3 cups shredded zucchini
1 teaspoon salt, divided
2 packages (8-1/2 ounces each) cornbread/muffin mix
3 large eggs, lightly beaten
1/4 teaspoon pepper
TOPPINGS:
1 jar (14 ounces) pizza sauce
3/4 cup chopped sweet red or green pepper
1 can (2-1/4 ounces) sliced ripe olives, drained
4 green onions, chopped
1/3 cup coarsely chopped fresh basil
1 tablespoon minced fresh oregano or 1 teaspoon dried oregano
3 cups shredded part-skim mozzarella cheese

Steps:

  • Preheat oven to 450°. Place zucchini in a colander over a bowl; sprinkle with 3/4 teaspoon salt and toss. Let stand 15 minutes. , Press zucchini and blot dry with paper towels; transfer to a large bowl. Add cornbread mixes, eggs, pepper and remaining salt; stir until blended. Spread evenly into a greased 15x10x1-in. baking pan. Bake until lightly browned, 8-10 minutes. Reduce oven setting to 350°., Spread pizza sauce over crust. Top with red pepper, olives and green onions. Sprinkle with herbs and cheese. Bake until cheese is melted, 12-15 minutes.

Steps:

  • Heat oven to 400ºF.
  • Prepare corn muffin batter as directed on package; spread onto bottom of 12-inch pizza pan sprayed with cooking spray.
  • Bake 8 to 10 min. or until lightly browned. Meanwhile, cook meat with seasoning mix as directed on package.
  • Sprinkle 1 cup cheese over crust; top with meat mixture and remaining cheese.

The dough can be made the night before and then formed into rounds just before the party. Set out a variety of toppings in bowls, and let guests assemble their own pizzas before baking them. We particularly like roasted tomatoes with fresh mozzarella cheese, and thinly sliced baby artichokes and eggplant with grated Asiago cheese. Pureed butternut squash, caramelized red onions, grated fontina cheese, and toasted pumpkin seeds make for an unexpected but perfectly delicious autumnal pie.

2 teaspoons active dry yeast
Pinch of sugar
2/3 cups warm water
1 2/3 cups all-purpose flour, plus more for work surface
1/4 cup cornmeal, plus more for pizza peel or baking sheet
1 1/2 teaspoons coarse salt
2 tablespoons extra-virgin olive oil, plus more for bowl
Roasted Tomatoes, optional topping

Steps:

  • In a small bowl, sprinkle the yeast and sugar over the warm water. Let stand until yeast is dissolved and mixture is foamy, about 10 minutes.
  • Combine flour, cornmeal, and salt in a large bowl. Make a well in the center, and add the yeast mixture and oil. Slowly stir ingredients with a wooden spoon just until dough starts to come together. Turn out dough on a lightly floured work surface, and knead until smooth and elastic, 7 to 10 minutes.
  • Divide dough into four 4-ounce balls. Place balls in a shallow oiled bowl, turning to coat with oil; cover with plastic wrap, and let rise 1 hour at room temperature or overnight in the refrigerator.
  • Preheat oven to 500 degrees with a pizza stone on lowest rack. Stretch dough into 6- or 7-inch rounds. Sprinkle cornmeal on a pizza peel or inverted baking sheet. Place dough rounds on top, and cover with toppings, as desired.
  • Slide rounds onto pizza stone, and bake until crust is crisp and golden and toppings are bubbling, 5 to 7 minutes. Remove from oven; serve immediately.

1/2 cup cashews (OR blanched almonds)
2 Tbsp coconut oil (optional)
3 1/2 cups water
1/2 cup soy supreme ((turns the water into soy milk.) Can use soy milk OR coconut milk instead of water, and omit soy supreme.)
1/3 cup cooked brown rice (OR other cooked cereal)
1 cup corn flour (finely ground)
2/3 cup sorghum flour (OR other gluten free flour, OR even whole wheat pastry flour, if you aren't gluten free.)
1/3 cup soy flour (OR more sorghum OR other pastry flour, if you can't have soy.)
3 Tbsp flax seed (~Grind them before blending.)
2 tsp Country Style Seasoning (~see recipe in Miscellaneous section.)
1 Tbsp onion powder

Steps:

  • PREHEAT oven to 375F.
  • BLEND the nuts, rice, and some of the water until very smooth.
  • ADD remaining ingredients and blend well.
  • POUR into an oiled, sided cookie sheet (jelly pan).
  • BAKE at 375F for 20 minutes.
  • POKE holes gently with a wet fork to release/prevent bubbles. (You may need to rinse the fork a couple times to keep it from getting sticky and tearing up the bread.)
  • CONTINUE baking for another 25 minutes, OR until golden.
  • COOL for 10 minutes in the pan.
  • GENTLY remove from pan onto cooling rack and allow to COOL thoroughly before storing.
  • CHILL. Works better for pizza, if made the day before, so it can harden.
  • SERVE warm. Tastes wonderful as a pizza crust OR as bread served with soup!

cooking spray

Steps:

  • Mix corn muffin mix as directed on package.

