4 plum tomatoes, chopped
1 green bell pepper, chopped
1/4 cup chopped fresh cilantro
Kosher salt
1 cup sour cream
1/4 cup mayonnaise
2 scallions, minced
Juice of 1/2 lime
1/4 teaspoon chili powder
2 cups crumbled cornbread
2 15-ounce cans black-eyed peas, drained and rinsed
1 cup frozen corn, thawed
1 cup shredded cheddar or Mexican-blend cheese

Steps:

  • Toss the tomatoes, bell pepper, cilantro and 1/2 teaspoon salt in a medium bowl. Whisk the sour cream, mayonnaise, scallions, lime juice, chili powder and 1/2 teaspoon salt in a small bowl.
  • Assemble the salad: Sprinkle half of the cornbread in a glass bowl or trifle dish. Top with half each of the black-eyed peas, corn and the tomato-pepper mixture, then half each of the sour cream mixture and cheese. Repeat the layers with the remaining ingredients, ending with cheese. Cover with plastic wrap and refrigerate at least 2 hours or overnight.

1 (1 ounce) package ranch dressing mix

1 cup bell pepper
2 (15 ounce) cans whole kernel corn, drained
3 large tomatoes, chopped
10 slices bacon, cooked and crumbled
1 (8 ounce) package cheddar cheese
1 cup green onion

Steps:

  • Prepare cornbread, adding green chilies and sage; COOL.
  • Combine Ranch dressing mix, sour cream, and mayo;set aside.
  • Crumble 1/2 cornbread into big bowl.
  • Top with 1/2 each of: beans, sour creme mixture, green pepper, and next 5 ingredients.
  • REPEAT LAYERS.
  • Cover and chill 2 hours.
  • Serve in lettuce lined bowls, top with tomato wedges.

1 package (8-1/2 ounces) cornbread/muffin mix
1 cup sour cream
1 cup mayonnaise
1 envelope ranch salad dressing mix
3 large tomatoes, seeded and chopped
1/2 cup chopped sweet red pepper
1/2 cup chopped green pepper
1 cup thinly sliced green onions, divided
2 cans (15 ounces each) pinto beans, rinsed and drained
2 cups shredded cheddar cheese
10 bacon strips, cooked and crumbled
3-1/2 cups frozen corn, thawed

Steps:

  • Prepare and bake cornbread mix according to package directions, using an 8-in. square baking dish. Crumble when cool., Mix sour cream, mayonnaise and salad dressing mix until blended. In a separate bowl, combine tomatoes, peppers and 1/2 cup green onions. , In a 3-qt. glass bowl, layer half of each: cornbread, beans, tomato mixture, cheese, bacon, corn and dressing. Repeat layers. Top with remaining green onions. Refrigerate 3 hours.

A colorful summer salad with great flavor. Whenever I share this dish at a potluck, I am always asked for the recipe.

1 (7.5 ounce) package corn bread/muffin mix
1 (4 ounce) can chopped green chilies, undrained
⅛ teaspoon ground cumin
⅛ teaspoon dried oregano
1 pinch rubbed sage
1 cup mayonnaise
1 cup sour cream
1 (1 ounce) package dry Ranch-style dressing mix
10 slices bacon
2 (15.5 ounce) cans pinto beans, drained and rinsed
1 (10 ounce) can whole kernel corn, drained
3 medium tomatoes, chopped
1 cup chopped green pepper
1 cup chopped green onion
2 cups shredded Cheddar cheese

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Prepare the cornbread mix according to package directions, stirring green chilies, cumin, oregano and sage into the finished batter. Spread into a greased 8 inch square pan.
  • Bake for 20 to 25 minutes in the preheated oven, or until the top springs back when lightly pressed. Set aside to cool completely.
  • In a small bowl, stir together the mayonnaise, sour cream, and Ranch dressing mix. Set aside. Wrap bacon in paper towels, and cook in the microwave until crisp, about 45 seconds per slice. Crumble, and set aside.
  • Crumble half of the cornbread into the bottom of a 9x13 inch baking dish. Pour half of the beans over the crumbled bread, half of the mayonnaise mixture, half of the corn, tomatoes, peppers, green onion, bacon and cheese. Repeat the layers ending with cheese on top. The dish will be very full. Cover and refrigerate for 2 hours before serving.

When serving a crowd, I'm always thinking of recipes that can be fully or partially made ahead. That's why this panzanella is so great. The traditional bread salad was a way to use up stale or leftover bread. I thought it would be fun to add a Southern spin and substitute day-old cornbread and toast it in bacon drippings. Sounds yummy right? Well, it is!

