2 slices white sandwich bread
3 tablespoons unsalted butter
Kosher salt and freshly ground black pepper
1 large egg
2 tablespoons mayonnaise
1 tablespoon chopped fresh chives
1 tablespoon chopped fresh parsley
1/4 teaspoon finely grated lemon zest
1/4 teaspoon paprika
Pinch of cayenne pepper
1 pound lump crabmeat, picked over
1 1/4 cups oyster crackers
Vegetable oil, for frying
8 hamburger buns, split
Bibb lettuce, for serving
1/2 cup mayonnaise
1/2 teaspoon finely grated lemon zest, plus 2 tablespoons lemon juice
Pinch of cayenne pepper
Kosher salt and freshly ground black pepper
1 tablespoon finely chopped fresh chives

Steps:

  • Make the crab cakes: Tear the bread into very small pieces or rub between your hands into small crumbs. Heat 1 tablespoon butter in a small nonstick skillet over medium heat. Add the breadcrumbs and a pinch each of salt and black pepper. Cook, stirring occasionally, until the breadcrumbs are toasted and crisp, about 3 minutes; transfer to a large bowl and let cool. Melt the remaining 2 tablespoons butter in the skillet; let cool slightly.
  • Add the egg, mayonnaise, chives, parsley, lemon zest, paprika, cayenne and melted butter to the breadcrumb mixture; stir to combine. Add the crab and gently stir until just combined. Line a baking sheet with parchment paper. Form the crab mixture into eight 21/2- to 3-inch patties; transfer to the prepared baking sheet and refrigerate 1 hour.
  • Meanwhile, grind the oyster crackers in a food processor to make fine crumbs; set aside.
  • Make the sauce: Whisk the mayonnaise with the lemon zest and juice, cayenne, 1/4 teaspoon salt and a few grinds of black pepper in a small bowl until smooth. Stir in the chives. Refrigerate until ready to serve.
  • Cook the crab cakes: Heat 1/2 inch vegetable oil in a large nonstick skillet over medium-high heat until shimmering. Press the crab cakes into the ground oyster crackers, turning to coat. Working in batches, add the crab cakes to the skillet and fry, turning, until golden, 4 to 5 minutes. (Adjust the heat if the crab cakes are browning too quickly.) Drain on a paper towel-lined plate. Serve the crab cakes on the buns with lettuce and sauce.

1/2 cup mayonnaise
1 teaspoon Worcestershire sauce

1 tablespoon minced celery leaves
1/4 teaspoon celery seeds
1 teaspoon mustard powder
1/4 teaspoon chili powder
Kosher salt and freshly ground pepper
1 pound jumbo lump crabmeat, picked over
6 tablespoons unsalted butter, melted
1 cup mayonnaise
Juice of 1/2 lemon
3 tablespoons minced dill pickles
1 tablespoon Worcestershire sauce
1/2 teaspoon hot sauce
2 scallions, minced
Kosher salt and freshly ground pepper
1 large head Boston lettuce, cut into chunks
4 heads red or regular endive, quartered lengthwise
1 cup cherry tomatoes, halved
4 inner stalks celery, leaves coarsely chopped, stems diced
4 scallions, halved lengthwise and cut into 1 1/2-inch pieces
1/2 cup fresh chervil, tarragon and/or dill (leaves and tender stems)
1/2 cup fresh parsley leaves
1/4 cup extra-virgin olive oil
Kosher salt and freshly ground pepper

Steps:

  • Make the crab cakes: Place half of the cracker crumbs in a large bowl. Drizzle in the egg, then stir in the mayonnaise, Worcestershire sauce, lemon juice, parsley, celery leaves, celery seeds, mustard powder, chili powder, 1/2 teaspoon salt, and pepper to taste. Gently fold in the crabmeat. Form into six 3-inch-wide patties (about 1/2 cup crab mixture each). Spread the remaining cracker crumbs on a plate; press the crab cakes in the crumbs on both sides and around the edges. Transfer to a baking sheet. Cover and refrigerate until firm, 2 to 6 hours.
  • Make the sauce: Mix the mayonnaise, lemon juice, pickles, Worcestershire sauce, hot sauce and scallions in a small bowl. Season with salt and pepper. Cover and refrigerate until ready to serve.
  • Position a rack in the upper third of the oven and preheat to 450 degrees F. Brush the crab cakes with the 6 tablespoons melted butter and bake until golden, 15 to 20 minutes.
  • Meanwhile, make the salad: Gently toss the lettuce, endive, tomatoes, celery, scallions, chervil and parsley in a large bowl; drizzle with the olive oil, season with salt and pepper and toss again. Serve with the crab cakes and sauce.

