A gorgeous and delicious angel food layer cake. You can make the angel food cake ahead of time, or buy a pre-made angel food cake. I clipped this from a magazine a long time ago. This is great in the summer time when you don't want to heat the oven.

4 cups sliced strawberries
3/4 cup sugar, divided
2 tablespoons milk
8 ounces cream cheese, softened
1 (10 inch) round angel food cake
3 tablespoons triple sec (orange-flavored liqueur) or 3 tablespoons orange juice, divided
1 cup whipping cream, whipped very firm with 2 tbsp sugar
2 tablespoons sliced almonds

Steps:

  • Combine strawberries and 1/4 cup sugar in a small bowl; cover and let stand 1 hour. Combine 1/2 cup sugar, milk, and cream cheese in a medium bowl; beat at medium speed of mixer til smooth.
  • Cut cake horizontally into 3 layers using a serrated knife; place bottom layer, cut side up, on a serving plate. Brush with 1 tbsp liqueur (or orange juice), and spread half of cream cheese mixture over cake. Spoon one third of strawberries over cream cheese mixture using a slotted spoon. Repeat layers, ending with cake and liqueur (or orange juice). Spread whipped cream over top and sides of cake. Cover; chill 30 minutes.
  • Arrange remaining strawberries on top of cake. Sprinkle with almonds, and serve.

6 eggs
1 tsp ( 5 mL ) vanilla extract
1 cup ( 250 mL ) granulated sugar
1 cup ( 250 mL ) all-purpose flour
1 tsp ( 5 mL ) baking powder
1 cup ( 250 mL ) granulated sugar
1 tbsp ( 15 mL ) cornstarch
⅓ cup ( 75 mL ) water
3 cups ( 750 mL ) fresh or frozen cranberries (300 g), chopped
2 cups ( 500 mL ) diced peeled apples
1 1/2 cups ( 375 mL ) whipping cream (35%)
2 tbsp ( 30 mL ) granulated sugar

Steps:

  • Preheat oven to 350°F (180°C).
  • Cake
  • Grease two 9-inch (23 cm) round layer cake pans; line bottoms with waxed paper.
  • Beat eggs and vanilla with electric mixer at high speed until foamy.
  • Adding sugar gradually, beat until eggs are very light, about 3 minutes. Stir together flour and baking powder; add to egg mixture in three additions.
  • Divide batter between pans. Bake in preheated 350°F (180°C) oven until cake springs back when touched in centre, 20 to 25 minutes. Cool on wire rack for 5 minutes.
  • Turn cakes out of pans; peel off paper and cool completely.
  • Filling
  • Combine sugar and cornstarch in medium saucepan. Stir in water, cranberries and apples. Bring to boil over medium heat, stirring frequently.
  • Cook until apples are tender and mixture is thick, 3 to 4 minutes. Remove from heat and cool.
  • Frosting
  • Just before assembling cake, whip cream until soft peaks form. Add sugar and whip until stiff.
  • To assemble, split cakes to make four layers. Place one layer on serving plate; top with ½ cup (125 mL) filling. Repeat with two more layers, placing last layer crust side up on top of cake.
  • Spread remaining filling on top. Frost sides with whipped cream. Pipe a border or decoratively spreah whipped cream around top edge of cake.
  • Refrigerate until ready to serve, up to 4 hours.

Steps:

  • Mix the packages of strawberry jello, boiling water, and lemon juice in a small mixing bowl. Stir well until completely dissolved and set aside.

  • Preheat oven to 350 degrees.

This is the best angel food cake! I imagine it would also work well with other types of berries too - fresh, frozen or dried. Be careful when separating the eggs, if you get one drop of yolk in the whites, it won't whip properly.

