CORNED BEEF FRIES
This St. Paddy's day, make a variation on Canadian Poutine by dousing fries in corned beef, cheese and Guinness gravy.

Steps:
- In a large sauté pan over medium heat, cook bacon until crisp, about 5 minutes. Remove bacon from the pan with a slotted spoon and drain on a towel-lined plate. Return the pan with bacon grease to medium heat and add onions and carrots. Cook, stirring occasionally, until vegetables are soft and caramelized, about 20 minutes.
- Add butter to pan, heating until melted, then stir in flour. Add the beer, chicken broth, mustard, Worcestershire sauce, sugar and cabbage to the pan and bring to a simmer. Continue to cook until cabbage is tender and gravy has thickened, about 10 minutes. Stir in the corned beef, salt and pepper. Keep warm.
- Mound the french fries in a bowl or on a platter. Top with cheese curds, then spoon corned beef and gravy over. Garnish with crisp bacon and chopped parsley to serve.

CORNED BEEF HOMMIE HOME FRIES
Steps:
- In a medium pot, boil water and add 1 teaspoon salt, add potatoes and cook until almost fork tender. When cooked, strain potatoes, and pat dry with paper towels.
- Meanwhile in a large saute pan, add 2 tablespoons olive oil, and 1 tablespoon butter, add red onions, peppers and corned beef. Saute until onions are translucent, then add garlic, season with salt, pepper, and paprika. Cook for 2 minutes, remove from pan and hold hot.
- In the same pan, add 3 tablespoons olive oil, and the potatoes. Cook until crispy on all sides. When cooked and crispy, add the pepper, onion and corned beef mixture. Combine thoroughly, being careful to not break the potatoes.
- Pour mixture into a serving bowl, top with Cheddar, avocado slices, sour cream and green onions.
CORNED BEEF HOMIE HOME FRIES

- Bring a large pot of water to a boil and add 1 teaspoon salt. Add the potatoes and cook until almost fork-tender, about 5 minutes. Drain the potatoes and pat dry with paper towels.
- Meanwhile, heat 2 tablespoons olive oil and the butter in a large saute pan over medium heat. Add the onion, chile pepper, bell pepper and corned beef and saute until the onion is translucent, about 5 minutes. Add the garlic and paprika and season with salt and pepper. Cook 2 minutes, then remove the mixture from the pan and keep hot.
- Add the remaining 3 tablespoons olive oil and the potatoes to the same pan. Cook, turning occasionally, until crispy on all sides, about 12 minutes. Add the corned beef mixture and combine thoroughly, being careful to not break the potatoes.
- Serve the home fries topped with cheese, avocado, sour cream and scallions.

Steps:
- Boil the rice in a pot using three cups of water until the rice is ready.
- Add the garlic to a large skillet, cooking on medium heat.
- Add the corned beef and cabbage when the garlic is turning a slight brown color (don't let the garlic cook too long or it will be bitter).
- Use a separate skillet to cook the egg.
- When the corned beef and cabbage start to heat, and the garlic turns golden brown, stir in the cooked egg, then the steamed rice.
- Season with pepper and serve.

CORNED BEEF FRIED RICE
This is a special recipe from my papa! It's kind of an "east meets west" recipe, combining the eastern tastes of fried rice with western favourites like corned beef and bacon. Yum!

Steps:
- 1. Cook the rice in the water in a rice cooker or on a stove until it is fluffy. Let the rice cool.
- 2. Fry the corned beef in oil until it is no longer mushy. Remove from pan.
- 3. Fry the bacon until it is crisp. Remove from pan and drain on paper towels. Cut into small pieces.
- 4. Beat the eggs and in a separate pan, fry the scrambled eggs. Remove from pan.
- 5. Stir fry the shrimp until cooked through. Remove from pan.
- 6. In a large wok, fry the chopped garlic until it is light brown and there is an aroma.
- 7. Add the cooked rice into the wok.
- 8. Add the light and dark soya sauce and stir thoroughly.
- 9. Add in the corned beef, bacon, eggs and shrimp, bean sprouts, chilli sauce and chillis. Mix thoroughly to ensure a consistent colour through the fried rice.
- 10. Serve hot.

CORNED BEEF HASH WITH FRIED OR POACHED EGG
Comfort food to the max - and it can all be done with pantry staples (provided you always have a can of corned beef on hand ;-) ). This is fast and delicious. I don't specify vegetables in cup amounts as I figure each person likes their own version with 'more of this and less of that'. This is how I do it - you can adapt the recipe to your own taste. :-)

- Heat the butter and olive oil (or just one kind of fat) over medium-high heat in a large cast-iron or heavy-bottomed skillet.
- Add potatoes and allow to get golden and crusty on one side (about 2-3 minutes). Gently turn over with a spatula and do this a couple more times to get a golden crust all over.
- Add onion and garlic and saute with potatoes for 4-5 minutes; then add peppers, sauteeing a couple of minutes more.
- Finally, add corned beef and cook for 8-10 minutes, always flipping hash over every couple of minutes to ensure a crust develops on all sides. This should take about 20 minutes in all. Adjust seasoning - it won't need too much salt because of the corned beef, but LOTS of freshly ground black pepper is a GOOD thing.
- You can prepare the eggs in another pan during these steps.
- Distribute hash mixture amongst 4 plates and top each serving with a fried or poached egg.
- Season with Hot Sauce at table, to taste.
- Enjoy!