  • Brown meat and drain.
  • Add seasoning package, water, and chilies.
  • Simmer until water is absorbed.

1 box instant cornbread mix
1/3 cup milk
4 tablespoons unsalted butter, melted and cooled
1 large egg
1 tablespoon vegetable oil
1 cup whole-milk ricotta
1/4 cup grated Asiago cheese
2 tablespoons grated Pecorino Romano cheese
2 tablespoons grated Parmesan
1 pound Italian sausage, in bulk or removed from the casing
2 cups Swiss chard leaves, chopped
Salt and freshly ground black pepper
Pickled sweet red cherry peppers, such as Peppadews, thinly sliced, for topping

Steps:

  • Preheat the oven to 400 degrees F.
  • Mix the cornbread mix, milk, butter and egg in a bowl until smooth. Coat a large, cast-iron skillet with the oil. Add the cornbread mixture to the skillet and, using your fingers, press it until it covers the entire surface area of the skillet. Bake until golden around the edges, 15 to 20 minutes. Let cool.
  • Mix together the ricotta, Asiago, Pecorino Romano and Parm in a small bowl.
  • In a separate skillet, brown the sausage over medium-high heat, crumbling the sausage with a spoon and cooking until golden brown and no longer pink. Drain on a paper towel, but reserve the fat in the skillet. Lower the heat to medium and add the greens. Season with salt and pepper and saute until wilted and cooked through, about 5 minutes. Let cool.
  • Preheat the broiler.
  • Smear a good layer of the cheese mixture on top of the crust. Top with the crumbled sausage and sauteed chard. Place under the broiler until bubbling and melted, 3 to 5 minutes. Top with the sliced peppers and serve!

1 small head cauliflower, cut into small florets
2 cups chopped portobello mushrooms
1 tablespoon chili powder

1/4 teaspoon ground cinnamon
1/4 teaspoon ground coriander
1/4 teaspoon ground cumin
Large pinch crushed red pepper flakes
One 15-ounce can black beans
One 10-ounce can fire-roasted diced tomatoes and green chilies
One 10-ounce can fire-roasted diced tomatoes and green chilies
2 tablespoons BBQ sauce
Splash of hot sauce
Vegetable broth or water, as needed
1 tablespoon canola oil
1 cup stone-ground yellow cornmeal
3/4 cup all-purpose flour
2 teaspoons sugar
1 1/4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
2 large eggs, lightly beaten
3/4 cup buttermilk
6 tablespoons unsalted butter, melted and cooled

Steps:

  • For the chili: Preheat the oven to 500 degrees F.
  • Toss together the garlic, poblano, cauliflower, mushrooms, salt, chili powder, olive oil, cinnamon, coriander, cumin and red pepper flakes on a rimmed sheet tray in a single layer. Roast the vegetables until browned and tender, 10 to 12 minutes.
  • Carefully transfer the vegetables to a large pot and stir in the beans, tomatoes, BBQ sauce and hot sauce. Bring the mixture to a boil, stirring occasionally, then reduce the heat to medium low and simmer until the desired thickness, about 20 minutes total. Add a bit of broth or water for a looser chili.
  • For the pizza: Reduce the oven to 425 degrees F. Grease a rimmed half-sheet tray with the canola oil.
  • In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, baking soda and salt. Whisk in the eggs, buttermilk and melted butter until combined.
  • Pour the batter onto the prepared sheet tray. Transfer to the oven and bake until the top is light brown, 6 to 8 minutes. Remove the pizza from the oven and top with the chili and Cheddar, leaving a 1/2-inch border around the crust. Bake until the cornbread is done and the cheese is melted, about 10 more minutes.
  • Allow the pizza to cool slightly before slicing and serving. Top with jalapenos, sour cream and cilantro as desired.

2 cups warm water (about 110 degrees)
1/2 teaspoon sugar
2 envelopes active dry yeast (2 scant tablespoons)
3 tablespoons extra-virgin olive oil, plus more for bowl
5 cups all-purpose flour, plus more for dusting
1 cup yellow cornmeal
1 tablespoon salt

Steps:

