Homemade Condensed Cream Soups image

Once you make these homemade versions of condensed cream soups, you'll never open a can again!

2 tbsp butter (I use unsalted)
1/2 cup chopped "add-ins" (i.e. mushrooms, onions, chicken, celery, etc.)
1/4 cup flour
1 tbsp concentrated stock (see NOTES)
1/2 cup water
1/2 cup whole milk or half-and-half (see NOTES)
1/4 tsp pepper
1/2 tsp salt

Steps:

  • Melt butter over in a small saucepan over medium heat. Add your "add-ins" and concentrated stock and cook for about 5 minutes. If your "add-ins" are veggies, cook them till they are soft.
  • Whisk in the flour--this will be VERY thick.
  • Slowly whisk in the water--again, this will be very thick--so you don't get lumps, then repeat with the milk or half-and-half. Continue cooking until mixture bubbles, then cook for 1 minute.
  • Add salt and pepper--if desired. Remember you can always add that later.
  • Use as-is wherever condensed cream soup is called for.
  • To reconstitute and use as a soup, stir in 1 cup of milk or half-and-half.

Here is what I use instead, it would also be good if you prefer not to use the highly processed version and would be a good way to reduce salt if you use low sodium broth or could be made vegetarian by using vegetable broth

2 tablespoons butter
6 button mushrooms, cleaned and thinly sliced (this seems to me to be about what it looks like from the can, you can always add more or less as you)
3 tablespoons flour
1/2 cup broth (I use chicken but the recipe I based this on the first time suggested beef, it works well with real ) or 1/2 cup bouillon (I use chicken but the recipe I based this on the first time suggested beef, it works well with real )
1/2 cup milk (I have never done this with skim, it works well with 1.5% and whole milk)
salt and pepper

Steps:

  • Melt butter in a saucepan over medium-low heat.
  • Saute mushrooms until cooked through.
  • Stir in flour a little at a time until a paste is formed and remove from heat.
  • Add broth and milk a little at a time, stirring to keep mixture smooth.
  • Return to the heat and bring sauce to a gentle boil, stirring constantly until sauce thickens.
  • Add salt and pepper to taste. I find it usually doesn't need salt and only a couple of dashes of pepper.

I swiped this from the Food networks low carb and loving it, green bean casserole recipe. Isolating the parts that recreate the Consensed cream of mushroom soup part and fiddled a bit with it.

1/2 cup onion, thinly sliced
8 ounces white mushrooms, rinsed and sliced
1 1/2 teaspoons kosher salt
1/8 teaspoon garlic powder
1/8 teaspoon fresh ground black pepper
1/2 cup chicken broth
1 teaspoon thyme, chopped
1/2 cup sour cream

Steps:

  • Heat the oil in a large pan over medium-high heat.
  • Add onion, mushrooms, salt, garlic, and pepper and cook, stirring, about 2 minutes.
  • Add the chicken broth and thyme and cook until almost all the liquid is evaporated, about 3 to 4 minutes.
  • Add the sour cream, and toss to combine.

I use this recipe as a substitute for the canned cream of soups in recipes. I almost never keep that stuff on hand, because its full of sodium, and just yucky. The recipe calls for chicken broth. I use chicken broth for the cream of chicken soup substitute. To make a heartier soup, like the cream of mushroom, I use beef broth. Sometimes I like to add in a little shredded chicken, sliced mushrooms, celery, etc. Use your imagination. I've never tried this soup by itself, I only use it in recipes, and its a great substitute!!! The recipe always tastes better than when I use the canned stuff. Enjoy!

Number Of Ingredients 7

2 cups nonfat dry milk powder
3/4 cup cornstarch
2 tablespoons dried onion flakes
1/2 teaspoon ground black pepper
1/4 cup chicken bouillon powder
1 teaspoon dried basil (optional)
1/4 teaspoon dried thyme, more to taste

Steps:

  • Using an air tight container combine dry milk, cornstarch, onion flakes, pepper and chicken bouillon.
  • If desired also add basil and thyme.
  • Mix well.
  • When using the mix combine 1/3 cup of the mix with 1 1/4 cups of water in saucepan.
  • Cook and stir until thickened.

3/4 cup cornstarch
1/4 cup low-sodium instant chicken bouillon granules or 1/4 cup beef bouillon granules
1/2 teaspoon dried thyme
1/2 teaspoon dried basil

Steps:

  • In a medium bowl combine all ingredients and mix well with a wire whisk.
  • Store in an airtight container.
  • To make soup stir together 1/3 cup of the dry mix and 1& 1/4 cup water in a saucepan.
  • Cook and stir until thickened.
  • You can add 1 can of diced cooked chicken or turkey, frozen broccoli, or dried tomato powder or paste-- whatever you can think of.
  • You can boil dried mushrooms in the water called for for a cream of mushroom soup.
  • This mixture will make a total of 9 cans of condensed soup.

Homemade Condensed Cream of Chicken Soup image

I found this on a site called "Tammy's Recipes" and have found it to be a great substitute for canned "cream of" soups. It is different from the others on this site as it is not a dried mix, but an actual condensed soup like Campbell's. I like that you can adjust the amount of salt and fat to your liking, and that it doesn't have any chemical additives in it. I make it with 1% milk and low sodium or homemade broth. It is also cheaper than the canned stuff - I usually make a double recipe and freeze it in 1 and 1/4 cup amounts (10 ounces in each ziplock bag = I "can" of soup). Greasing the measuring cup with pam before putting the soup in makes it easier to pour it out into the bag. I have not tried yet, but I bet you could also make a good Cream of Mushroom with this recipe by using mushroom broth... Anyhoo - thanks to Tammy! One batch makes 2 "cans" worth - I usually double it to make 4 "cans" at a time.

Condensed Cream

This recipe comes from Keni on Group Recipes. I did not find it here after searching, and after trying it want to post it based on its simplicity and quality. The original recipe called for 1/4 cup "of" ingredient. I used chicken in this recipe, and the recipe makes the equivalent of one can of Condensed Cream Of Chicken soup. You can substitute the chicken for any "of" ingredient, i.e. mushroom, celery, onion, potato, broccoli, cauliflower, etc., and chicken stock with vegetable stock. I made Condensed Cream of Turkey soup using turkey stock and turkey from Thanksgiving left overs!

1/4 cup flour
1/2 cup chicken stock
1/2 cup milk (lowfat is okay)

Steps:

  • In small saucepan, put butter and the "of" ingredient and cook until soft, not just tender. If using chicken, just make sure it's cooked through.
  • Add flour and stir together. It will be thick and gooey.
  • Slowly add stock while stirring or whisking to avoid lumps.
  • Bring to a boil and cook a few minutes until thickened. If seems too thick, you can add a tsp or so more broth, just don't forget, you've still got milk to add.
  • Add milk, salt and pepper and stir until combined and thick. Remember this is a condensed version of the soup, it will be thick.
