1 can black beans (19oz/540ml) (, drained)
1 can corn (12oz/340ml) (, drained)
1 red pepper (, cored and diced)
1/2 English cucumber (, diced)
1/2 sweet onion (, diced finely)
1 jalapeno pepper (optional) (, cored and diced finely)
1/3 cup cilantro (, washed and minced)
1/3 cup lime juice (, (2 or 3 limes usually))
1/3 cup olive oil
1/3 cup sugar
1 tsp salt

Steps:

  • Toss black beans, corn, red pepper, cucumber, onion and cilantro in a large bowl.
  • In a separate container mix the oil, lime juice, sugar and salt together until the sugar is dissolved.
  • Pour the dressing on the salad and stir until everything is coated. Let the salad marinate in the fridge for about 1 hour.
  • Serve cold.

1 medium green pepper, cut into 1-inch pieces
1 to 2 jalapeno peppers, seeded and sliced

1 package (16 ounces) frozen corn
1 can (14-1/2 ounces) diced tomatoes, undrained
1 teaspoon chili powder

1/2 cup canola oil, divided
2 teaspoons ground cumin
1 tablespoon chili powder, divided
Salt and freshly cracked black pepper
6 ears corn, shucked
1 lime, juiced
2 cloves garlic, chopped
1 yellow bell pepper, cored and diced
1 medium red onion, diced
1 (15-ounce) can black beans, rinsed and drained
1/4 cup chopped fresh cilantro leaves

Steps:

  • Preheat a grill or a grill pan over medium heat.
  • In a small bowl, add 1/4 cup of the canola oil, the cumin, 2 teaspoons chili powder, and season with salt and black pepper, to taste. Stir to combine. Brush each ear of corn liberally with the seasoned oil.
  • Arrange the corn on the hot grill and cook for about 12 minutes, giving each ear a quarter turn every 3 minutes. Remove from grill and let cool for 5 minutes. When cool enough to handle cut kernels from corn.
  • In a medium serving bowl, whisk together the remaining 1/4 cup of canola oil, 1 teaspoon chili powder, the lime juice, garlic, bell pepper, onions, beans, and cilantro. Adjust the seasonings with salt and black pepper, to taste. Add the corn kernels and stir to combine. Mix the ingredients well and serve with tacos, if desired.

Feel free to substitute some of the beans for other types if you prefer - the original emailed recipe I got had black-eyed peas in it. Mostly what you want is a pretty firm bean so it doesn't get mushy when you mix it together. You can also bump up the jalapenos if you like the heat! We love this with scoop corn chips or baked tortilla chips for dipping.

1 (14 ounce) can black beans, drained and rinsed
1 (14 ounce) can chickpeas, drained and rinsed

Juice of 1 lemon
2 pints grape tomatoes, sliced in half lengthwise

1 cup chopped red onion
1/4 cup seeded and minced jalapeno peppers, seeded
1 lime, zested
1/2 cup freshly squeezed lime juice
1/4 cup good olive oil
1 teaspoon freshly ground black pepper
1 teaspoon minced garlic
1/2 teaspoon ground cayenne pepper

Steps:

  • In a large pot of boiling salted water, cook the corn for 3 minutes until the starchiness is just gone. Drain and immerse the corn in ice water to stop the cooking and to set the color. When the corn is cool, cut the kernels off the cob, cutting close to the cob, and place them in a large bowl.
  • Toss the avocados with the lemon juice and add them to the bowl with the corn. Add the tomatoes, red peppers, onion, jalapeno peppers and lime zest to the bowl.
  • Whisk the lime juice, olive oil, 2 teaspoons kosher salt, black pepper, garlic, and cayenne pepper together in a small bowl and pour over the vegetables. Toss well. Keep refrigerated until ready to serve.

