Baked Corn on the Cob With Garlic Herb Butter image

Deliciously moist corn baked in the oven and seasoned with garlic and herb butter. You can use just plain butter with salt and pepper if you prefer or any flavoured butter of your choice.

4 corn cobs, leaves and silks removed
60 g butter
1 garlic clove, crushed
1 teaspoon dried herbs
1 tablespoon chopped fresh parsley
1 pinch ground black pepper
1 pinch sea salt

Steps:

  • Preheat oven to 200°C.
  • Remove all the husks and silks from the corn cobs.
  • To make the Herb & Garlic Butter- mix all ingredients together is a small mixing bowl.
  • Smear the flavoured butter over the corn cobs. Wrap the corn cobs in aluminium foil and secrely seal.
  • Place the corn cobs on a baking tray and bake in a preheated oven for 25 minutes.
  • When cooked remove from the oven and allow to stand for 5 minutes before opening the foil to remove cooked corn. The corn will still be very hot-be careful not to burn yourself on the steam.

1/2 cup unsalted butter, at room temperature
3 -4 garlic cloves, minced
2 tablespoons finely minced fresh parsley
4 -5 ears corn, husked
salt and pepper, to taste

Steps:

  • Thoroughly mix butter, garlic and parsley in small bowl.
  • Place each ear of corn on a piece of foil and generously spread on butter. Season corn with salt and pepper and tightly seal foil. Place corn in crock pot slow cooker; over lap ears, if necessary. Add enough water to come 1/4 of the way up each ear.
  • Cover; cook on low 4 to 5 hours or on High 2 to 2 1/2 hours, or until done.

1 clove garlic, minced
1/4 teaspoon salt
1/8 teaspoon ground black pepper
4 cobs of corn, peeled

Steps:

  • Preheat oven to 350 F.
  • In a small mixing bowl, cream together the butter, garlic, salt and pepper. Spread the butter mixture over each corn.
  • Wrap each corn in aluminum foil and place on a large half sheet baking pan. Roast in the preheated oven for 40 minutes, turning the corn over halfway.
  • Take out the corn and open the foil on top to expose it. Turn on the broiler function on the oven and place corn back in. Broil on high for 2-3 minutes.
  • Serve with a piece of butter on top. Sprinkle more salt and pepper as desired.

8 ears corn
Garlic butter, recipe follows
1/2 cup grated cotija cheese
4 fresh limes, quartered
2 tablespoons chopped chives, for garnish
2 sticks unsalted butter, slightly softened
8 cloves garlic, peeled and coarsely chopped
1/4 habanero pepper, seeded
1/4 bunch fresh chives
Salt and freshly ground black pepper

Steps:

  • Preheat grill to medium. Peel back the husks of the corn without removing them. Remove the silks and recover the corn with the husk. Soak in large bowl of cold water for 30 minutes. Remove corn from water and shake off excess. Place the corn on the grill, close the cover and grill for 15 to 20 minutes.
  • Unwrap corn and brush with the garlic butter. Sprinkle with the cotija cheese and squeeze with lime. Sprinkle with chopped chives, to garnish.
  • Combine butter, garlic, habanero, and chives in a food processor and process until smooth. Season with salt and pepper. Set aside until ready to use.

3 tablespoons minced fresh flat leaf parsley or cilantro
1 clove garlic, minced
Salt and freshly ground black pepper

  • Set up the grill for direct grilling and preheat to high.
  • Strip back the corn husks, as you would peel a banana, exposing the kernels. Bring the husks together beneath the ear of corn to make a sort of handle and tie with string.
  • Place the butter, parsley, and garlic in a mixing bowl and whisk or beat until smooth and creamy.

6 corn on the cob
1 cup butter
2 tablespoons olive oil
6 cloves garlic, crushed
1 cup breadcrumbs (seasoned works best)
1 tablespoon fresh parsley, chopped
salt and pepper

Steps:

  • Preheat Barbeque.
  • Pull off the husks and silks and boil the corn cobs in a large saucepan of salted water until tender.
  • Drain the corn cobs and leave to cool.
  • Melt butter in a saucepan and add the olive oil, crushed garlic, salt, pepper and stir to blend.
  • Pour the mixture into a shallow dish.
  • In another shallow dish, blend the breadcrumbs and parsley.
  • Roll the corn cobs in the melted butter mixture and then into the breadcrumb mixture until they are well coated.
  • Cook the corn cobs on a hot barbeque for about 10 minutes, turning frequently, until the breadcrumbs are golden brown.

  • Preheat oven to 350°F.
  • Bring a large pot of water to a boil and salt heavily, as you would pasta water. Drop the corn and white sugar in the pot and cook for about 5 minutes. Transfer to a kitchen towel to drain.

  • Fill a large pot or dutch oven with lots of water, so that you corn will fully submerge. Add 1/4 teaspoon salt and bring water to a boil.
  • While water is coming to a boil, coarsely chop garlic and chiffonade the basil. Add to mixing bowl, then add butter and 1/4 teaspoon salt. Blend with a hand mixer for 1 minute, until well whipped. Taste and adjust salt as needed.
  • Once water is boiling, add corn. Push down with a tongs to fully submerge. Keeping the heat on high, let it come back to a boil, (usually takes about 3 minutes) then drain and rinse with cool water. Plate, and spread with butter, finish with salt.
