Condensed Milk Cookies Makes 100 Biscuits Food

THE FAMOUS 100 COOKIE RECIPE

Steps:

• Preheat oven to 180 degrees celsius (fan-forced).
• Grease and line baking trays and set aside (use as many as will fit in your oven).
• Cream the room temperature butter and caster sugar together with handheld beaters or a stand mixer until light, creamy and fluffy.
• Add the condensed milk and beat through.
• Add 1 cup of self-raising flour and beat through. Add another cup of self-raising flour and beat through. Continue until all 5 cups have been mixed through.
• Divide the cookie dough between bowls and flavour each however you'd like (see notes).
• Roll into teaspoon-sized balls and place onto the prepared baking trays. Press down lightly with a fork.
• Bake for 10 minutes. Allow to cool for 10 minutes on the baking trays before transferring to a wire rack to cool completely.

• Place room temperature butter and caster sugar into the Thermomix bowl. Cream for 1 minute, Speed 5 (scrape down the sides after 30 seconds).
• Add the condensed milk and mix for a further 30 seconds, Speed 5.
• Add 250g of the self-raising flour and mix for 20 seconds, Speed 6. Scrape down the sides of the bowl.
• Add another 250g of the self-raising flour and mix for a further 20 seconds. Add the final 250g and mix for 20 seconds, Speed 6 (please note that you'll need to use the spatula to assist with the mixing).
• Divide the cookie dough between bowls and flavour each however you'd like (see notes).
• Roll into teaspoon-sized balls and place onto the prepared baking trays.
• Press down lightly with a fork. Bake for 10 minutes.
• Allow to cool for 10 minutes on the baking trays before transferring to a wire rack to cool completely.

CONDENSED MILK COOKIES - MAKES 100 BISCUITS

Steps:

• Pre-heat your oven to 180 degrees celsius (fan-forced) and line 2 trays with baking paper.
• In a large bowl (you will need it to be big enough to fit all of the ingredients) add the softened butter, sweetened condensed milk and caster sugar and mix with an electric mixer until pale and creamy.
• Add the self raising flour and mix until the mixture has almost come together.
• Add the chocolate chips (or other ingredients) and mix until combined.
• Use a teaspoon to scoop up the mixture and roll into balls. Place onto the prepared baking trays and lightly press with the back of a fork to slightly flatten.
• Place the baking trays into the oven to cook for 12 - 15 minutes or until the biscuits begin to turn golden on the edges.
• Carefully remove from the oven and let the biscuits cool for 5 minutes on the baking trays before transferring to a wire rack to cool completely. Repeat from step 5 until all of the mixture has been used.

SWEETENED CONDENSED MILK BISCUITS ( COOKIES )

Steps:

• Beat the margarine and sugar until creamy.
• Add vanilla essence - beat for another couple seconds.
• Add the tin of sweetened condensed milk to the "cream" mixture.
• Add salt then flour - cut into the mixture whilst mixing with a round edged knife.
• Once mixture has the consistency of workable dough (more flour may be needed to get right consistency) roll out dough into 6 inch "sausages" - wrap "sausage dough" in parchment paper (wax paper) and place in fridge for half an hour before cutting the sausages into slices. Flatten biscuits lightly before baking in a preheated oven @ 180degrees until biscuits are a fine golden colour.
