- Preheat oven to 350 degrees.
- Place one disk of dough on a floured work surface, sprinkle dough with flour, and roll out to 1/4 inch thick. Cut out 25 to 30 circles using a 2 1/4-inch round cutter, re-rolling dough once if necessary. Place each circle in a 1 3/4-inch nonstick petit four brioche mold, gently pressing down on the bottom and sides. Place filled molds on a baking sheet; transfer to a freezer for 20 minutes.
- Transfer baking sheet to oven and bake tart shells until golden brown, 12 to 15 minutes. Transfer tart shells, in their molds, to a wire rack to cool completely.
- Place frangipane in pastry bag fitted with a small, plain round tip. Fill each tart shell with 1/4 teaspoon frangipane. Place tart shells, in their molds, on a baking sheet and transfer to oven. Bake until frangipane springs back when touched with your fingertip, 15 to 17 minutes. Transfer tart shells to a cooling rack; let cool completely.
- In a large bowl, mix together cranberries, almonds, and enough caramel to hold cranberries and almonds together, about 1 cup. Remove almond tarts from their molds and place on a parchment paper-lined baking sheet. Spoon cranberry mixture on top of frangipane; transfer to oven and bake until cranberries just begin to pop, 6 to 8 minutes. Drizzle with caramel and serve.

- Put fresh cranberries, 1/3 cup sugar, and the water into a saucepan over medium heat and cook, stirring to dissolve sugar, until cranberries have just softened, about 3 minutes. Remove from heat, and let cool completely.
- On a lightly floured work surface, roll out dough to a 12-inch circle, 1/8 to 1/4 inch thick. Transfer to an 8-by-2-inch springform pan, pressing crust into bottom and up sides. Trim excess flush with rim. Refrigerate for 30 minutes.
- Preheat oven to 350 degrees. Prick tart crust all over with a fork. Cut a 12-inch round of parchment, and place on top of chilled crust. Fill with pie weights or dried beans. Bake for 10 minutes. Remove weights and parchment, and brush crust lightly with egg white. Return to oven, and bake until pale golden, about 25 minutes. Refrigerate remaining egg white. Let crust cool in pan on a wire rack for 10 minutes.
- Raise oven temperature to 375 degrees. Spread jam over bottom of tart crust.
- Beat butter and remaining 1/2 cup sugar with a mixer on medium-high speed until pale and fluffy, about 3 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in vanilla. Reduce speed to medium. Slowly add ground almonds, cinnamon, and salt, and beat until just combined. Spread mixture over jam-covered crust.
- Bake tart until filling is set and has darkened slightly, 45 to 50 minutes. (If top darkens too quickly, cover loosely with foil.) Remove tart from oven, brush top with egg white, and sprinkle with sugar. Return to oven, and bake for 5 minutes more. Let cool on a wire rack for 15 minutes. Remove from pan, and top with candied cranberries. Serve warm.

- Preheat oven to 350°F and lightly grease a tart pan with a removeable bottom with butter or baking spray making sure to pay attention to the sides.
- Combine the oats, walnuts, brown sugar and spices in a food processor. Process until finely chopped then pulse in the cubes of cold butter one by one until the mixture starts to come together.
- Turn the ingredients out into the prepared tart pan and press evenly into the bottom of the pan and up the sides.
- Place the crust in the refrigerator for 15 minutes.
- Remove from the refrigerator, place the tart pan on a baking sheet and bake the crust for 15 minutes.
- Remove from the oven, gently press down the middle if it's puffed up a bit from baking and let cool while you make the curd.
- Combine the cranberries, lemon zest, 3/4 cup sugar and water in a sauce pot. Bring to a simmer then lower the heat and cook for 15 minutes, stirring occasionally to help break down the cranberries.
- Turn off the heat and let cool for 5 minutes then transfer the mixture to a blender and blend until smooth.
- Return the mixture to the sauce pot over medium-low heat.
- One by one add the remaining ingredients including the leftover 2 tablespoons of sugar to the pot whisking constantly as you go.
- Once all ingredients are added to the pot, continue cooking for 10 minutes whisking constantly until the mixture has thickened.
- Strain the cranberry curd over a large bowl through a fine mesh strainer using a spatula to push the curd through.
- Pour the strained filling into the cooled tart crust and refrigerate for at least 3 hours until set.
- Keep refrigerated until serving. Garnish with sugared cranberries or candied lemon slices.

