This recipe came about after years of competition with family and friends over the perfect stuffed jalapeno. Bring your tissues because these are HOT! Goes well with Summer Beer I from this site.

12 jalapeno peppers, halved lengthwise
1 (8 ounce) package cream cheese, softened
Cajun seasoning, or to taste
12 slices jalapeno bacon, cut in half
toothpicks

Steps:

  • Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
  • Fill the jalapeno peppers with cream cheese. Sprinkle the Cajun seasoning on top, then wrap each stuffed jalapeno with a slice of bacon. Secure with a toothpick. Arrange the wrapped jalapeno peppers in a single layer, face down on a broiler rack.
  • Broil in the preheated oven until the bacon becomes crisp, 8 to 15 minutes on each side.

If you like hot and spicy...I am not kidding when I say these things are AMAZING! A co-worker made loads of these at Christmas, and I believe I ate my weight in them! I was very surprised by the way these are made after getting her recipe. A few important notes - Do not substitute regular Ritz for the whole wheat, they will not turn out the same for some reason. And the Fiesta Ranch packets can be a bit hard to find, depending on where you live, Food Lion always has it in stock. Make sure you marinate the full 3 days...my friend said the longer they sit, the better they are, but I cant seem to wait past the 3 days. Hope you enjoy these as much as I do!

144 ritz whole wheat crackers (4 sleeves/1 box)
3/4 cup vegetable oil
3 tablespoons red pepper flakes
1 tablespoon taco seasoning (heaping)
1 tablespoon ranch dressing mix (heaping)
1 (16 ounce) container sour cream
1 (1 ounce) packet ranch fiesta dip mix

Steps:

  • Place all crackers into a large zip lock bag.
  • Whisk oil, pepper flakes, taco seasoning and dry Ranch dressing together.
  • Pour into bag of Ritz and gently mix together, making sure crackers are well covered and close bag.
  • Leave closed bag to set on counter for a minimum of 3 days, turning bag over twice each day. Can marinate up to 10 days.
  • Serve with Fiesta dip: Mix container of cold sour cream with packet of Fiesta Ranch dry dressing seasoning.
  • YUM!

1/2 c water
3 Tbsp sugar
3 clove garlic
salt to taste

About 7, 8, or more years ago my brother lived in NY. He would bring home Stew Leonard's Jalapeno Dip from Stew Leonard's(which I believe was a grocery store) in Connecticut. All I had to go by was the list of ingredients on the container and I kept at it til I got it to taste just right. For those of you that know of this dip let me know what you think...:)

2 chipotle chiles in adobo (sold in can)
1/4 teaspoon adobo sauce (from can)
1 1/2 tablespoons cider vinegar
2 -3 tablespoons salsa (or fresh tomatoes)
2 tablespoons olive oil
1 1/2 teaspoons onion powder
2 teaspoons romano cheese or 2 teaspoons parmesan cheese
2 teaspoons parsley
2 teaspoons sugar
1 -2 garlic cloves, minced or 1 -2 teaspoon garlic powder
1 teaspoon cilantro or 1 teaspoon oregano
1 teaspoon salt
1 1/2 cups mayonnaise

Steps:

  • In a food processor, process everything except the mayo.
  • Once you've done that; put in half the mayo and process.
  • Transfer to bowl and hand mix in the rest of the mayo.
  • Chill before serving.
  • Refrigerate any leftover dip.
  • Serve with pretzels or tortilla chips or whatever you like with it.

2 (8 ounce) packages cream cheese, room temperature
1 cup mayonnaise
1 cup Mexican blend cheese, shredded (half Monterrey jack or half Cheddar)
1/2 cup parmesan cheese
1 (4 ounce) can green chilies, chopped
1 (4 ounce) can jalapenos, diced
1 cup panko breadcrumbs
1/2 cup parmesan cheese
1/4 cup butter, melted

Steps:

  • Combine the first 6 ingredients in a mixer or food processor and blend until smooth.
  • No need to drain the cans of chillies or jalapenos, it is a personal option. Spread the dip into a greased casserole dish.
  • In a bowl, combine the panko breadcrumbs, the additional 1/2 c Parmesan cheese and melted butter. Sprinkle crumb mixture evenly over the dip and bake in a preheated 375 degree oven for about 20 minutes until the top is browned and its bubbling around the edges.

Seasoned saltine crackers that are simple to make and add a special touch for your dips and spreads at parties. I have had these on several occasions at bachelorette parties and babies showers but was never given the recipe. My sister had them recently at a birthday party, got the recipe, and passed it on to me. Unfortunately, I don't know who to credit for this, but it's certainly a keeper!!! Was initially concerned about the amount of oil, but hey, it's party food, RIGHT? I have used whole wheat crackers and different kinds of dip/dressing mixes successfully so have fun and get creative!

1 lb unsalted saltine crackers (4 sleeves)
1 cup canola oil
1 (1 ounce) packet ranch dressing mix
2 tablespoons crushed red pepper flakes
1/2 teaspoon garlic powder

Steps:

  • Line crackers on ends (like dominoes) in an air-tight container.
  • In a small bowl, mix oil, dressing mix, peppers, and garlic powder.
  • Stir until all ingredients are well mixed.
  • Continue to stir to prevent the pepper from settling on the bottom of the bowl.
  • Spoon mixture evenly over crackers, like drizzling icing on a cake.
  • Close lid tightly and flip the container over every 5 minutes for about 20 minutes. Lightly shake back and forth to make sure all the crackers are coated.
  • Store in a ziplock bag. Will keep for about a week -- if they last that long!

old mission whole wheat tortilla shells
cream cheese, room temperature
jalapeno peppers
bacon bits
JALAPENO JELLY
strawberry glaze
jalapenos, fresh diced

Steps:

  • 1. mix the cream cheese with the amount of jalapeños and bacon you want for personal hotness level. Roll some of the mix into a tortilla shell and deep fry until lightly brown about a minute or two in hot deep fryer.
  • 2. for jalapeño jelly (mix ahead so the glaze can color the jalapeños. Mix glaze with diced jalapeños and refrigerate until ready to serve
