VEGAN AFRICAN PEANUT STEW IN THE INSTANT POT®
One of my go-to favorites; hubby would eat it weekly, and he's not vegan. Serve with cilantro and chopped peanuts.

Turn pressure cooker off.
- Add tomatoes and peanut butter. Stir until dissolved. Add water and stir. Close and lock the lid with vent set to sealing. Select manual mode and set timer for 10 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Unlock and remove the lid. Stir in collard greens.
- Place cilantro and chopped peanuts in separate bowls and serve alongside stew.

AFRICAN PEANUT SWEET POTATO STEW
Back when I was in college, my mom made an addicting sweet potato and peanut stew. I shared it with friends, and now all of us serve it to our own kids. They all love it, of course. -Alexis Scatchell, Niles, Illinois

AFRICAN GROUND NUT STEW
Steps:
- Saute onions until translucent in a large saucepan. Add chicken pieces and saute until golden but not necessarily cooked through. Add coconut milk and stock and bring to a simmer. Once the liquid is simmering, add the peanut butter a spoonful at a time and keep stirring until it is well incorporated. The sauce should be fairly thick (stew like, not soup like), so you may need to add more peanut butter or loosen with water depending upon the ingredients you use. Add chopped collards/greens and cook until very wilted. Season, to taste, with chili paste/sambal oelek and salt.
- Serve over rice or other starch.
- Traditional African stiff porridge would be served on the side and used to dip into the sauce with one's hands. Pull off a piece the size of a meatball, use your thumb to make an impression in the porridge and use the divet to scoop up the stew and pop it into your mouth! Enjoy.
CLAY POT AFRICAN GROUNDNUT STEW
This is based on a recipe from The Best of Clay Pot Cooking cookbook. The intro says, "In Africa, peanuts are called groundnuts and are often pounded to a paste and used in soups, stews, and sauces. Here, peanut butter, tomatoes, and spices combine to make a creamy, rich sauce for this beef stew. Serve it with steamed collard greens or kale or a leafy green salad."

- Add half the beef and brown well on all sides.
- Place the meat in a soaked 3-quart clay pot.
- Brown remaining beef in additional 1 tablespoon oil. Add this batch to pot.

- Add all the sauce ingredients to a blender or food processor and pulse to combine. Alternatively, you can place them in a large mixing bowl and whisk to combine. Set aside.
- Notes before you begin. If you are using meat, brown it in the pan first, before adding the other ingredients.
- Set your Instant Pot to sauté and add cooking oil. When oil is hot, add onion and garlic, and sauté until onions are brown, about 2 minutes. NOTE: If adding meat, first brown the meat in the oil, then add onion and garlic, and continue to sauté until onions are brown, about 2 minutes.
- Place diced sweet potatoes, carrots, and broth into the crock pot. Set on low while you make the rest of the stew.

- Put in all ingredients except peanut butter into your Instant Pot and set your cooker to High Pressure for 10 minutes. I used a frozen block of chicken thighs which took about 15 minutes, so just adjust cooking time based on what cut of meat you're using.
- Mix in the peanut butter a little at a time. Taste with each addition as your reward for cooking. Taste the peanut butter too, make sure it's good stuff.

- Trim the excess fat from the chicken thighs. Combine chicken, water, onion, garlic, carrots, salt, peppercorns and bay leaf in a soup pot or Dutch oven. Bring to a boil over medium-high flame, then reduce to medium-low and simmer, covered, for about 45 minutes.
- In a small bowl, stir about 1/2 cup of broth into the peanut butter and mix until smooth. Add peanut butter mixture to pot, along with the tomatoes, ginger, curry powder, cayenne pepper, crushed red pepper flakes and white wine, if using. Bring to a boil, then reduce heat and simmer, partially covered, for 20 minutes, to let the flavors meld, skimming off fat with a spoon, if necessary (I didn’t need to do this).
- Meanwhile, cook rice. Also meanwhile, separate the chicken meat from the skin and the bones. Cut the chicken into bite-sized chunks and return to the pot to warm through. Taste and adjust seasoning with salt.

- Yassa. If you ever travel to West Africa, this is a must-try. From Senegal, it is so good it has become popular throughout West Africa, and there is no doubt why.
- Thieboudienne. The national dish of Senegal, it is also found in Guinea Bissau, Guinea Conakry, Mali, Mauritania and the Gambia. Typically made using a firm whitefish either smoked or fresh, Thieb, or Tiep, can also be made with meat (tiep yappa) or chicken (tiep ganaar).

- Kedjenou. From the Ivory Coast, Kedjenou is a deliciously spicy meat and vegetable stew often made with guinea fowl or chicken. Slow-cooked in a sealed clay pot with little or no liquid, the resulting dish is juicy, flavorful and tender.
- Jollof. There are (sometimes heated) debates about the origins of jollof, but it is generally known as a Nigerian creation, with variations around Western Africa.
- Fufu. Fufu is a food made from fresh or fermented cassava, a staple in the region. The cassava is pounded into flour, then mixed with water and cooked over heat into a paste of varying textures depending on the meal you are serving it with or your preference.

- Maafe (West African Peanut Stew) Meaning ‘sauce’ in the Fula language, this delicious dish is hugely popular across West Africa with regional variations of course, but always containing a tasty peanut sauce (Peanut allergies?
- Egusi Soup. Variations of this delicious soup can be found all over West Africa, but it is hugely popular in Nigeria. What makes it unique is the use of protein- and fat-rich melon seeds (egusi) from specific plants, which are then dried and ground up and used as a thickener.
- Okra Soup/Stew. Indigenous to West Africa, okra can be found in a wide variety of dishes. This underestimated and misjudged mallow plant packs antioxidants, vitamins, minerals and fiber into its gooey little body.