1 cup cake flour
1 1/2 cups sugar, divided use
12 large egg whites
1 1/2 teaspoons vanilla extract
1 1/2 teaspoons cream of tartar
1/2 teaspoon salt
1 cup cranberries, picked over (or more, if you are really into cranberries)
1 tablespoon orange zest (from 1 orange, I use a microplaner)

Steps:

  • Preheat oven to 375 degrees F.
  • Clean and dry tube or bundt pan (trace amounts of oil may cause whipped egg whites to deflate).
  • Stir together flour and 3/4 cup sugar, and set aside.
  • In a large bowl, whip egg whites with vanilla, cream of tartar, and salt until medium stiff peaks form.
  • Gradually add remaining 3/4 cup sugar, and continue to whip until stiff peaks form. Batter will fill mixer's bowl and appear very shiny (see note in step 7 also).
  • Carefully fold in flour mixture, 1/3 of it at a time.
  • Carefully fold in cranberries and orange zest (batter should be very thick - when I made it it was thick enough to keep the cranberries in suspension and they did not sink to the bottom during baking - see photos).
  • Pour batter evenly into pan.
  • Bake for 40 minutes, or until cake is light golden brown and springs back when lightly touched.
  • Invert pan over the top of a thin necked bottle and allow to cool completely (this prevents decompression while it is cooling).
  • Loosen cake by running a knife around the edges and center of the pan. Invert onto a serving plate.

2 loaves of pre-made angel food cake
16 oz whipped cream (thawed out)
1 block of cream cheese (softened)
14 oz sweetened condensed milk
3/4 th cup strawberry preserves
1 extra pint of strawberries for decoration (OPTIONAL)

Steps:

  • Prep Angel Food Cake
  • Tear up into bite sized pieces - not super large but also not too small. Place in bowl or on plate and set aside.
  • Prep Strawberries
  • Once strawberries are washed, quartered and placed in a bowl, add 3/4th cup Strawberry PRESERVES (not jelly) to bowl and mix.
  • Make sure all strawberries are lightly covered in preserves.
  • Prep Whipped Cream
  • Add 16 oz thawed whipped cream, 1 block of softened cream cheese, and 14 oz of sweetened condensed milk into a bowl and mix until creamy.
  • Layered Strawberry Angel Food
  • Once all three layers are prepped, its time to assemble! Take a large casserole style baking dish and add half of the angel food cake chunks on the bottom of the dish.
  • Smother with half the strawberries.
  • For the last layer, add half of the whipped cream mixture and smooth with a spatula.
  • Now repeat the process with angel food cake, strawberries, and whipped cream mixture.
  • Feel free to add one last layer of decorative strawberries if you like and want it to look fancy.
  • Simply use a large serving spoon to scoop out Strawberry Angel Food Cake!

1-1/2 teaspoons vanilla extract
3/4 teaspoon cream of tartar
1/4 teaspoon salt
1 cup plus 2 tablespoons sugar
3/4 cup cake flour
Confectioners' sugar
FILLING:
2-1/3 cups fresh or frozen cranberries
1 cup sugar
6 tablespoons water, divided
1/3 cup chopped candied orange peel, optional
1 tablespoon orange liqueur, optional
1 teaspoon grated orange zest, optional
2 tablespoons cornstarch

Steps:

  • Preheat oven to 350°. Place egg whites in a large bowl; let stand at room temperature for 30 minutes. Meanwhile, line a greased 15x10x1-in. baking pan with waxed paper; grease the paper and set aside., Add vanilla, cream of tartar and salt to egg whites; beat on medium speed until soft peaks form. Gradually beat in sugar, 2 tablespoons at a time, on high until stiff glossy peaks form and sugar is dissolved. Fold in flour, about 1/4 cup at a time., Carefully spread into prepared pan. Bake until cake springs back when lightly touched, 15-20 minutes. Cool for 5 minutes. Turn cake onto a kitchen towel dusted with confectioners' sugar. Gently peel off waxed paper. Bring to a boil. Reduce heat; simmer, uncovered, for 5-6 minutes or until berries pop. Mash berries; strain, reserving juice and discarding pulp. Return juice to the pan and if desired, add chopped candied orange peel, orange liqueur and orange zest. Combine cornstarch and remaining water until smooth; gradually add to cranberry juice mixture. Bring to a boil; cook and stir until thickened, about 2 minutes. Chill., Unroll cake and spread filling to within 1/2 in. of edges. Roll up again. Cover and refrigerate for 1 hour before serving. If desired, top with additional confectioners' sugar, candied orange peel and sugared cranberries. Refrigerate leftovers.

