COUNTRY CHICKEN AND BISCUITS

Steps:
- Preheat oven to 425 degrees F. Spray a 2 ½ - 3-quart casserole dish with cooking spray and set aside.
- In a separate bowl, whisk together chicken broth and half-and-half. Set aside.
- Melt butter in a large skillet over medium-high heat. Add onion, carrot and celery; sauté for 10 minutes. Add flour and continue cooking and stirring for 1 more minute. Reduce heat to medium and gradually stir in the chicken broth mixture.
- Continue cooking over medium heat, stirring regularly, until thick and bubbly (about 5-6 minutes). Make sure that the mixture doesn't boil. Stir in the salt and pepper. Add chicken and frozen peas.
- Transfer the mixture to the prepared baking dish. Cover with foil and bake for about 10 minutes while you prepare the biscuit dough.
- Use a fork to stir together the Bisquick mix, buttermilk, cheese and parsley until a soft dough forms.
- Remove the chicken mixture from the oven, take off the cover, and give the filling a stir. Use a large scoop to drop about ¼-cup of the biscuit dough at a time onto the hot chicken mixture. You should have about 8 biscuits on top of the dish.
- Return dish to the oven and bake, uncovered, for about 12 minutes, or until golden brown and a toothpick inserted in a biscuit comes out clean.
- Stir together melted butter and garlic powder; brush over warm biscuits and serve.

We've made this dish time and time again. The biscuits just about double in size when baked, and the French Fried Onions give them a wonderful flavor. For the mixed veggies I use the one that has corn, green beans, carrots, and peas... and it makes the dish very colorful as well as tasty!

- Pre-heat oven to 400 degrees.
- In greased 12x8 baking dish, layer the bacon, chicken, vegetables, tomatoes, and then 1 cup of cheese.
- Blend the soup and 3/4 cup milk with 1/2 of the French fried onions. Pour over the casserole, cover with foil and bake for 15 minutes.
- While the casserole is baking, combine the biscuit mix, 2/3 cup milk, and the remaining french fried onions - mix thoroughly.
- Drop the biscuit dough on top of the casserole by the spoonfuls to form 6 biscuits around the edge. Sprinkle with remaining cheese.
- Return to the oven and bake uncovered for 15 - 20 minutes, or until biscuits are golden brown.
CHICKEN, BROCCOLI AND CHEESE CASSEROLE
This casserole is super satisfying and creamy and uses a great trick to cut out extra butter and oil: Instead of making the traditional roux with butter, the cream sauce is thickened with a little flour.

- Preheat the oven to 400 degrees F. Put the flour and broth into a large saucepan and whisk until the flour is dissolved. Place the saucepan over medium heat and whisk continuously until the mixture comes to a boil; continue to whisk until the mixture is thick enough to coat the back of a spoon, 10 to 12 minutes. Remove the saucepan from the heat and whisk in 1 1/2 teaspoons salt and 1/2 teaspoon pepper. Add the Cheddar and whisk until melted. Add the broccoli florets and stir to coat.
- Spray a 3-quart flameproof casserole dish with cooking spray. Toss the brown rice and chicken in a large bowl. Pour the broccoli-cheese sauce on top and mix well. Spread the mixture in the casserole dish and top with the Parmesan. Cover with foil and bake until bubbling and hot, about 25 minutes. Remove the foil and broil until the top is nicely browned, 2 to 5 minutes Serve hot.
- Make-Ahead Tip: Freeze the baked casserole for up to 2 weeks. Cover in foil and reheat at 350 degrees F until hot, 35 to 45 minutes.
COUNTRY CHICKEN BISCUIT CASSEROLE
This is definetely a favorite in my home! It's a great fall food! Very quick and easy. The smell of the french fried onions and melted cheddar cheese baking into the biscuit topping make it hard to wait for this dish to cool down!

- Spray an 8x12 baking dish with butter flavored cooking spray and set aside. In a large mixing bowl combine the first 4 ingredients and 1 cup of cheese. Add to baking dish. Blend soup and 1 cup of milk; pour over meat mixture. Bake uncovered at 400* for 20 minutes.
- Meanwhile, combine biscuit mix, milk and 1/2 can french fried onions; mix thoroughly. Drop by spoonfuls to form small biscuits over top of casserole. Bake uncovered, 15 to 20 minutes or until biscuits are golden brown. Top with remainder of the cheese and onions. Bake an additional 2 to 4 minutes until cheese melts.

This casserole is basically a cross between chicken & dumpling and a pot pie. Found the basic recipe on facebook and just change the spices to my liking. If in a hurry for dinner, just stop at the salad bar for the shredded chicken and use some rinsed can vegetables.

Steps:
- 1. Thaw Frozen Vegetables for 30 minutes before starting recipe.
- 2. Preheat oven to 350 degrees
- 3. Warm chicken stock in a small sauce pan and add chicken bouillon cubes to dissolve. Keep Warm until ready to use.
- 4. Lightly coat with nonstick spray to a 9 x 13 dish. Melt butter and pour into the baking dish.
- 5. Layer the shredded chicken on top of the butter.
- 6. Sprinkle on thaw vegetables.
- 7. In a small bowl, combine Bisquick and milk. It is ok if the mixture has a few lumps. Pour over chicken and vegetables. Do not mix.
- 8. Sprinkle on a little black and white pepper.
- 9. Combine the cream of chicken soup with the warm stock. Once well blended, slowly pour over the Bisquick layer. Do not mix.
- 10. Bake in oven for 40 to 45 minutes until casserole is set and top is brown and bubbly.
- 11. Remove from oven and allow to rest for 5 minutes before serving

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
- In a skillet, melt the butter over medium-high heat. Cook and stir the garlic, onion, celery, and carrots in butter until tender. Mix in the flour, sugar, salt, 1 teaspoon dried basil, and pepper. Stir in broth, and bring to a boil. Stirring constantly, boil 1 minute, reduce heat, and stir in peas. Simmer 5 minutes, then mix in chicken. Transfer mixture to the prepared baking dish.
- In a medium bowl, combine the baking mix and 2 teaspoons dried basil. Stir in milk to form a dough. Divide the dough into 6 to 8 balls. On floured wax paper, use the palm of your hand to flatten each ball of dough into a circular shape; place on top of chicken mixture.
- Bake in the preheated oven for 30 minutes. Cover with foil, and bake for 10 more minutes. To serve, spoon chicken mixture over biscuits.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a large baking dish.
- Combine chicken, carrot, celery, and bouillon in a large pot and add enough water to cover. Bring to a boil, cover, and cook until chicken is no longer pink in the centers, 10 to 15 minutes. Drain, reserving chicken and broth in another pot or bowl.
