COCONUT FLOUR DROP BISCUITS

Number Of Ingredients 7

1/2 c Coconut flour
1/2 tsp Sea salt
4 Large eggs
2 tsp Apple cider vinegar
2 1/2 tbsp Unsweetened applesauce
2 1/2 tbsp Honey
1/2 c Coconut oil

Steps:

  • Mix together wet ingredients in a small bowl (eggs, vinegar, applesauce, honey, and coconut oil).
  • Mix together dry ingredients in a small bowl (coconut flour and sea salt).
  • Slowly add dry ingredients to wet ingredients and mix well until batter is smooth and creamy.
  • Place batter in fridge for 10-15 minutes to allow it to firm up for better handling.
  • Meanwhile, line baking sheet with parchment paper and preheat oven to 350 degrees.
  • Once batter has firmed up to soft serve ice-cream consistency, use tablespoon or small ice cream scoop to scoop out batter and "drop" biscuits onto lined baking sheet.
  • Make sure each biscuit is a few inches apart.
  • Bake for 20 minutes (or until toothpick comes out clean).
  • Allow to cool before serving.
  • Serve with almond butter for a rich treat or warm with grass-fed butter along side a grilled dinner.

I hope you will enjoy these unique biscuits. The biscuits have a nice delicate banana flavour. To make this sweeter you could add 1/4 cup of milk chocolate or butterscotch chips. Serve these with a simple fruit salad, you will not be disappointed.

Number Of Ingredients 10

2 cups white flour
1 tablespoon fine sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/8 cup toasted coconut flakes
1/4 cup butter, cold
3/4 cup milk, cold
1/4 teaspoon vanilla
1 large banana, mashed

Steps:

  • Preheat oven to 400 degrees.
  • Combine, flour, sugar, baking powder, soda, salt and coconut in a large bowl.
  • Cut in butter until crumbly, set aside.
  • Add the milk, vanilla and banana together.
  • Make a well in the center of the flour bowl and pour in milk mixture.
  • Stir to moisten only.
  • Drop dough by spoonful onto greased cookie sheet.
  • Bake at 400 degrees for 15 - 20 minutes.
  • Serve hot.

4 large eggs
1/4 c butter, melted
1/4 c honey
1/4 tsp salt
1/3 c flour, coconut
1/4 tsp baking powder

Steps:

  • 1. Blend together eggs, butter, honey, and salt. Combine coconut flour with baking powder and whisk into batter until there are no lumps remaining.
  • 2. Drop batter by the spoonful onto greased cookie sheet. Bake at 400 degrees for 14 to 15 minutes.
  • 3. Variation...add 1/4 teaspoon onion powder and 1/2 c sharp cheddar cheese shredded.