8 oz fresh crabmeat, picked over for shells
3 Tbsp mayo
1 tsp lemon juice, freshly squeezed
1 pinch cayenne pepper
4 slice bacon, thick sliced
15-20 slice colby cheese, cut into 1-inch squares about 1/8 inch thick

Steps:

  • 1. Gather all your ingredients
  • 2. Sauté the bacon until crisp, but not too crisp
  • 3. Remove from pan and allow to drain and cool on some paper towels
  • 4. Chef's Note: Reserve the bacon grease for another use (I'm planning on sautéing a couple of chicken breasts with it... but that's another recipe).
  • 5. Chop the bacon into small pieces and reserve.
  • 6. Add the mayo, lemon juice, salt & pepper (to taste), and the cayenne pepper to a bowl, and mix thoroughly.
  • 7. Carefully fold in the crab until fully incorporated.
  • 8. Place a heaping teaspoon of the crab mixture on a cracker, and add a few pieces of chopped bacon.
  • 9. Cover with a piece of the cheese, and place in a broiler and broil until the cheese bubbles and begins to brown.
  • 10. Serve with a lemon or lime wedge. Enjoy.
  • 11. Keep the faith and keep cooking.

She doesn't suggest any sauces to be served with this, as 'she likes them plain so you can taste the crab meat'. My first ever batch of crab cakes, from this recipe, were absolutely fantastic. Prep time includes sitting time.

1 lb crabmeat
4 -5 ounces white bread, grated
1 1/2 tablespoons chopped fresh herbs (I use parsley, chives, and a bit of cilantro)
1/2 teaspoon cayenne
1 tablespoon mayonnaise
1 tablespoon spicy horseradish mustard
1 egg
1 egg yolk
freshly cracked pepper
1/2 cup superfine cracker crumb
1/2 cup superfine breadcrumbs
2 tablespoons unsalted butter
1 lemon, cut into rings or wedges

Steps:

  • Place crab meat, bread, cayenne and herbs into bowl and combine.
  • In another bowl, whisk together the mayo, mustard, egg and additional yolk.
  • Season with pepper to taste.
  • Slowly pour dressing into the crab meat mixture, using a fork to gently lift and fluff the texture.
  • Use only enough liquid to cause the mixture to just cling together; don't overwork.
  • Form into cake about 3 inches in diameter and 3/4 inch high.
  • Lay onto plate, cover, and refrigerate for at least one hour, until firmed up.
  • To get superfine cracker crumbs and breadcrumbs, whir everything up in a food processor.
  • Before cooking, dip cakes into cracker crumbs to coat.
  • This prevents the crab meat edges from getting tough and chewy when sauteeing.
  • Heat butter in frying pan until foamy.
  • Add crab cakes, and let saute until browned on the bottom.
  • Turn them just once, and brown the other side.
  • Keep warm until all cakes have been sauteed.
  • Arrange on platter with wedges of lemon.
  • Please note that I served these on top of a bed of MEAN CHEF's Texas Caviar from the Cowgirl Hall of Fame Restaurant (#27742).
  • the flavors melded together perfectly, although you may want to make sure to not go overboard on the jalapenos, so as not to overwhelm the crabcake.

1 1/2 pounds crab meat, de-shelled
16 soda crackers, finely crumbled
1 teaspoon mayonnaise
1 tablespoon finely chopped fresh chives
1 teaspoon Dijon mustard
Zest of 1 lemon
1 egg
2 tablespoons canola oil
Salt and freshly ground pepper
1 egg
1 tablespoon Dijon mustard
2 tablespoons red wine vinegar
2 cups canola oil
1 teaspoon Sriracha
1 teaspoon salt
Freshly ground pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • For the crab cakes: In a large bowl, combine the crab, crackers, mayonnaise, chives, mustard, lemon zest and egg. Mix together well. Form palm-sized cakes and place them on a baking tray covered with parchment paper. In a pan, heat the olive oil over medium-high heat and cook the crab cakes in batches, about 2 minutes on each side. Put them back on the baking tray and in the oven for 10 minutes.
  • For the spicy mayo: Using a blender or food processor, beat the egg with the Dijon mustard and red wine vinegar. Slowly add the canola oil until the mixture starts to emulsify and becomes very creamy in texture. Add water if necessary to make a thinner texture. Add the sriracha sauce. Continue to process for 1 minute. Season with salt and pepper.

