SICHUAN STIR-FRIED POTATOES

Sichuan Stir-Fried Potatoes image

Sichuan stir-fried potatoes -- a much-loved recipe in China that may not be as well known in the US but you'll be surprised how easy to make and good it is!

Provided by Judy

Categories     Vegetables

Time 1h

Number Of Ingredients 14

2 large red skinned potatoes
2 tablespoons oil
1 tablespoon Sichuan peppercorns
2 thin slices of ginger ((minced))
2 cloves garlic ((minced))
3-6 dried red chilies ((de-seeded and chopped))
1 long red or green hot pepper ((de-seeded and julienned))
1 teaspoon light soy sauce
½ teaspoon sugar
1 teaspoon white vinegar
1/2 teaspoon sesame oil
1 tablespoon chicken stock ((or water))
Salt to taste
1 scallion ((chopped))

Steps:

  • Peel and julienne the potatoes. Soak them in fresh, cold water a couple times (until you can soak them and the water is somewhat clear). Drain and set aside, but don't let them sit longer than 20 minutes, as they'll turn brown.
  • Heat oil in a wok over medium heat, and add the Sichuan peppercorns (make sure they don't burn). When the peppercorns are fragrant, turn off the heat and scoop all the peppercorns out, leaving the oil in the wok. Discard the used peppercorns.
  • Over medium heat, add the ginger, garlic and chilies to the oil. Cook for a minute, and add the potatoes and julienned peppers. Turn the heat up to high and stir-fry for 30 seconds. Add the soy sauce, sugar, vinegar, sesame oil, chicken stock (or water), and salt. Stir-fry everything for a minute and cover for 45 seconds. Uncover, stir in the scallions, and serve!

Chinese potato stir-fry (酸辣土豆丝) image

Crunchy, thin strips flavoured with tangy spices, Chinese potato stir-fry shows you an exciting way to prepare potatoes.

Provided by Wei Guo

Categories     Side Dish

Time 13m

Number Of Ingredients 8

1 tbsp cooking oil
450 g potato (about 2 medium-sized potatoes )
3 dried chilli (deseeded)
1/2 tsp Sichuan peppercorns
2 fresh chilli (sliced)
3 cloves garlic (sliced)
1 tsp black rice vinegar
1/4 tsp salt (or to taste)

Steps:

  • Peel the potato then cut it into julienne strips. You may use a food processor or a julienne peeler to achieve similar results (regular grater is not recommended).
  • Rinse the potato strips under tap water to remove excess starch. Drain them very well.
  • Heat up a wok on a high heat. Pour in the oil, then add dried chilli and Sichuan peppercorn. Leave to sizzle until fragrant (do not burn them).
  • Put fresh chilli, garlic and potato strips into the wok. Stir fry constantly until the potato is cooked (should be still a bit crunchy).
  • Add black rice vinegar and salt . Give everything a quick stir then dish out.
  • Serve it warm with rice, along with other meat/vegetable savoury dishes.

HOT AND NUMBING STIR-FRIED NEW POTATOES

Hot and Numbing Stir-Fried New Potatoes image

These stir-fried potatoes are inspired by a modern street snack served in Xi'an, China. They can be parboiled in advance, require only a few minutes of stir-frying in a wok before serving, and can be flavored with a wide range of spices and aromatics, making them an ideal side dish for any menu, simple or complex. In addition to the Xi'an-style original with hot and numbing spices, you can also make a curry-spiced version with crunchy, fried cumin and mustard seeds, or a rosemary and garlic version that would be at home on a traditional Thanksgiving table (see Tips).

Time 40m

Yield 4 to 6 servings

Number Of Ingredients 15

2 pounds small yellow new potatoes, scrubbed and rinsed
Kosher salt
2 teaspoons red Sichuan peppercorns
1 star anise pod
1 teaspoon fennel seeds
1 teaspoon white peppercorns or 1/2 teaspoon ground white pepper
2 teaspoons cumin seeds
2 whole dried hot chiles (such as chile de arból or Japonais) or 1 tablespoon red-pepper flakes
1 teaspoon kosher salt, plus more to taste
1 teaspoon granulated sugar
1 teaspoon powdered chicken bouillon (or replace with 1/2 teaspoon salt and 1/4 teaspoon MSG to make the dish vegan)
2 tablespoons toasted sesame seeds
1/4 cup peanut, rice bran or soybean oil
4 medium garlic cloves, minced
2 scallions, chopped into 1/2-inch pieces

Steps:

