CHEF JOHN'S CIOPPINO
When you feel like splurging a little, San Francisco's famous Cioppino is a great choice.This spicy fish and shellfish stew is a big red bowl of yummy, and when paired with a loaf of crusty sourdough bread, it's downright otherworldly.

Steps:
- Combine butter and olive oil in a large Dutch oven over medium-low heat.
- Stir in onion and celery with a pinch of salt; cook until onion is soft and golden, 6 to 7 minutes. Stir in garlic and cook for 1 minute.
- Stir wine into onion mixture; increase heat to high and bring to a simmer.
- Stir in tomato puree, water, bay leaf, oregano, red pepper flakes, and Worcestershire sauce. Reduce heat to low and simmer 35 minutes.
- Increase heat to high and bring mixture to a boil. Stir in lemon and cod, return to simmer, about 2 minutes.
- Stir in crab, shrimp, and mussels. Cover and simmer until all mussels are cooked and open, about 5 minutes.
- Stir in fresh parsley and basil; season with salt and pepper to taste.

GARLIC AND CRAB NOODLES
Steps:
- Bring a large of salted water to a boil over high heat. Put a large skillet or wok over high heat and add the oil, garlic and ginger and cook, stirring constantly, until fragrant, about 30 seconds.
- Meanwhile, add the linguine to the boiling water. Add the crab to the hot wok and toss to coat in the garlic and ginger. Once the crab starts to turn color, add the soy sauce, sambal, black bean sauce and a ladle of pasta cooking water. Bring to a simmer and cook until it reduces and thickens slightly, 5 to 7 minutes.
- Drain the linguine, reserving about 1 cup of the cooking water, and add the pasta to the crab along with the parsley, honey and butter and toss to combine. Cook until thickened again, about 2 minutes. If the mixture seems dry, add more pasta water until it's saucy. Serve hot.
CREOLE CRAB NOODLES
Crab, and its old friends, the Holy Trinity, are a classic combo, and so it was no surprise they worked so well in an Asian-style rice noodle dish - an experiment gone right. Garnish with sliced green onion.

- Whisk garlic, ketchup, rice vinegar, soy sauce, fish sauce, hot sauce, paprika, cayenne pepper, and cumin together in a bowl.
- Place rice noodles in a large bowl; cover with boiling water and stir with tongs. Let soak for 10 minutes.
- While noodles soak, heat vegetable oil in a pan over medium-high heat. Cook and stir celery, jalapenos, and green onions until tender and fragrant, about 10 minutes.
- Drain noodles and place in the pan; add the sauce and crabmeat. Cook and stir until noodles are coated evenly and everything is heated through, 2 to 3 minutes.

CRAB MEAT AND MUSSELS CIOPPINO WITH GLASS NOODLES

Steps:
- Put the noodles in a bowl and pour boiling water over to cover. Leave the noodles for 10 minutes, drain them well, then toss with just enough soy sauce to color them lightly and evenly and set aside.
- Put one tablespoon of the olive oil in a large saucepan and heat. Quickly saute the onion, garlic and the oregano. Add the white wine, bring to a boil and add the mussels. Cover and steam until the mussels open, about four minutes. Remove the opened mussels, leaving the sauce in the pan. Remove the mussels from the shells and discard the shells. Add the tomato to the reserved sauce and bring to a boil. Add salt and pepper to taste, turn off the heat and set aside.
- In another saucepan or small skillet, add two tablespoons of olive oil. Heat and add the scallion and pine nuts. Stir briefly and add the crab meat and mussels. Saute briefly. Stir in salt and cayenne to taste and turn off the heat.
- Make nests of noodles in the center of four small plates. Divide the seafood into the center of the nests. Spoon the cioppino sauce outside of the nests and serve.
GLASS NOODLES WITH CRAB

This came out of a need to use some extra imitation crab that I had. I think it would be equally good with shrimp or real crab meat.

- In LARGE non-stick pan, cook veggies on medium heat covered for about 3 minutes.
- Mix 1 packet of seasoning with water.
- Add water, ramen and crab to veggies and stir continuously until noodles are soft and most of water is absorbed.

LINGUINE PUTTANESCA WITH SMOKED MUSSELS AND CRAB
Puttanesca ("harlot sauce", roughly translated) is one of my favorite Italian pasta dishes. This is a modified version of Rachel Ray's Puttanesca in which I use smoked mussels (the kind in a tin) and and fish sauce as an alternative to anchovies. I also toss in IMITATION crab meat.

Steps:
- Heat olive oil on medium heat.
- Add smoked mussels, with liquid, and cook for about 5-7 minutes smashing up the mussels.
- Lower heat to medium-low and add fish sauce, garlic, red pepper flakes, black pepper, and dried parsley, cooking for about 2-3 minutes.
- Add crushed tomatoes, chicken broth, black olives, and green olives, cooking for about 15 minutes.
- Add imitation crab meat and cook another 5 minutes.
- Cook and drain linguine noodles, then toss with the puttanesca sauce.
- Set out grated romano or parmesan for topping.
- Serve with garlic bread.