Diet-conscious Eastern-shore style, showcases the natural sweetness of Blue Claw Crabs with the minimum of filler and extra ingredients. Derived from MIL's newspaper clipping, her favorite crab cake with minimum of spice. This was from Maryland Governor Tawe's cook. For saltine crumbs, may substitute 2 slices of decrusted white bread broken into small pieces, or use 1/4 cup panko crumbs. I dared to vary from my mother-in-law's crab cakes by substituting saltine crackers for the traditional white bread and then serve her a "renegade" cake; this one variation was deemed by her as possibly better. She sneered at the addition of Old Bay seasoning. It is vital to have freshly steamed blue claw crab meat to achieve superior results. If you are not so fortunate as to live between North Carolina and Pennsylvania, and you use Phillip's crab meat from Costco, be aware that you are using Asian blue swimming crab which lacks the sweetness; in that case, I would recommend adding 1/2-1 teaspoon dried horseradish and 1/2-3/4 teaspoon lemon juice to add some pizazz. I find that canola oil "falls off" the crab cakes, and prefer frying my crab cakes. Preparation time includes 1 hour refrigeration prior to cooking.

  • Pick through crab meat twice to remove cartilage or shell. Try not to break up lumps of Backfin. Keep crabmeat chilled during process by putting ice cubes in a large mixing bowl then placing a slightly smaller bowl inside to hold the picked meat. After the first picking, feel for missed cartilage while returning crab meat to the crab meat container. Chill crab meat until ready to mix.
  • Put saltine crackers in a mini-food processor and process to a fine crumb. Alternatively, tear slices of bread into small pieces and put in mixing bowl.
  • Add regular mayonnaise and yellow mustard to mixing bowl. For the Eastern Shore purists, the addition of Old Bay seasoning is controversial, but Baltimore residents won't call it a crab cake without some; one teaspoon adds a subtle taste.
  • Beat egg whites until stiff, then fold into filler mixture.
  • Gently fold in reserved crab meat.
  • Make 4 to 6 cakes, pressed gently together. Chill covered in refrigerator for at least 1 hour to set cakes.
  • Fill frying pan to 1/4-inch with canola oil. Heat canola oil to 360 degrees Fahrenheit. Gently place crab cakes in oil and fry for 2-3 minutes until golden brown. Use spatula (and fork, if necessary) to carefully turn crab cakes. Fry for another 2-3 minutes.
  • Drain oil from crab cakes on paper towels, then serve hot with some saltine crackers on the side.
  • TO BROIL: Since these crab cakes have the minimum amount of filler required to hold them together, you may broil them on a lightly oiled baking sheet (1 tablespoon oil) 4-6 inches away from the heat source until golden brown. If you use low-calorie mayonnaise, this would be the preferred way to cook the cakes.
  • TO MICROWAVE: Only use 1/2 tablespoon of oil to brush on a large flat plate. Microwave plate for 2 minutes on HIGH to heat oil. Place cakes on plate and microwave for 7 minutes on HIGH.

  • Begin by removing all the legs and claws. Do this by holding the body in one hand and twist the class of the off with your other hand. Sometimes crab meat comes out of the legs and swimmer fin; you can eat that right up.
  • Throw out the legs (fins) and save only the claws. An explanation of how to eat the claws comes later.
  • Start on what you have left, the shell and the body of the crab. Flip the crab’s body on its back to open the apron. The apron looks like a tab or a flap.
  • Grab the top part and bottom part in each hand. Apply pressure gently to separate the shells. Be careful when taking the top shell off. Throw out the top shell.
  • Crack the claws! Sometimes people tend to forget about the claws because they think there is not anything in them. However, there is very juicy and sweet meat in these legs that you can use for soups or crab cakes.
