Vegan African Peanut Stew in the Instant Pot® image

One of my go-to favorites; hubby would eat it weekly, and he's not vegan. Serve with cilantro and chopped peanuts.

Time 1h6m

Yield 4

Number Of Ingredients 17

1 ½ teaspoons ground cumin
½ teaspoon ground cinnamon
¼ teaspoon cayenne pepper
¼ teaspoon dried red chile flakes
⅛ teaspoon ground cloves
1 teaspoon salt
2 medium sweet potato, cut into 1/2-inch pieces
1 cup diced yellow onion
½ cup diced red bell pepper
4 garlic cloves, minced
1 (3 inch) piece ginger root, peeled and minced
1 (28 ounce) can crushed tomatoes

AFRICAN GROUND NUT STEW

African Ground Nut Stew image

Provided by Food Network

Categories     main-dish

Time 45m

Yield 6 servings

Number Of Ingredients 8

1 onion, diced
2 to 3 pounds boneless chicken cut into chunks (I prefer thigh meat)
1/2 jar natural peanut butter (no sugar or stabilizers added)
1 can coconut milk (often in Asian grocery section)
2 quarts chicken stock, canned or homemade
1 large bunch collard or other greens, chopped fairly finely and after removing center ribs (frozen, drained greens can be used as a substitute)
Sambal oelek, to taste (hot chili paste from Asian grocery section)
Cooked rice, as an accompaniment

Steps:

  • Saute onions until translucent in a large saucepan. Add chicken pieces and saute until golden but not necessarily cooked through. Add coconut milk and stock and bring to a simmer. Once the liquid is simmering, add the peanut butter a spoonful at a time and keep stirring until it is well incorporated. The sauce should be fairly thick (stew like, not soup like), so you may need to add more peanut butter or loosen with water depending upon the ingredients you use. Add chopped collards/greens and cook until very wilted. Season, to taste, with chili paste/sambal oelek and salt.
  • Serve over rice or other starch.
  • Traditional African stiff porridge would be served on the side and used to dip into the sauce with one's hands. Pull off a piece the size of a meatball, use your thumb to make an impression in the porridge and use the divet to scoop up the stew and pop it into your mouth! Enjoy.

CLAY POT AFRICAN GROUNDNUT STEW

Clay Pot African Groundnut Stew image

This is based on a recipe from The Best of Clay Pot Cooking cookbook. The intro says, "In Africa, peanuts are called groundnuts and are often pounded to a paste and used in soups, stews, and sauces. Here, peanut butter, tomatoes, and spices combine to make a creamy, rich sauce for this beef stew. Serve it with steamed collard greens or kale or a leafy green salad."

Time 1h30m

Yield 4 serving(s)

Number Of Ingredients 14

3 tablespoons canola oil
2 lbs lean beef chuck, cut into 1 1/2-inch cubes

2 garlic cloves, minced
1 1/2 inches fresh ginger, peeled & minced

Steps:

  • In a large, 12-inch skillet, heat 1 tablespoon of the oil over medium-high heat.

  • Place the meat in a soaked 3-quart clay pot.

  • Trim the excess fat from the chicken thighs. Combine chicken, water, onion, garlic, carrots, salt, peppercorns and bay leaf in a soup pot or Dutch oven. Bring to a boil over medium-high flame, then reduce to medium-low and simmer, covered, for about 45 minutes.
  • In a small bowl, stir about 1/2 cup of broth into the peanut butter and mix until smooth. Add peanut butter mixture to pot, along with the tomatoes, ginger, curry powder, cayenne pepper, crushed red pepper flakes and white wine, if using. Bring to a boil, then reduce heat and simmer, partially covered, for 20 minutes, to let the flavors meld, skimming off fat with a spoon, if necessary (I didn’t need to do this).
  • Meanwhile, cook rice. Also meanwhile, separate the chicken meat from the skin and the bones. Cut the chicken into bite-sized chunks and return to the pot to warm through. Taste and adjust seasoning with salt.

20 MUST-TRY WEST AFRICAN FOODS - CHEF'S PENCIL

  • Yassa. If you ever travel to West Africa, this is a must-try. From Senegal, it is so good it has become popular throughout West Africa, and there is no doubt why.
  • Thieboudienne. The national dish of Senegal, it is also found in Guinea Bissau, Guinea Conakry, Mali, Mauritania and the Gambia. Typically made using a firm whitefish either smoked or fresh, Thieb, or Tiep, can also be made with meat (tiep yappa) or chicken (tiep ganaar).
  • Ndole. One of the national dishes of Cameroon, ndole is a beautiful blend of bitter leaf greens, spices, a lot of oil and protein through groundnuts, as well as the optional addition of meat or fish.
  • Kedjenou. From the Ivory Coast, Kedjenou is a deliciously spicy meat and vegetable stew often made with guinea fowl or chicken. Slow-cooked in a sealed clay pot with little or no liquid, the resulting dish is juicy, flavorful and tender.
  • Jollof. There are (sometimes heated) debates about the origins of jollof, but it is generally known as a Nigerian creation, with variations around Western Africa.
  • Fufu. Fufu is a food made from fresh or fermented cassava, a staple in the region. The cassava is pounded into flour, then mixed with water and cooked over heat into a paste of varying textures depending on the meal you are serving it with or your preference.
  • Alloco. A popular street food, alloco, as it is called in the Ivory Coast, is very simply fried plantains. But serve it with a meal and it becomes a tasty side with a deliciously spicy chili sauce that brings all the flavors on the plate to life.
  • Maafe (West African Peanut Stew) Meaning ‘sauce’ in the Fula language, this delicious dish is hugely popular across West Africa with regional variations of course, but always containing a tasty peanut sauce (Peanut allergies?
  • Egusi Soup. Variations of this delicious soup can be found all over West Africa, but it is hugely popular in Nigeria. What makes it unique is the use of protein- and fat-rich melon seeds (egusi) from specific plants, which are then dried and ground up and used as a thickener.
  • Okra Soup/Stew. Indigenous to West Africa, okra can be found in a wide variety of dishes. This underestimated and misjudged mallow plant packs antioxidants, vitamins, minerals and fiber into its gooey little body.