- Mixing the dough:1) Combine the flour, sugar and salt in a large bowl. Add the butter and, using a pastry cutter (or your fingertips), cut the butter into the dry ingredients until the mixture resembles coarse sand. Alternatively, you can use a food processor. 2) Add the egg and mix with your hands (or pulse in the food processor) just until the dough holds together when squeezed. If the dough doesn't come together with the egg, you can add ice water, a teaspoon at a time, until it does. Rolling out the dough:3) Transfer the dough to the counter and shape it into a disk. Place it in between 2 sheets of parchment paper and roll it until it is large enough to cover the base and sides of your tart pan (or large enough to cut enough circles for tartlet molds) and about 1/4 inch thick. Slide the rolled dough with the parchment paper onto an upside-down baking sheet and refrigerate for at least 2 hours or up to 24 hours. Transferring the dough to the pan(s):4) Remove the dough from the fridge and let it rest on the counter for 10 minutes to soften slightly. If making a large tart, gently flip the chilled dough over a 10 or 11-inch tart pan, pressing it into the pan to shape it and then cutting off the excess. GLUTEN-FREE, VEGAN CRANBERRY-ALMOND TARTLETS
These tartlets are the perfect way to please everyone at the table on Thanksgiving. As with most vegan and gluten-free tarts, they're best served the day they're made, but you can press the crusts and freeze them ahead of time to give yourself a head start. The toasted-almond milk for the filling and the cranberry topping can be made up to 3 days in advance. Just bake the crusts and cook the filling the day you're serving the tartlets.

- For the crust: Process the rolled oats, almonds and salt in a food processor until finely ground. Transfer the mixture to a medium bowl, and stir in the oat flour and brown rice flour. Drizzle in the coconut oil, and mix well. Add the maple syrup and vanilla, then stir to combine. (The dough will be quite wet.) Cover the bowl, and set aside for 30 to 60 minutes or until the dough is moist but no longer sticky.
- Preheat the oven to 350 degrees F. Thoroughly oil ten 3-inch tartlet pans, and press the dough evenly into each, trimming excess dough from the edges. Prick the bottoms with a fork several times, place the tart pans on a baking sheet and bake until golden and fragrant, 20 to 22 minutes. Let cool.
- For the filling: Line a medium strainer with a thin kitchen towel or several layers of cheesecloth, and place it over a medium pot; set aside. Blend 2 1/2 cups water and the almonds in a blender until smooth. Pour the almond milk through the lined strainer into a pot. Gather the edges of the cloth, and gently squeeze out the milk; discard the dry pulp that remains. Add the maple syrup, agar flakes and salt to the almond milk, and whisk to combine. Bring the mixture to a boil over medium heat, whisking every minute or so. Cover the pot, reduce the heat to low and simmer until all the agar is dissolved, about 15 minutes. Combine the arrowroot with 1 tablespoon water, and slowly drizzle the mixture into the simmering liquid. When the liquid returns to a simmer, remove the pot from the heat and whisk in the vanilla.
- Carefully remove the crusts from the pans. Pour 1/4 cup of the warm filling into each tart shell. Place the tartlets on a flat tray, set aside until the filling has stopped steaming, then refrigerate for at least 30 minutes or until ready to serve.
- For the topping: Bring the cranberries, orange juice, maple syrup and cinnamon to a boil in a small pot. Stir the mixture, cover the pot, reduce the heat to low and simmer for until the cranberries are soft, 5 minutes. Dissolve the arrowroot in 2 teaspoons water, and slowly drizzle the arrowroot mixture into the cranberry mixture. Remove the pan from the heat once the mixture has returned to a simmer. Let cool. Top each tartlet with a spoonful of the cranberry mixture, and serve.
CRANBERRY-RICOTTA TARTS IN A TOASTED ALMOND CRUST
Steps:
- In a food processor, combine the almonds and brown sugar and grind until the almonds are finely chopped. Add the melted butter and pulse on and off, just until the butter is incorporated into the mixture. Place 6 (4-inch) tart pans with removable bottoms on a baking sheet. (Or you can use a 10-inch pan with removable bottom.) Divide the almond mixture evenly among the tart pans, pressing the crust firmly against the sides and bottoms. Set aside.
- In a small saute pan, slowly heat the brandy, and pour it over the cranberries in a heatproof bowl. (Caution: Do not heat alcohol over a high heat or it will ignite. If this happens, simply let it burn away, making sure that there is nothing flammable near the stove. It will burn away in a matter of seconds.) Let the cranberries sit for 20 minutes and then drain.
- In a medium-size bowl, combine all the filling ingredients and stir vigorously until the mixture is very creamy.
- TO ASSEMBLE: Place the tart pans on a baking sheet. Sprinkle the cranberries into the crust. Carefully pour the cheese mixture just until it reaches the top of the crust. Bake the tarts in a preheated 325 degree oven for 45 minutes, or until the cheese is golden brown. Let them cool completely before serving. As the tarts cool, the filling will fall and shrivel slightly. Nonetheless, they will still look irresistible. Remove tarts from pans just before serving.

