A delicious source of fiber! My family have them almost every morning. Great healthy muffins! You may substitute dates for the raisins if you wish.

1 ½ cups wheat bran
1 cup buttermilk
⅓ cup vegetable oil
1 egg
⅔ cup brown sugar
½ teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
½ cup raisins

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper muffin liners.
  • Mix together wheat bran and buttermilk; let stand for 10 minutes.
  • Beat together oil, egg, sugar and vanilla and add to buttermilk/bran mixture. Sift together flour, baking soda, baking powder and salt. Stir flour mixture into buttermilk mixture, until just blended. Fold in raisins and spoon batter into prepared muffin tins.
  • Bake for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Cool and enjoy!

1 1/2 cups wheat bran or 1 1/2 cups oat bran
1 cup buttermilk (or soy buttermilk, Soy "Buttermilk", to make them dairy-free)
1/3 cup vegetable oil (can replace all or some with applesauce to make them lower fat)
1 eggs or 1/4 cup Egg Beaters egg substitute
2/3 cup brown sugar
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup raisins

Steps:

  • Preheat oven to 375 degrees.
  • Grease muffin cups or line with paper muffin liners.
  • Mix together wheat bran and buttermilk; let stand for 10 minutes.

I have made many bran muffins over my years of baking this one has become my all-time favorite, and when you make these you will see why! ---throw in some fresh blueberries in place of the raisins if desired, I have even made these using Raisin Bran cereal and also using wheat bran --- you will love these muffins!

1 1/2 cups all-bran cereal (this will NOT work using Bran Buds cereal)
1 cup buttermilk (low-fat is okay)
1/3 cup vegetable oil (or melted butter)
1 large egg, beaten
3/4 cup brown sugar, packed (reduce sugar for a a less sweeter muffin)
2 teaspoons maple extract or 2 teaspoons use vanilla extract
1/2 cup all-purpose white flour
1/2 cup whole wheat flour (even better use 1 cup whole wheat flour)
1 1/4 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon (can use 1 teaspoon)
1/4 teaspoon ground nutmeg
1 cup raisins (or can use chopped dates)

Steps:

  • Preheat oven to 350°F.
  • Line 12 regular-size muffin tins with paper liners (or 7 jumbo muffin tins).
  • In a medium bowl mix together the All-Bran cereal with buttermilk; let sit for about 10-12 minutes stirring once.
  • In another bowl whisk together the oil, egg, brown sugar and vanilla until well blended, then add to the buttermilk mixture; mix to combine with a wooden spoon.
  • In another bowl mix together flour, baking powder, baking soda, salt and cinnamon and nutmeg; add to the wet mixture and mix JUST until blended using a wooden spoon or a small spatula (a few small lumps in the mixture are okay!).
  • Fold in raisins or dates.
  • Divide the batter evenly between the 12 muffin tins.
  • Bake for about 18-22 minutes, or until the muffins test done (if using jumbo muffin tins increase baking time).

1/4 cup All-Bran® Original or 1/4 cup Bran Buds® or 1/4 cup Kellogg's® corn flakes crumbs
1 cup all-purpose flour
1/8 teaspoon salt
1/4 cup shortening
5 tablespoons cold water

Steps:

  • 1. In medium mixing bowl, stir together KELLOGG'S ALL-BRAN cereal, flour and salt. Using pastry blender, cut in shortening until mixture resembles coarse crumbs. Sprinkle water over cereal mixture. Mix gently with fork until mixture holds together.2. On lightly floured surface, roll dough to 10-inch circle. Place in ungreased 9-inch glass pie plate. Trim and flute edges. Prick bottom and side with fork.3. Microwave on HIGH 3 minutes. Rotate and microwave on HIGH about 2 minutes longer or until center no longer appears doughy. Cool completely. Use for any refrigerated or frozen filling.

Fruitful Bran Muffins image

These muffins are a nice twist from plain bran muffins. Since they are garnished with either chopped apple or white chocolate chips they are quite visually pleasing. These muffins are not as sweet as some, which makes the bits of fruit stand out. Enjoy these muffins as is or with a little peanut butter, honey or jam. ------ Recipe created by me for RSC #9!

1 3/4 cups skim milk
2 teaspoons lemon juice
1/4 cup non-hydrogenated margarine
1 egg, lightly beaten
1 orange, rind of
1 3/4 cups whole wheat flour
1 1/3 cups all-bran cereal or 1 1/3 cups bran flakes, slightly broken up with your hands
1/3 cup brown sugar
1 teaspoon baking soda
1 teaspoon baking powder
2 1/2 teaspoons cinnamon
2/3 cup apple, finely chopped
3/4 cup carrot, grated
1/2 cup dried apricot, chopped
1/2-2/3 cup apples, coarsely chopped or 1/2-2/3 cup white chocolate chips

Steps:

  • Chop up apricots. Place in about 2/3 cup boiled water and let sit for about 20 minutes till plump and softened; drain all water out and set plumped apricots aside.
  • In a large bowl, combine milk, lemon juice, egg, and orange rind.
  • In a medium bowl combine flour, All-Bran cereal, brown sugar, baking soda, baking powder and cinnamon.
  • Add flour mixture to the wet ingredients and stir until almost mixed; fold in grated carrots, chopped apple and apricots just till mixed.
  • Spray muffin tin with cooking spray; fill muffin tins until almost full and sprinkle chopped apples or white chocolate chips on top of each muffin.
  • Bake at 375°F for 15 to 20 minutes or until toothpick inserted into the centre of the muffin comes out clean; let stand in pan for a couple of minutes before cooling muffins on a wire rack.

2 cups Kellogg's all-bran cereal
1 1/4 cups water
1 egg
1/4 cup oil
1 1/4 cups flour
1/2 cup sugar
1 tablespoon baking powder
1/4 teaspoon salt
1 cup blueberries
granola cereal, to sprinkle on top (optional)

Steps:

  • Combine cereal and water. Let stand for 5 minutes.
  • Add egg and oil, beat well.
  • Add the flour, sugar, baking powder and salt. Beat just until combined.
  • Add the blue berries last.
  • Put into muffin pans sprayed with Pam. Sprinkle the granola on top. 1 tsp per muffin is good!
  • Bake at 400 degrees Fahrenheit for 20 minutes or until golden brown.

1/4 cup water
1 tablespoon baking cocoa
1/2 cup all-purpose flour
1/2 cup sugar
1/2 teaspoon baking powder

Dash salt
2 tablespoons beaten large egg
2 tablespoons 2% milk
FROSTING:
2 tablespoons butter
4-1/2 teaspoons 2% milk
1 tablespoon baking cocoa
3/4 cup confectioners' sugar
1/4 teaspoon vanilla extract
2 tablespoons chopped pecans, toasted, optional

Steps:

  • In a large saucepan, bring the butter, water and cocoa just to a boil. Immediately remove from the heat. Combine the flour, sugar, baking powder, cinnamon and salt; stir into butter mixture. Add egg and milk; mix well. , Pour into two 5-3/4x3x2-in. loaf pans coated with cooking spray. Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to a wire rack to cool completely. , In a small microwave-safe bowl, melt butter; add milk and cocoa. Microwave on high for 30 seconds. Whisk in confectioners' sugar and vanilla until smooth. Spread over cakes. Sprinkle with pecans if desired.