  • Stir warm water, sugar, and yeast in a small bowl until yeast is dissolved. Let stand until foamy, about 5 minutes. Brush a large bowl with oil, and set aside.
  • Stir together the flour, cornmeal, and salt in a large bowl. Pour in the yeast mixture and the oil; stir mixture until all of the flour-mixture is incorporated. Continue to stir until a stiff dough forms. Turn out dough onto a lightly floured surface, and knead with floured hands, dusting with as little flour as possible if dough seems sticky, just until the ball becomes smooth, 2 to 3 minutes. Reshape the dough into a ball. (Alternatively, pour 5 cups all-purpose flour, cornmeal, the salt, yeast mixture, and oil in the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until dough is smooth and slightly sticky to the touch, 2 to 3 minutes. If dough seems too sticky, add up to 1 cup flour, 2 tablespoons at a time, mixing after each addition. Knead 4 or 5 turns on a clean work surface to form a ball.)
  • Place dough in oiled bowl, smooth side up. Tightly cover with plastic wrap, and let rise in a warm, draft-free spot until doubled in bulk, about 40 minutes.
  • Remove plastic wrap; punch down dough. Fold dough back onto itself 4 or 5 times; leave smooth side up. Cover with plastic wrap; let rise again until doubled in bulk, 30 to 40 minutes.
  • Punch down dough, and transfer to a clean work surface. Cut dough with a bench scraper or knife into sixths. Knead each piece 4 or 5 turns to form a ball. Cover all but one with plastic wrap.
  • On a lightly floured work surface, flatten remaining dough ball into a disk. Loosely cover with plastic wrap; let rest 5 minutes. Using a rolling pin or your fingertips, flatten and push dough evenly out from center to form a 9-inch circle (or a 7-by-11-inch rectangle or rough oval).
  • Line a baking sheet with parchment paper, and sprinkle with flour. Place dough on top. Cover with another sheet of parchment, and sprinkle with flour. Roll out and stack remaining dough balls.

(I used 9 by 13 pan) Place pan in oven and bake at 400 degrees for 12 to 15 minutes or until browned. While the cornbread is cooking brown the beef in a little olive oil. Add onions and spices and cook meat for 5 minutes longer. Remove cornbread from oven and top with meat, cheese and veggies. Add pan back to oven and cook 5 more minutes or till cheese is melted. Cut and serve with salsa.

1 (8.5 ounce) package cornbread mix (such as Jiffy®)
1 egg
⅓ cup milk
1 pound chicken breasts, cut into bite-sized pieces
⅓ cup water
½ (1 ounce) envelope taco seasoning mix
¼ cup barbecue sauce
½ cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a 9x13-inch baking pan with cooking spray.
  • Combine cornbread mix, egg, and milk in a bowl. Stir until moistened. Pour into the prepared pan.
  • Bake in the preheated oven until just set, 6 to 8 minutes.
  • While cornbread is baking, cook and stir chicken in a nonstick skillet over medium-high heat until browned, 4 to 5 minutes. Stir in water and taco seasoning. Simmer for 2 minutes.
  • Remove cornbread from the oven and carefully spread barbecue sauce over the soft surface. Gently lay the chicken over the barbecue sauce. Sprinkle Cheddar cheese over the chicken.
  • Continue baking until melted and browned, about 15 minutes. Let sit for 5 minutes. Cut into individual pieces.

1/2 pound lean ground beef (90% lean)
1 cup refried beans
1/3 cup salsa
2 tablespoons taco seasoning
1 package (6 ounces) Mexican-style cornbread/muffin mix
1/3 cup tortilla chips, crushed
1 cup shredded cheddar cheese
TOPPINGS: Torn romaine, chopped tomatoes, sour cream, chopped onion, chopped cilantro and fried tortilla strips

Steps:

  • Preheat oven to 350°. In a 10-in. cast-iron or other ovenproof skillet, cook beef over medium heat until no longer pink, 6-8 minutes, breaking into crumbles; drain. Transfer to a small bowl. Stir in beans, salsa and taco seasoning; keep warm. Wipe skillet clean., Prepare cornbread mix according to package directions; stir in crushed tortilla chips. Pour into skillet. Bake until set, 12-15 minutes. Spread ground beef mixture over cornbread to within 1-in. of edges; sprinkle with cheese. Bake until cheese is melted and crust is golden brown, 3-5 minutes. I've made this quite a few times, it's a really great pizza crust! We are garlic lovers so I added in 1 tablespoon minced fresh garlic and 1 couple teaspoons dried basil.

Yield 2 (16-inch) pizza doughs

Number Of Ingredients 9

3 teaspoons dry yeast
1 teaspoon sugar
1/2 cup warm water
5 cups flour (more if needed)
2 teaspoons salt
2 tablespoons sugar
1/4 cup vegetable oil
1 cup cornmeal
1 1/2 cups warm water

Steps:

  • Fit the kneaded blade on a heavy-duty mixer.
  • Proof the yeast in 1/2 cup water with 1 teaspoon sugar until foamy (about 8 minutes).
  • In the stainless steel bowl place 5 cups flour, salt, sugar, oil and cornmeal.
  • When the yeast is proofed, add to the bowl along with 1-1/2 cups warm water; start kneading adding in more flour as needed to create a soft smooth dough.
  • After the kneading is finished, let the dough rest in the bowl for 8-10 minutes.
  • Remove the dough from the mixing bowl and shape in a ball.
  • Place into a well greased bowl, cover and let rise in a warm place for about 45 minutes, or until doubled in size.
  • Punch down dough and let rest for 10 minutes before shaping (this is important, the dough must rest for 10 minutes).
  • Roll out the dough into two 16-inch circles.
  • Place into lightly greased pizza pans.
  • Top as desired.
  • Bake in a 400 degree oven until lightly golden brown (about 15-20 minutes).
