Carne Guisado - Colombian Stewed Beef image

A delicious dish with beef, spices and tomatoes. Serve over rice with fried crispy plantains called 'patacon' and a simple salad with a twist of lime and olive oil, salt and pepper.

1 lb flank steak
2 tablespoons vegetable oil
4 garlic cloves
2 teaspoons ground cumin
6 roma tomatoes
2 medium onions
2 beef bouillon cubes (prefer Maggie or Knorr brand)
2 cups water
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Heat the oil in a skillet and sauté flank steak until browned.
  • Remove from the skillet and sauté chopped tomatoes, thinly sliced onions, minced garlic and cumin until veggies are tender.
  • Add the flank steak, water, bouillon, salt and pepper.
  • Allow to simmer on low until tender and meat pulls apart with a fork.
  • Pull the steak apart into bite sized pieces.
  • Allow the sauce to cook down to desired thickness for serving on rice, or add more water depending on how much it has cooked down.
  • Enjoy!

7 cloves garlic
3 medium carrots, chopped
1 red bell pepper, cored, seeded, and chopped
1 green bell pepper, cored, seeded, and chopped
1 small Spanish onion, chopped
1 habanero chile, chopped
2 cups chopped fresh cilantro leaves
1 gallon water
3 low-sodium chicken bouillon cubes
1 tablespoon ground cumin
Salt and pepper
One 3-to 4-pound chicken, cut into 8 pieces
1 small yucca, peeled and cut into 2-inch pieces
1 green plantain, peeled and cut into 2-inch pieces
5 all-purpose potatoes, halved
2 ripe plantains, peeled and cut into 3-inch pieces
4 ears corn, cut in 3 pieces

Steps:

  • In a blender, puree the garlic, carrots, peppers, onion, chile, and 1 cup cilantro.
  • In a large pot, combine the puree with the water, bouillon cubes, and cumin, and season with salt and pepper. Bring to a boil, lower the heat, and simmer for 30 minutes.
  • Add the chicken and simmer for another 20 minutes.
  • Add the yucca and green plantain and simmer for 10 minutes more. Add the potatoes, ripe plantain, and corn and simmer for another 15 minutes.
  • In a blender, combine the remaining 1 cup cilantro and a little of the stew broth and puree. Stir the puree into the soup, season with salt and pepper, and serve.

1 tbsp olive oil
½ medium white onion, chopped
2 stalks green onion, chopped
2 garlic cloves, finely chopped
2 medium tomatoes, seedless, chopped
1 beef bouillon (optional)
½ tsp ground cumin
1½ tsp food coloring/all-purpose seasoning (Triguisar, Sazón Goya or homemade)
Salt & pepper to taste
2 lbs beef chuck cut into chunks
2-3 (480-720 ml) cups water
2 cubes (4 tbsp) Colombian aliños (optional)
4 medium russet potatoes, cut into quarters
4 medium pieces of cassava
Chopped cilantro for garnishing

Steps:

  • Heat the olive oil in a large pot over medium heat. Add the white onion and cook for about 3 minutes or until translucent. Add the green onion and garlic and cook for 1-2 more minutes. Now, add the chopped tomato and cook for 5-8 minutes or until it softens. Season with the beef bouillon, ground cumin, food coloring, salt and pepper.
  • Add the chunks of beef and water and mix well. Cover the pot, bring to a boil on high heat. Once it's boiling, reduce to medium low and cook for about 45 minutes.
  • Add the cubes of Colombian aliños, along with the potatoes and cassava. Cover once again and bring to a boil on high heat. Once it's boiling, reduce to medium low and cook for about 30 minutes or until the potatoes and cassava are cooked through. Taste for seasoning and add more salt if you think it needs it. Serve this stew with a side of white rice, avocado and a delicious Colombian simple salad.

1 stick cinnamon
1 large onion, cut into eighths
1 can (28 oz) Muir Glen™ organic whole peeled tomatoes with basil, undrained
8 dried apricots, cut in half
Chopped fresh parsley, if desired

Steps:

  • Remove excess fat from beef. Cut beef into 1-inch pieces. Sprinkle beef with salt and pepper. In 10-inch skillet, heat oil over medium-high heat. Cook beef in oil about 5 minutes, stirring occasionally, until brown.
  • In 4- to 5-quart slow cooker, mix beef and remaining ingredients except apricots and parsley. Cover; cook on Low heat setting 6 to 8 hours or until beef is tender.
  • Stir in apricots. Cover; cook on Low heat setting about 15 minutes or until apricots are softened. Discard cloves, bay leaf and cinnamon stick. Sprinkle stew with parsley.

Steps:

  • Remove excess fat from beef.
  • Cut beef into 1-inch pieces and sprinkle with salt and pepper to taste.
  • Heat oil in 10-inch skillet over medium-high heat.
  • Cook beef in oil about 5 minutes, stirring occasionally, until brown.
