SOUTHERN HUSH PUPPIES
Southern Hush Puppies are golf ball sized, light and flakey cornmeal dough that is fried golden brown on the outside and soft on the inside served as a side dish to any southern meal. These hush puppies are ready in minutes!

Steps:
- Preheat 2 inches of oil in a large skillet to 365 degrees. In a medium sized mixing bowl add the flour, cornmeal, sugar, baking powder, salt, garlic powder, onion powder, paprika, and pepper. Add the egg and buttermilk and stir until combined. Stir in cubed butter.
- Drop the batter by rounded teaspoonfuls in the hot oil. Let cook until they are golden brown 2-3 minutes. Remove with a metal strainer on a paper toweled lined plate. Serve with tarter sauce if desired.

DEEP-FRIED SOUTHERN HUSH PUPPIES
Steps:
- Gather the ingredients.
- In a deep fryer or heavy, deep skillet, heat 2 to 3 inches of oil to 370 F.
- In a mixing bowl, combine the self-rising cornmeal mix, self-rising flour, and onion. Add milk and egg and mix well.
- Let the batter stand at room temperature for 5 minutes.
- Drop the batter by tablespoons into the hot oil, careful not to overcrowd the pan.
- Fry the hush puppies in small batches until deep golden brown, turning several times to brown evenly. It'll take around 3 batches at 2 to 3 minutes each.
- Drain on paper towels. Serve and enjoy!

MAMA'S CORNMEAL HUSHPUPPIES

Steps:
- In a large bowl, mix the cornmeal, onions, jalapeno and a pinch of salt. Add enough of the buttermilk to make a stiff batter. You may not need the whole 2 cups.
- Heat the peanut oil in a deep fryer or a large heavy bottomed pot to 250 degrees F.
- Drop the batter into the hot oil by teaspoonfuls. The hushpuppies will turn over in the oil as they cook. They are done when they are brown all over, 6 to 8 minutes. Remove them from the oil with a slotted spoon, drain on paper towels and season with salt. Keep the hushpuppies warm while you fry the remaining batter. Serve hot.

- To prepare hush puppies: Fill a large pot with oil to a depth of 1 1/2 inches. Clip on a candy thermometer and heat over medium to 360 degrees F.
- Meanwhile, whisk cornmeal, flour, baking powder, baking soda, 1/2 teaspoon salt and cayenne in a large bowl. Add corn and scallions; stir until evenly coated. Whisk egg and buttermilk in a medium bowl until well blended. Add the buttermilk mixture to the cornmeal mixture and gently mix just until moistened.
- Using wet hands, form the dough into 24 balls, about 1 tablespoon each. Coat 2 metal spoons with cooking spray and use them to carefully lower 8 balls into the hot oil. Fry until golden brown, 1 to 2 minutes. Transfer to a paper-towel-lined plate and immediately sprinkle with some of the remaining 1/4 teaspoon salt. Return the oil to 360 degrees F and repeat with the remaining dough in 2 more batches.
- To prepare dipping sauce: Combine yogurt, lemon juice, dill, parsley, salt and pepper in a small bowl. Serve with the hot hush puppies.