3 slices thick-cut bacon
Day-old Cornbread, recipe follows, cut into 1-inch cubes
Vegetable oil, for the pan, optional
1/3 cup extra-virgin olive oil
3 tablespoons white wine vinegar
1 teaspoon Dijon mustard
3 cloves garlic, minced
Kosher salt and freshly ground black pepper
2 pounds heirloom tomatoes, cut into bite-size pieces (about 6 cups)
1 cup fresh basil leaves, coarsely chopped, plus more for garnish, optional
2 tablespoons capers
1 English cucumber, seeded and cut into half-moons (about 2 cups)
1 small red onion, halved and very thinly sliced (about 1 1/2 cups)
Vegetable shortening or cooking spray, for the pan
1 cup all-purpose flour
1 cup plain cornmeal
2 tablespoons granulated sugar
1 tablespoon baking powder
1 teaspoon kosher salt
1 cup whole buttermilk
1/2 cup (1 stick) unsalted butter, melted
2 tablespoons vegetable or canola oil
1 large egg

Steps:

  • Cook the bacon in a large cast-iron skillet over medium-high heat until browned and crisp, 5 to 8 minutes. Remove the bacon to a paper towel-lined plate to cool, reserving the drippings in the skillet, then chop.
  • Add half of the Cornbread cubes to the hot bacon drippings in the skillet and brown on all sides, 5 to 8 minutes. Remove from the skillet and let cool. Add vegetable oil to the skillet if it becomes dry, then brown the remaining cornbread cubes. Let cool.
  • Whisk together the olive oil, vinegar, mustard and garlic in a large bowl. Season with salt and pepper. Add the tomatoes, basil, capers, cucumber and onion. Toss well to coat. Cover and refrigerate until ready to serve, or serve right away.
  • Just before serving, add the cornbread cubes and bacon and toss. Garnish with additional basil, if desired.
  • Preheat the oven to 400 degrees F. Lightly grease a 9-inch baking pan with vegetable shortening or cooking spray.
  • Combine the flour, cornmeal, sugar, baking powder and salt in a medium bowl. Whisk together the buttermilk, butter, vegetable oil and egg in a separate bowl. Add the buttermilk mixture to the flour mixture, stirring just until the dry ingredients are moistened. (The batter will be lumpy and thick.)
  • Bake the cornbread until a toothpick inserted in the center comes out clean, 22 to 25 minutes. Let cool on a wire rack.

Steps:

  • Prepare corn bread according to package directions. Cool, crumble, and set aside.
  • Place bacon in a large deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.
  • Whisk together the dressing mix, sour cream, and mayonnaise.
  • Crumble half the corn bread in the bottom of a large serving dish. Top with half the beans. Layer the beans with half of the tomatoes, green bell pepper, and green onions. Sprinkle with half the cheese, corn, bacon, and the salad dressing mixture. Repeat the layers. Cover, and chill at least 2 hours before serving.

2 (8 1/2 ounce) packages cornbread mix (I prefer Jiffy brand, it has a slight sweet taste) or 2 (8 1/2 ounce) packages corn muffin mix (I prefer Jiffy brand, it has a slight sweet taste)
2 (4 ounce) cans chopped green chilies, undrained
1/4 teaspoon ground cumin
1/4 teaspoon dried oregano
1/4 teaspoon sweet basil (The above three seasonings can be adjusted depending on how much spice you prefer)
1/2 cup mayonnaise or 1/2 cup salad dressing
1 1/2 cups sour cream
1 (2/3 ounce) envelope ranch dressing mix
3 (15 ounce) cans pinto beans, rinsed and drained
2 (15 1/4 ounce) cans whole kernel corn, drained
3 medium tomatoes, chopped (I used 2 cans tomatoes, diced and peeled)
1 cup chopped green peppers or 1 cup bell pepper
1 cup chopped green onion
10 slices bacon, cooked and crumbled
4 cups shredded cheddar cheese (16 oz)
2 ounces cooked elbow macaroni (optional)

A lady brought this to our home study group potluck and it was wonderful. She gave me the basics of what was in it and here if what I have come up with. Turned out really good. Cook time does not include the time it takes to cook bacon and the cornbread. I cooked the bacon in the microwave.

7 cups cornbread, torn into bite size pieces (I used Southern Country Cornbread)
6 slices cooked bacon, crumbled
1/3-1/2 cup red onion, chopped
1/4 cup green bell pepper, chopped
1/4 cup red bell pepper, chopped
2 small tomatoes, seeded and chopped
1/4 cup sweet pickle, chopped
1/4 cup dill pickle, chopped
1 cup mayonnaise
1/4 cup sweet pickle juice
1/4 teaspoon fresh ground pepper
1 dash ground red pepper

Steps:

  • In a small bowl, whisk together the mayonnaise, sweet pickle juice and peppers and set aside.
  • In a large bowl combine the remaining ingredients, tossing well.
  • Add the dressing mix to the cornbread mixture just before serving.
