"ALMOST FAMOUS" CORN PUDDING

Number Of Ingredients 10

Three 15-ounce cans creamed corn
Three 8-ounce boxes cornbread mix
4 large eggs
6 cups fresh or frozen corn kernels
2 cups sour cream
1/2 cup sliced scallions (green and white parts)
1 1/2 sticks (12 tablespoons) unsalted butter
8 ounces mascarpone
Kosher salt and freshly cracked black pepper
Unsalted butter, for the Dutch oven

Steps:

  • Prepare a grill for indirect heat. If using a charcoal grill, build the hot coals on one side only. If using a gas grill, heat one side only to medium-high heat.
  • Whisk together the creamed corn, cornbread mix, eggs, corn kernels, sour cream and scallions in a large bowl. Melt the butter and mascarpone in a small saucepot over low heat, stirring occasionally. (Be careful not to simmer or the mixture will separate.) Pour the melted butter and mascarpone into the large bowl with the rest of the ingredients. Season with salt and pepper and mix well to combine.
  • Butter a large Dutch oven and pour the mixture in. Place over indirect heat, cover the grill and bake at 325 to 375 degrees F until the mixture is set and golden brown on top, about 1 hour. Take off the grill and serve!
  • (Alternatively, you can bake the corn pudding in a 350 degrees F oven for 1 hour.)

3 tablespoons unsalted butter, melted, plus more for the casserole dish
4 ounces cream cheese, softened
One 15-ounce can creamed corn
3/4 cup frozen corn, thawed
1/2 cup cornmeal
1/2 onion, chopped
2/3 cup milk
1 large egg, beaten
1 tablespoon sugar
1/2 cup shredded Cheddar
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F. Grease a 1-quart casserole dish with butter.
  • Beat the cream cheese, creamed corn, corn, cornmeal and chopped onion in the bowl of a stand mixer with the paddle attachment until combined.
  • Remove the bowl from the mixer and add the milk, 3 tablespoons melted butter, beaten egg, sugar and Cheddar. Season with the salt and pepper and stir with a rubber spatula until combined.
  • Spread the mixture in the casserole dish and bake for 50 minutes. Let stand 10 minutes before serving.

SWEET BOURBON CORN PUDDING

2 large eggs
3/4 cup evaporated milk
2 cups canned cream-style corn
2 cups fresh corn kernels, or drained canned corn, or thawed and drained frozen corn
3 tablespoons packed dark brown sugar
3 tablespoons cornstarch mixed with 2 tablespoons bourbon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1/8 teaspoon ground white pepper

Steps:

  • Preheat the oven to 350˚ F. Butter an 8-inch square or 6-cup baking dish.
  • In a large bowl, whisk the eggs and evaporated milk. Stir in the cream-style corn, corn kernels, melted butter, brown sugar, cornstarch mixture, nutmeg, salt and white pepper.
  • Pour the mixture into the prepared baking dish. Bake until slightly browned and the tip of a small knife inserted into the center comes out clean, 45 minutes to 1 hour. Serve immediately.

A warm you up dish from Susan Branch's website (http:www.susanbranch.com). This turned out so yummy wanted to be sure and keep it around to make again. I think this would be an great dish to serve as a side with leftover Christmas Ham and am keeping it with my Christmas Menu for just that reason.

1 cup sour cream (I used yogurt cheese)
1 (14 ounce) can corn, drained
1 (14 ounce) can creamed corn
1/2 cup butter, melted (I used Brummel and Brown Yogurt Butter)
1 egg, beaten (I used Egg Beaters)
17 1/2 ounces corn muffin mix, Jiffy Mix (I used Martha White)
1/4 teaspoon cayenne
1/4 teaspoon paprika
maple syrup, heated

Steps:

  • Preheat oven to 350 degrees. Mix first 7 ingredients in a large bowl.
  • Pour into buttered 9 inch square baking dish.( I used this dish to melt the butter in the preheating oven while mixing the other ingredients).
  • Sprinkle top with paprika; bake 1 hour or until the edges are nice and crisp.
  • Heat maple syrup, if desired. I was not sure I would like this part, but I am a fan now! The sweetness of the syrup accents the kick of the cayenne and the smokey flavor of the paprika. Try a little on the side and figure it out for yourself.
  • Serve pudding hot or warm.

¼ cup white sugar (to taste)
1/4 cup milk
1/4 cup heavy cream
1/4 cup cornstarch
pinch nutmeg
pinch salt
pinch black pepper
5 large eggs (beaten well)
1/2 cup salted butter (melted, and cooled)
one 15-ounce can 15 ounce can whole kernel corn
two 15-ounce cans cream-style corn

Steps:

  • Preheat your oven to 350 °F. Grease a 10-inch round baking dish and set aside.
  • In a large bowl, mix the sugar, milk, cream, cornstarch, nutmeg, salt and black pepper until the cornstarch has dissolved completely.
  • Add in the eggs and mix completely.
  • Stir in the butter, then add in the two different types of corn, mixing everything together thoroughly.
  • Spoon into the prepared pan.
  • Bake in the preheated oven for 30-40 minutes, or until the casserole has set. A knife inserted should come out clean, but the casserole is still jiggly!

  • Preheat oven to 375 degrees F.
  • Butter a glass 12 by 10-inch baking dish and set aside

Steps:

  • Heat oven to 350 degrees and butter a 1 1/2-quart baking dish. Cut the corn from the cob into a mixing bowl by slicing from the top of the ear downward. Don't go too close to the cob; cut only half the kernel, then scrape off the rest with the back of the knife.

2 pounds frozen yellow corn, thawed and drained
3 tablespoons maple syrup
6 large eggs
½ cup milk
3 teaspoons kosher salt (cut in half if using fine salt)
¼ teaspoon cayenne pepper
¼ cup all-purpose flour
1 teaspoon baking powder
1 ½ cups heavy cream
½ cup melted butter, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a rimmed baking sheet with a silicone pad. Place an 8x11-inch baking dish on the pad.
  • Place corn in a blender or food processor. Add maple syrup, eggs, milk, kosher salt, cayenne pepper, flour, and baking powder. Mix briefly with a spatula to push down the dry ingredients.
  • Pulse mixture until it begins to come together. Then increase setting to high and blend until completely smooth, 2 or 3 minutes. Transfer mixture to a mixing bowl. Add heavy cream and 2/3 of the melted butter. Whisk to thoroughly blend.