CRANBERRY CURD TART RECIPE

- In a stand mixer fitted with the paddle attachment, in a large bowl with an electric mixer, or in a food processor, cream together the sugar and butter until pale and thick.
- Add almond flour, almond extract, and salt.
- Mix until the dough comes together. If the mixture seems too crumbly to work with, add in cold water a tablespoon at a time until the mixture forms into a rough ball when squeezed.
- Press the dough evenly into a 10-inch tart pan. You should use about half the dough for the sides, and half for the bottom of the pan. Prick bottom of the crust with a fork and freeze for 30 minutes.
- When chilling time is almost up, heat the oven to 350 degrees. Bake the chilled tart shell until lightly brown, about 15 minutes. Cool completely.
- Place the cranberries, orange zest, and cranberry juice in a medium saucepan over medium-high heat. Bring to a boil, and continue to cook, stirring frequently, until all the cranberries have burst open, about 5 minutes. Blend the mixture either using an immersion blender or by pureeing it in a blender.
- Fit a fine-mesh strainer over a large bowl. Pour the blended cranberry mixture through the strainer, using a spatula to press the mixture through. Discard the pulp left in the strainer. You should have about 1 1/3 cups of cranberry puree.
- In a large glass measuring cup or bowl, whisk together the eggs and egg yolks. Then temper the eggs by adding a few tablespoons of the warm cranberry puree to the eggs and whisking. Continue adding the cranberry puree a small amount at a time-increasing the amount added each time-until all the cranberry puree has been incorporated into the eggs.
- Wipe out the saucepan used for the cranberries, and then pour the cranberry and egg mixture back into the saucepan. Add in the sugar and salt and whisk until smooth. Place the mixture over medium heat and stir the curd constantly, making sure to scrape down the sides and bottoms of the pan. Cook until the mixture comes to a mixture and thickens slightly, about 5-7 minutes. It should coat the back of a spoon, and it'll read around 150ºF on a thermometer.
- Remove the pan from heat, and add in all the butter and vanilla extract, stirring well until the butter is completely melted.
- Pour the cranberry curd into the pre-baked tart crust and spread in an even layer. Bake in the preheated oven until the curd is set, but is still slightly jiggly in the center-about 12-15 minutes.
- Let the tart cool on a wire rack for one hour, and then transfer to the fridge until chilled through-at least 2 hours-before serving. Garnish with sugared cranberries and candied citrus peels for garnish.