  • Place potatoes in a large pot and cover with cool water by 2 inches. Season heavily with salt. (The water should taste like very salty seawater once the salt has dissolved.) Place over high heat, bring to a boil and cook until there's no resistance when a knife or cake tester is poked through the largest potato, about 10 minutes after they come to a boil. Drain potatoes and spread in a single layer on a rimmed baking sheet to air-dry.
  • While the potatoes cook, make the spice blend: In a small bowl, shake the Sichuan peppercorns and discard any shiny black seeds, twigs or leaf fragments. Add the husks to a dry wok, along with the star anise, fennel seeds, white peppercorns and half the cumin seeds. Toast over medium heat, tossing frequently, until very aromatic, about 2 minutes. Transfer mixture to a small bowl to cool slightly. Return wok to heat and add remaining cumin seeds and the chiles. Toss and stir until very aromatic, about 30 seconds. Transfer to a second small bowl.
  • When cool, transfer the spice mixture in the first bowl, along with the 2 chiles from the second bowl to an electric spice grinder or a mortar and pestle. Add salt, sugar and chicken bouillon. Grind to a fine powder and return to the empty bowl.
  • Add the cumin seeds that toasted with the chiles to the spice grinder or the mortar (no need to clean it out) and pound or pulse until very coarsely ground. (There should be large, distinct pieces of cumin seeds.) Add half-ground cumin and the sesame seeds to the rest of the spice mixture and stir to incorporate.
  • Stir-fry the potatoes: When potatoes are dry, heat 3 tablespoons oil in the wok over high heat until shimmering. Add potatoes and cook, stirring and tossing frequently, until browned in spots, about 4 minutes.
  • Clear a small space in the center of the wok and add remaining 1 tablespoon oil to it. Immediately add the garlic, scallions and spice mixture to the oil and stir until aromatic, about 15 seconds. Toss everything until the potatoes are thoroughly coated in spices, about 15 seconds. Season to taste with more salt as desired. Transfer to a serving bowl and serve.

TU DOU SI (CHINESE STYLE POTATOES)

Tu Dou Si (Chinese Style Potatoes) image

This is a potato dish I learned to make while living in Beijing. Initially I couldn't figure out what I was eating and was so surprised to learn it was potato. It's a delight to be able to recreate this in my own kitchen now. Buttery tasting (yet almost completely fat free) potato sticks are soaked in vinegar to soften then briefly tossed on high heat with chilis (or green peppers) and garlic for a deliciously tender finish that brings a unique twist to this familiar root vegetable. Make as much or as little as you - adjust amounts to be appropriate for your pan size and family size. About a 3:1 ratio on potatoes:peppers. Garlic and salt to taste. The soaking solution will also be proportionate, but again about 1 cup water to 1/4 cup vinegar, or 4:1 ratio water:vinegar. *Note: Use a pepper that you like the taste of - I like the long curly green ones sold at asian markets. If you want it spicier, use a spicier pepper. If you don't like spicy, use green bell pepper.

Time 25m

Yield 4 serving(s)

Number Of Ingredients 9

2 tablespoons oil
5 medium potatoes, peeled and sliced into matchsticks
2 hot peppers, julienned or 1 small green pepper
3 -4 garlic cloves, peeled and sliced thinly
4 -5 cups water
1/2-1 cup rice vinegar
1 tablespoon rice vinegar
1 teaspoon salt
salt

Steps:

  • Prepare potatoes then put in a bowl to soak. Fill bowl 3/4 way full until you can see the water coming up and fill the remainder with vinegar. Soak for at least 20 minutes. Turn the potatoes once or twice so that liquid gets on all of them.
  • Drain potatoes. Heat oil on highest heat possible on your stove. Once it's VERY hot (either oil smokes a bit or sizzles when a drop of water touches it), then drop in potatoes.
  • Immediately start to toss potatoes and get them coated. Toss in peppers and garlic. Sprinkle with extra tablespoon of vinegar and salt and keep tossing a few seconds. Take a piece and taste it - adjust salt or splash in a tad bit more vinegar, but I don't recommend too much more of either of these.
  • Toss on high heat no longer than 2-3 minutes. If the potatoes start to feel soft or start to glue together - take off heat immediately, they are overcooking.
  • Result should be a tender potato dish with a delicious buttery texture and faintly spicy kick to it. The potatoes will be tender yet not soft and mushy, a result of soaking them in vinegar. If they are crispy or crunchy at all, they either were not cut thinly enough or were not soaked long enough or with enough vinegar.

  • In a small bowl, whisk the soy sauce, water, dry sherry, sesame oil, sugar, cornstarch, red pepper flakes and dry mustard together. Set aside.
  • In a large nonstick skillet, bring 1 inch of water to a rapid boil. Add the broccoli and cook for 2-3 minutes, or until tender-crisp. Strain the broccoli in a colander and then run under cold water to stop the cooking process. Set aside and allow to fully drain.
  • Wipe the skillet dry. Add 2 tablespoons of vegetable oil and heat over high heat. Add the shiitake mushrooms and red peppers and cook, stirring occasionally, for 5-6 minutes, until the mushrooms are browned and the peppers are softened. Add the garlic, white/light green scallions, and ginger; cook, stirring constantly, until fragrant, about 30 seconds. Return the broccoli to the pan and cook until warmed through, about 1 minute. Add the reserved sauce. Toss and cook until the sauce is thickened and the vegetables are evenly coated, about 30 seconds. Transfer to serving dish and sprinkle with dark green scallions. Serve with rice, if desired.

  • Fill a bowl with cold water. You’ll be soaking the slivered potatoes in the water later. This prevents the potatoes from oxidizing after they’re cut and it washes away some of the excess starch.
  • Cut the potato in half, crosswise. Lay the potato halves flat side down on your chopping board. Slice each half into thin planks, slightly less than 1/8-inch thick. Stack a few of the planks and slice into thin slivers. Continue until you have finished slicing all the potatoes. Transfer the slivered potatoes to the bowl with cold water.
