AJOBLANCO (COLD SPANISH ALMOND SOUP)
This almond soup (ajo blanco) is one of the simplest and most nutritious of all Spanish summer soups, hailing from Andalusia. It's a cousin of gazpacho made with almonds and grapes.

- Combine almonds, olive oil, vinegar, water, garlic and salt in a blender; blend until smooth. Add more cold water while blending until desired consistency is reached. The soup should be thick, but still pourable.
- Chill soup for a minimum of 15 minutes. Serve garnished with grapes.

- remove skins.
- in a mortar, pound the garlic and add the almonds 1 by 1, adding at the same time cold water to prevent curdling.
- add a little salt and vinegar.
- add sufficient cold water to this mixture, mixing it in a bowl surrounded by ice cubes.
- Serve ice cold with chopped cucumber and chopped apple.

Steps:
- Place the stale bread into the blender and cover with the cold water and vinegar
- Add the strained almonds, diced apple, and garlic
- Pulse in the blender until smooth
- Taste and adjust for salt and vinegar
- Add ice if serving immediately (to make sure it's fully chilled)
- While blending, slowly add the olive oil
- Taste and adjust seasoning
- Chill in the fridge if you have time
- To serve, top with sliced green grapes

- Dice the onions, mince the garlic and chop the cauliflower into florets. Heat the olive oil in a pot over medium-high heat and add the diced onion. Cook the onion for 5 to 7 minutes until they begin to become translucent. Add the garlic and cauliflower florets and cook for 4 to 5 minutes until the garlic becomes fragrant.
- Add 3 cups (720 ml) of vegetable broth to the pot. Whisk the remaining cup (240 ml) of broth with the almond butter to make a paste before adding it to the pot along with the beans. Cook for 10 minutes until the cauliflower is tender.
- Puree the soup using an immersion blender or in batches in a blender. Return the soup to the pot and add the almond milk. Bring the soup to another boil. Once the soup is boiling, reduce the heat and simmer for 5 minutes.
- While the soup is cooking, dry roast the sliced almonds in a pan over medium-high heat, stirring constantly until the almonds are lightly browned. The almonds will burn very easily, so watch them carefully.

- The night before, put the blanched almonds into a bowl, cover with the mineral water and soak overnight.
- Bring 2 cups of water to a boil in a small pot. Add the garlic and boil for 1 minute, then drain the garlic and cool.
