My mother has made these since I was little and then I made them for my kids. They are great to take to a picnic as they carry well.

2/3 cup butter (melted)
1 lb light brown sugar
3 eggs
2 3/4 cups flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
12 ounces chocolate chips
1 cup chopped walnuts

Steps:

  • Melt the butter and add brown sugar; mix well and cool.
  • Add eggs, one at a time, beating well each time.
  • Add dry ingredients and mix well.
  • Add the nuts and chocolate bits.
  • Put in a greased 9x13 pan and bake 350 degrees for about 25-30 minutes.

Congo Bars are an amped up chocolate chip cookie bar with 2 types of chocolate to make them extra gooey!

1 cup butter, room temperature
1 cup dark brown sugar, packed
1 cup light brown sugar, packed
3 large eggs
1 tablespoon vanilla extract
1 teaspoon kosher salt
2 teaspoons baking powder
2 1/2 cups all purpose flour
2 cups semi-sweet chocolate chunks, or chopped chocolate
1/2 cup milk chocolate chips

Steps:

  • Preheat the oven to 350°F. Line a 9×13 pan with parchment paper and coat with nonstick spray. Set aside.
  • In the bowl of your stand mixer fitted with the paddle attachment mix the butter and the light and dark brown sugars together for 2 minutes on medium speed. Add in the eggs, vanilla, salt and baking powder and mix for an additional minute on medium, scraping the sides of the bowl as necessary.
  • Turn the mixer to low and add in the flour, mixing until just combined.
  • Finally add in both kinds of chocolate and stir to incorporate.
  • Spread the dough into the prepared pan and bake for 30 minutes or until the edges are set and lightly golden and the center appears slightly under-baked.
  • Remove the pan from the oven and allow the bars to cool completely before cutting.
  • Alternately you can chill the bars before cutting.

2 cups sifted all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
⅔ cup shortening
2 ¼ cups packed brown sugar
3 eggs
2 cups semisweet chocolate chips
1 cup chopped walnuts
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (180 degrees C).
  • Melt shortening, stir in brown sugar. Let cool.
  • Beat in the eggs.
  • Add dry ingredients.
  • Add chocolate chips, nuts and vanilla.
  • Pour in 10 x 15-inch pan and bake for 30 minutes. Cool and cut into squares.

4 ¼ cups all-purpose flour
3 ¼ cups brown sugar
1 cup melted butter
6 eggs
3 cups semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10x15 inch jellyroll pan.
  • Stir together the flour and brown sugar, set aside. Stir together the melted butter and eggs until well blended; stir into the flour mixture. Fold in the chocolate chips. Spread batter evenly into the prepared pan.
  • Bake for 20 to 30 minutes in the preheated oven. Let cool for 10 minutes, then cut into bars while still slightly warm.

  • Pre-heat the oven to 350°F.
  • Sift the flour, baking powder and salt in a large bowl. Set aside.
  • Combine the butter and sugar using a mixer until blended.
  • Add the eggs, one at a time, to the sugar mixture, mixing on low in between each addition.
  • Add the vanilla and mix.
  • Add the flour and mix until combined.
  • Stir in the chips.
  • Coat a 9-inch x 13-inch pan with nonstick cooking spray and spread the batter evenly into the dish.
  • Bake for 30 minutes, then cover the top with foil to avoid over-browning.
  • Bake for another 10-15 minutes, or until a toothpick inserted in the middle comes out with moist crumbs. You will think they are under-done, but they aren't. Make sure you don't overbake!
