This incredibly easy energy coconut almond energy bites recipe is packed full of nutrition and kid-approved! You'll see that it will become a go-to snack in your house.

1 cup rolled oats
½ cup any nut or seed butter (almond, peanut, soy nut, sunflower, pumpkin seed, etc.)
2 tbsp hempseeds or ground flaxseeds
2 tbsp honey
2 tbsp chocolate chips
2 tbsp coconut
2 tbsp chopped almonds

Steps:

  • Line a baking sheet with parchment paper.
  • In a large bowl, combine oats, nut or seed butter, seeds, honey, and your choice of add-ins. Stir to combine.
  • Using a rounded teaspoon, scoop out the oat mixture and roll it tightly into bite-size balls. Place on the prepared baking sheet. Repeat until the oat mixture is used up. It should make 12 bites.
  • Place the baking sheet in the freezer for 1 to 2 hours, then transfer the bites to a freezer-safe container for up to 4 months. You can eat them frozen or at room temperature!

If you like the classic chocolate no-bake cookies, these might be right up your alley. These cookies are loaded with coconut and oatmeal and held together with a mixture of fudgy, decadent chocolate and almond butter. If you prefer a stronger almond flavor, feel free to substitute almond extract in place of the vanilla extract. Yummy, chewy and rich--these cookies beg to be paired with a tall glass of ice-cold milk. Yum!

2 cups sugar
1/4 cup baking cocoa
1/2 teaspoon salt
1/2 cup milk
1/2 cup butter, salted
1 tablespoon corn syrup
1/4 cup almond butter
1 teaspoon vanilla extract
1 teaspoon almond extract
2 cups quick-cooking oatmeal
1 1/2 cups unsweetened flaked coconut

Steps:

  • In a large saucepan, stir together sugar, cocoa and salt. Then stir in milk.
  • Cut butter into 1 tbs. chunks and add it to the saucepan as well as the corn syrup. Place saucepan over medium-high heat, stirring occasionally until mixture reaches a slow-rolling boil. Boil for 3 minutes, stirring constantly as to avoid burning on the bottom of the pan.
  • Remove pan from heat. Stir in almond butter and vanilla until smooth.
  • Stir in oatmeal and coconut until thoroughly incorporated, and mixture begins to stiffen.
  • Immediately drop by teaspoonfuls onto waxed paper. Allow to cool for at least 1 hour to ensure cookies harden properly.
  • Store in an air-tight container and enjoy!

1 cup flour
1/2 cup finely shredded or flaked coconut
1/2 cup butter or 1/2 cup margarine
3 tablespoons granulated sugar
confectioners' sugar, for dusting

Steps:

  • Combine all ingredients except Confectioners' sugar and work to form a stiff dough.
  • Cut dough into quarters. On a lightly floured surface, roll each piece into a rope about 1/2 inch in diameter.
  • Cut ropes into 2 inch long pieces. Place on a greased cookie sheet and bake in a preheated 350F oven until golden brown, about 12 to 15 minutes.
  • Remove cookies to a rack to cool. Store airtight in a cool place. May be frozen. Dust with Confectioners' sugar just before serving. Makes about 30 pieces.

  • In a food processor with the S blade attachment, add all the ingredients: unsweetened coconut, maple syrup, unsweetened coconut milk, and melted coconut. The order doesn't matter.
  • Blend on high speed until all ingredients come together and form a sticky batter. It could take up to 1 minute. You may have to stop the food processor, scrape down the side of the bowl with a spatula and repeat until the coconut sticks to all ingredients. If it too dry - this may happen if you used thicker coconut (shredded/chips) - add 1 extra tablespoon of coconut milk.
  • Spread the coconut batter evenly in the tray, using your hands or a spatula to press the batter firmly all over the bottom of the tray. If you want to make almond joy bars, press 16 raw almonds, one per square you will cut.
