These cookies are soft and delicious! I found this recipe in a cookbook titled "Treasured Recipes - The Ladies of Sacred Heart" (Houston, Texas). The original recipe said it makes 6 dozen, but I think it only makes 2-3 dozen.

Ingredients

1 cup butter, softened
1 cup sugar
2 eggs
3 cups all-purpose flour
1 teaspoon baking soda
1 (12 ounce) can frozen lemonade concentrate, thawed,divided
sugar crystals

Steps:

Preheat oven to 400 degrees F.
In a large mixing bowl, cream together butter and sugar.
Beat in eggs.
Combine flour and baking soda and add to creamed mixture.
Mix well.
Add 3/4 cup lemonade concentrate.
Mix well.
Drop by rounded teaspoonfuls into an ungreased cookie sheet.
Bake for about 8 minutes, or until lightly brown around the edges.
Do not over bake.
Remove cookies from cookie sheet to cool on a wire rack.
Brush each cookie with remaining lemonade concentrate and sprinkle with sugar crystals.

1 cup butter
3/4 cup sugar
3/4 cup powdered country time lemonade mix
1 egg
1 teaspoon vanilla
1/2 teaspoon lemon extract
1 lemon, juice of
lemon zest
2 3/4 cups flour
2 tablespoons flour
1 teaspoon baking soda

Steps:

Preheat oven to 350 degrees.
Cream butter, sugar and lemonade mix.
Add egg, vanilla, lemon extract, lemon zest and lemon juice and mix well.
Add flour and baking soda and mix.
Roll dough into teaspoons size balls place on cookie sheet.
Bake for 10 to 12 minutes.
You may roll dough balls in sugar before baking or when cooled if desired.
They are also good with a glaze of powdered sugar and milk.
Great either way.

COUNTRY TIME Lemonade Flavor Drink Mix
2 qt. (8 cups) cold water
1 lemon, cut into 8 slices

Steps:

Measure drink mix into cap to 2-qt. line.
Add water to drink mix in 2-qt. plastic or glass pitcher; stir until mix is dissolved. Pour 2-1/2 cups drink into ice cube trays. Freeze 3 hours or until firm. Refrigerate remaining drink.
Place frozen lemonade cubes in tall glasses; fill with prepared drink. Top each with lemon slice.