1 ⅛ cups castor sugar or superfine sugar, divided
¾ cup sifted cake flour
¼ teaspoon salt
9 egg whites
1 ½ teaspoons vanilla extract
¾ teaspoon cream of tartar
¼ cup confectioners' sugar for dusting
1 cup white sugar
2 ⅓ cups fresh or frozen cranberries
6 tablespoons water
2 tablespoons cornstarch
½ cup heavy cream
3 tablespoons confectioners' sugar

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C). Lightly grease a 10x15 inch jellyroll pan with cooking spray. Line with parchment paper.
  • In a medium bowl, whisk together 1/2 cup of superfine sugar, cake flour and salt. Set aside. In a separate bowl, whip egg whites until foamy. Add vanilla and cream of tartar, and continue to whip. Gradually sprinkle in the remaining superfine sugar while continuing to whip the egg whites to firm peaks. Sift the flour mixture over the egg whites and fold in by hand using a rubber spatula. Spread the batter evenly in the prepared pan.
  • Bake for 20 minutes in the preheated oven, or until the center of the cake springs back when lightly pressed. Cool in the pan over a wire rack. Generously sift sugar over the top of the cake, and cover with a clean towel. Run a spatula around the outside of the cake in the pan to loosen, and turn out onto the towel. Remove the parchment paper from the back of the cake, then place it back on loosely. Roll up with the towel loosely from short end to short end, and allow to cool in the rolled position.
  • In a saucepan over medium heat, combine 1 cup of white sugar, cranberries and water. Simmer until the cranberries burst, about 5 minutes. Whisk in the cornstarch, and simmer just until thick, about 2 minutes. Transfer to a bowl, cover and refrigerate.
  • Unroll the cake so that it is sitting flat on the towel. Spread the cooled cranberry filling over the top, leaving 1/2 inch border. Use the towel to help you keep a grip on the cake for an even roll. Roll up from short end to short end and place seam side down onto a platter. Refrigerate until serving.
  • Whip cream with confectioners' sugar until soft peaks form. Serve slices of cake with a dollop of sweetened whipped cream.

1 cup superfine sugar, divided
¼ teaspoon salt
9 large egg whites
1 ½ teaspoons vanilla extract
¾ teaspoon cream of tartar
2 tablespoons superfine sugar
¼ cup confectioners' sugar, or as needed
1 cup white sugar
2 ⅓ cups fresh cranberries
6 tablespoons water
2 tablespoons cornstarch

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C). Lightly coat a 10x15-inch baking pan with nonstick spray. Line the bottom of the pan with waxed paper, then spray the paper.
  • Sift cake flour, 1/2 cup superfine sugar, and salt into a bowl. Sift the mixture two more times.
  • Beat egg whites in a glass, metal, or ceramic bowl until foamy. Gradually add vanilla and cream of tartar, continuing to beat until soft peaks form. Gradually beat in remaining 1/2 cup plus 2 tablespoons superfine sugar. Gradually sift flour mixture over egg white mixture, folding it in until just combined. Spread batter evenly in the prepared pan.
  • Bake in the preheated oven until top of cake is lightly browned and springs back when lightly pressed, about 20 minutes.
  • Remove cake and set on a wire rack. Loosen sides with a spatula, then generously sift confectioners' sugar over top. Cover cake with a clean kitchen towel and invert onto a second wire rack. Remove the pan and peel off the waxed paper. Starting at the short end, roll up the cake and towel together. Place, seam-side down, on a rack and let cool completely, about 1 hour.
  • Simmer cranberries, sugar, and water in a pan over medium-low heat for 5 minutes. Strain well and return to the pan.
  • Whisk in cornstarch; simmer until thick, about 2 minutes. Cover and chill until cake has fully cooled.
  • Very gently unroll the cooled cake. Carefully spread cranberry filling over top, leaving a 1/2 border with no filling. Gently re-roll the cake and place, seam-side down, on a serving platter. Refrigerate for up to 2 hours before serving.

  • In a separate bowl, pre-sift the flour and add the salt and optional baking powder; baking powder will help keep the cake fluffy. Begin sifting the flour into the egg whites; do this in small increments (I split the flour into 3 parts). Sift the flour into the egg whites, then fold gently but thoroughly from the bottom of the mixing bowl. It's very important to keep the egg whites as fluffy as possible. Once all the flour is incorporated, sift in more. Watch my video recipe to see how it's done!
  • If using a funnel cake pan, drop heaping spoonfuls of the batter into the prepared pan. If using round cake pans, divide the batter evenly between the pans. Use a scoop for cupcakes. Once the batter is in the pan, tap the pan hard a few times against your work surface to fill any possible air pockets. Use a small spatula to leave the batter.
