1/2 teaspoon salt
2 cups peeled tart apples (chopped)
1 cup fresh cranberries (or frozen, coarsely chopped)
1/2 cup chopped walnuts

Steps:

  • In a mixing bowl, beat the eggs, sugar and oil.
  • Combine the flour, baking powder, cinnamon, baking soda, and salt in a separate bowl.
  • Add flour to the egg mixture just until combined (batter will be very thick).
  • Stir in apples, cranberries and walnuts.
  • Pour into an 8x4x2" loaf pan coated with non-stick spray.
  • Bake at 350 dgrees for 60-65 minutes or until toothpick inserted near center comes out clean.
  • Cool for 10 minutes before removing from pan to a wire rack to cool completely.

3/4 teaspoon baking soda

Steps:

  • Preheat oven to 325°;grease a 9"x5"x3" loaf pan.

50 g rolled oats
240 g self raising flour, wholemeal
1 teaspoon baking powder
125 g dried cranberries
75 g dark muscovado sugar
1 teaspoon ground cinnamon
60 ml honey
300 ml skim milk
60 g dried apples, diced small
1/2 teaspoon allspice
30 g walnuts

Steps:

  • Place oats into a bowl, pour over milk and soak for 30 minutes. Preheat oven to 180 degrees. Sift flour and baking powder into a large bowl. Add the oat mix, cranberries, apple, sugar, spices, honey and mix well. Spoon into a 900gm non-stick or greased loaf tin and sprinkle with the walnuts. Bake for 45 minutes or until golden brown and skewer comes out clean. Remove form oven and place on cooling rack.