One 15-ounce can chickpeas, rinsed and drained
1 cup loosely packed fresh cilantro leaves, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
1/2 red onion, chopped
1/2 jalapeno or serrano chile pepper, seeded and finely chopped (wear plastic gloves when handling)
1 teaspoon kosher salt
Freshly ground black pepper
1/2 cup freshly squeezed lime juice (from about 2 large or 4 small limes)
1 tablespoon sugar
2 teaspoons kosher salt
1 teaspoon red wine vinegar
1 teaspoon ground cumin
Pinch chili powder
2 cloves garlic, pushed through a press
1/4 cup extra-virgin olive oil
Hot sauce, preferably Crystal Hot Sauce

Steps:

  • For the salad: Preheat a grill on high for 5 minutes. Reduce the heat to medium high and grill the corn, with the cover closed and turning occasionally, until some kernels are black, about 12 minutes. Remove and allow the corn to cool slightly.
  • Using a sharp knife, cut off the kernels into a very large, deep serving bowl. (Hold the narrow end of the cob, point the other end into the bowl and cut downward, so that flying kernels are trapped by the bowl itself.) Add the black beans, chickpeas, cilantro, green and red bell peppers, onions, chile peppers, salt and pepper to taste to the bowl and toss.
  • For the dressing: Whisk together the lime juice, sugar, salt, vinegar, cumin, chili powder, garlic and olive oil in a small bowl. Season to taste with hot sauce.
  • Pour the dressing over the salad and toss to thoroughly coat. Let sit at room temperature for 20 minutes, toss again and serve. The salad can be made a day in advance, covered and refrigerated. Bring to room temperature before serving.

1 cup diced red bell pepper
3/4 cup diced red onion
1/4 cup cider vinegar

  • Preheat the grill to medium.

1 pint heirloom cherry tomatoes, halved through the stem
1 Holland orange bell pepper, cored, seeded, and 1/2-inch-diced

2 jalapeno peppers, seeds and ribs removed, minced
1 1/2 teaspoons grated lime zest
1/4 cup freshly squeezed lime juice (3 limes)
2 tablespoons good olive oil

2 ripe Hass avocados, large-diced
Juice of 1 lemon

Steps:

  • Cook the corn in a large pot of boiling salted water for 5 to 7 minutes, until just tender. Cool for 5 minutes and cut the kernels off the cob, cutting close to the cob with a sharp knife. Place the kernels in a large bowl with the tomatoes, bell pepper, onion, and jalapeno peppers.
  • In a small bowl or glass measuring cup, whisk together the lime zest, lime juice, olive oil, garlic, chile powder, 1 teaspoon salt, and 1/2 teaspoon black pepper. Pour the dressing over the vegetables and toss.
  • In a separate bowl, gently toss the avocados and lemon juice together, making sure the avocado is coated in lemon juice. 1/2 red bell pepper, chopped fine
1/2 cup chopped red onions or 1/2 cup scallion
1/4 cup frozen sweet corn, thawed
1 -2 fresh jalapenos or 1 -2 other hot pepper, sliced into rings
1 lime (juiced)
1/4 cup minced fresh cilantro (coriander)
3 tablespoons extra virgin olive oil
1 tablespoon granulated sugar
1 ripe avocado, diced (but on the firm side)
1 -2 clove garlic, chopped

⅓ cup chopped fresh cilantro
¼ cup lime juice
1 jalapeno pepper, seeded and minced
1 teaspoon salt
½ teaspoon garlic powder
½ teaspoon ground black pepper
¼ teaspoon ground cumin
¼ teaspoon onion powder

Steps:

  • Mix black beans, garbanzo beans, corn, tomatoes, bell pepper, salsa, cilantro, lime juice, jalapeno pepper, salt, garlic powder, black pepper, cumin, and onion powder together in a bowl.

2 -3 tablespoons snipped fresh parsley
1 -2 teaspoon snipped fresh cilantro
1 1/2 teaspoons fresh dill (or 1/2 teaspoon dried dillweed)
1/8 teaspoon fresh ground black pepper

Steps:

  • In a colander, rinse the black beans; drain well. In a large bowl, combine the beans, corn, sweet pepper, and onion; set aside.
