Coconut Curry Soup with Shrimp image

This Coconut Curry Soup is infused with ginger, garlic, red curry paste and coconut milk. Loaded with succulent shrimp and vegetables, this tasty Thai soup is easy to make and ready in under 30 minutes!

2 tbsp coconut oil (vegetable or peanut oil can be use)
1 red bell pepper, thinly sliced
5 oz white button mushrooms, stems removed and sliced
2 tbsp garlic, minced
2 tsp ginger, minced or grated
2 tbsp red curry paste
4 cups chicken stock (or fish stock)
2 tbsp soy sauce
3 tsp fish sauce
1 (14 ounces) can regular coconut milk
1 teaspoon brown sugar
1/4 tsp pepper
1 lb large shrimp, deveined and peeled
1 tablespoon lime juice
¼ cup green onions, sliced
2 tbsp fresh basil, chopped

Steps:

  • Heat oil in a large soup pot over medium heat.
  • Add red bell pepper and saute for about 2 minutes. Add the mushrooms and saute for about 3 minutes.
  • Add garlic and ginger and saute just until fragrant. Stir in the red curry paste.
  • Stir in chicken stock, soy sauce, fish sauce, coconut milk, brown sugar and black pepper. Bring to a simmer.
  • Add the shrimp and cook just until the shrimp turns pink. This should take about 3 - 4 minutes. Do not overcook the shrimp or it will be rubbery!
  • Remove from the heat and stir in lime juice, green onions and basil. Serve immediately.

1 tablespoon canola oil
1/2 cup stemmed and sliced shiitake mushrooms
One 1-inch piece fresh ginger, grated
1 small shallot, finely diced
1 tablespoon red curry paste
One 15-ounce can unsweetened coconut milk, stirred
1 cup napa cabbage, chiffonade
2 medium carrots, julienned
1/2 block extra-firm tofu, large dice
1/2 tablespoon honey
3 scallions, green parts only, sliced on a bias
Juice of 1/2 fresh lime
Chopped fresh cilantro, for garnish
Kosher salt and freshly ground black pepper

1 pound fresh noodles, cooked al dente

Steps:

  • Heat the oil in a small saucepan over medium heat. Cook the mushrooms, ginger and shallots until soft, about 3 minutes. Stir in the red curry paste and cook 1 minute. Whisk in the coconut milk, and then add the cabbage, carrots and tofu and cook 5 minutes more. Remove from the heat and stir in the honey, scallions, lime juice and cilantro. Season with salt and pepper. Let cool slightly, and then toss over the noodles.

For the shrimp
1 lb raw shrimp, peeled
2 Tbsp coconut oil, divided
For the Soup:
½ medium onion, diced
2 tsp minced garlic
2 tsp minced ginger
4 Tbsp thai red curry paste
1 ½ cups chicken broth
2 cans (13.5oz) full-fat coconut milk
1 Tbsp fish sauce
2 tsp lemongrass*
½ tsp sea salt + additional, to taste
fresh ground black pepper, to taste
For serving
1 small head broccoli, chopped into florets and steamed
1 red pepper, sliced thin
¼ cup chopped scallions
2 Tbsp chopped cilantro
½ lime, sliced into 4 pieces
Optional - serve with some rice or quinoa.

Steps:

  • First: cook your protein: Head a medium/large soup pot with 1 Tbsp coconut oil. Once the pan is hot, carefully add the shrimp, then cook for about 1-2 minutes on each side (depending on their size), until the outsides are seared and pink but the inside isn't completely cooked through yet. Remove the shrimp from the pan and set aside.
  • Get the soup going: In the same soup pan, heat the second Tbsp coconut oil and add in the onions, ginger and garlic, plus a small pinch of salt. Sauté over medium heat for about 5 minutes until the onions start to become translucent. Stir every minute or so, so the onions don't burn.
  • Meanwhile, combine the coconut milk, 1 ¼ cups of the broth, fish sauce, and lemongrass in a small bowl. Whisk until any lumps in the coconut milk are broken up. Set aside.
  • When the onions are translucent (about 5-6 minutes), stir in the curry paste until any clumps are broken up (about 30 seconds); stir in the coconut mixture. Turn the heat to medium low and allow the flavors to combine for about 5 minutes.
  • Stir in your veggies (I used sliced red peppers and broccoli I quickly steamed in the microwave here!), turn the heat down to a simmer, and cook an additional 5 minutes.
  • Taste to adjust salt and pepper. Finally, add the shrimp (or your protein of choice) in just to warm them before you're ready to serve.
  • Assemble your soup bowls: Ladle the curry soup with broccoli and peppers into each bowl, and if you like, scoop some cauliflower rice or regular rice smack dab in the middle of the soup. Garnish each bowl with chopped cilantro, scallions, and a slice of lime (to be squeezed over the whole thing)!

Steps:

  • Heat 1 tablespoon olive oil in a large Dutch oven over medium heat. Season shrimp with salt and pepper. Add shrimp to pot and cook 2 to 3 minutes or until pink, turning halfway through. Set aside.
  • Add remaining olive oil, bell pepper, onion, and garlic to pot. Cook, stirring occasionally, about 3 minutes or until tender. Stir in curry paste and ginger. Cook 1 minute, or until fragrant.
  • Stir in stock, coconut milk, and rice, scraping any browned bits from the bottom of the pot.
  • Bring to a boil over high heat; reduce heat and cook, stirring occasionally, until reduced, about 10 minutes. Stir in fish sauce and brown sugar. Remove from heat.
  • Using an immersion blender, puree soup in pot. Or carefully transfer soup in batches to a large food processor or blender, covering opening with a dish towel, and blend until pureed. Return soup to pot.
  • Stir in green onions, cilantro, basil, and lime juice. Divide soup evenly among 6 bowls and top each bowl with 3 shrimp. Serve immediately.

peanut oil or vegetable oil, for frying
1/4 cup cornstarch
3 large egg whites
kosher salt
fresh ground black pepper
2 cups flaked coconut
1 1/2 lbs large shrimp, peeled with tails on
red curry paste, recipe below
1 green onion, white and green part, chopped
fresh mint leaves, hand-torn
2 tablespoons vegetable oil
2 tablespoons Thai red curry paste
1 cup unsweetened coconut milk
1 lime, juice of

Steps:

  • Shrimp:.
  • Heat 3" of oil in a large deep skillet or heavy pot to 325°F.
  • In a small bowl, mix the cornstarch, egg whites, salt and pepper until foamy. Spread the coconut out in a pie dish.
  • Dredge the shrimp with the cornstarch/egg white mixture; shake off any excess.
  • Press the shrimp into the coconut flakes, then turn shrimp over and press into coconut again to coat both sides.
  • Deep-fry the shrimp in batches until the coconut is golden brown, about 2-3 minutes.
  • Using tongs or a slotted spoon, remove the shrimp to paper towels to drain.
  • Arrange the shrimp on a platter, serve immediately with Red Curry Sauce, and garnish with green onion and mint.
  • Red Curry Sauce:.
  • Place a small pot over medium heat and coat with the oil.
  • Stir the red curry paste into the pan, and fry until aromatic.
  • Slowly pour in the coconut milk, and continue to stir to incorporate.
  • Add the lime juice (and 1 of the squeezed out halves for added flavor) and cook for 5-10 minutes to thicken.
  • Pour the sauce into a nice serving bowl and serve with the coconut shrimp.
  • Makes 1 cup.
