1 pound beef top round steak, cut into 1/2-inch cubes
1 tablespoon canola oil
3 cans (14-1/2 ounces each) beef broth
2 cups water
1/3 cup medium pearl barley
3/4 teaspoon salt
1/8 teaspoon pepper
1 cup chopped carrots
1/2 cup chopped celery
1/4 cup chopped onion
3 tablespoons minced fresh parsley
1 cup frozen peas

Steps:

  • In a large saucepan, heat oil over medium heat. Brown beef on all sides; drain. Stir in broth, water, barley, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 1 hour. , Add carrots, celery, onion and parsley; cover and simmer until meat and vegetables are tender, 30-40 minutes. Stir in peas; heat through.

2/3 cup pearl barley
1 1/2 lbs lean ground beef
1 medium onion, chopped
4 large garlic cloves, minced (optional, can use more I always do)
1 -2 teaspoon dried thyme (optional or to taste)
4 carrots (peeled and finely chopped)
2 celery ribs, diced
3 (10 1/2 ounce) cans beef consomme, undiluted
2 cups water
1 (10 1/2 ounce) can tomato soup, undiluted
1 -2 bay leaf
salt & freshly ground black pepper

Steps:

  • In a large Dutch oven, brown the ground beef with onion, garlic and thyme (if using) until meat is no longer pink.
  • Add the remaining ingredients to pot.
  • Cover and simmer for 1-1/2 to 2 hours, adding salt and pepper to suit taste.

1 medium onion, chopped (1/2 cup)
2 teaspoons finely chopped garlic
2 pounds beef boneless chuck, trimmed of fat and cut into 1-inch pieces
1 teaspoon salt
1/8 teaspoon pepper
2 medium carrots, cut lengthwise in half, then cut into 1/4-inch slices
1 cup uncooked pearl barley
2 cartons (32 ounces each) Progresso™ beef flavored broth
1 1/2 cups frozen sweet peas (from 1-pound bag)
1 cup frozen whole kernel corn (from 1-pound bag)

Steps:

  • Heat oil in 12-inch skillet over medium-high heat. Cook onion, garlic, beef, salt and pepper in oil 7 to 10 minutes, stirring occasionally, until beef is browned.
  • Spoon beef mixture into 6-quart slow cooker. Stir in carrots, barley and broth.
  • Cover and cook on Low heat setting 8 to 9 hours.
  • Increase heat setting to High. Stir in frozen peas and corn. Cover and cook 8 to 10 minutes or until peas and corn are hot.

1 1/2 lbs extra lean ground beef (I usually use beef bones from chuck or other roasts or steaks, with some meat left on them)
1 onion, chopped
1 garlic clove, minced
4 carrots, diced
3 stalks celery, diced
1 (28 ounce) can diced tomatoes
3 1/2-4 cups beef broth
2 cups water
1 (10 3/4 ounce) can tomato soup
1 bay leaf

2 lbs chuck roast, (trimmed of excess chunks of fat, cut into 3/4-inch cubes)
3 Tbsp olive oil
1 1/2 cups chopped carrots ((about 3))
1 cup chopped celery ((about 2 ribs))
2 cups chopped yellow onion ((1 large))
3 Tbsp tomato paste
1 1/2 Tbsp minced garlic ((4 cloves))
2 (32 oz) cartons low-sodium chicken broth (or beef broth)
1 Tbsp low-sodium soy sauce
2 tsp Worcestershire sauce
2 tsp minced fresh rosemary, (or 1/2 tsp dried)
2 tsp minced fresh thyme, (or 1/2 tsp dried)
Salt and freshly ground black pepper
1 cup pearl barley
3 Tbsp minced fresh parsley

Steps:

  • Heat 1 Tbsp olive oil in a large pot over medium-high heat. Dab beef dry and add 1/2 or 1/3 of beef, adding just enough not to overcrowd. Season with salt and pepper. Let sear until golden brown on bottom, about 3 minutes then flip and cook 1 minute longer.
  • Transfer beef in pot to a plate along with juices and repeat process with remaining beef adding in another 1 Tbsp oil to pot.
  • Add 1 Tbsp oil to now empty pot. Add carrots, celery and onion and saute 3 minutes.
  • Add tomato paste and garlic and saute 1 minute longer.
  • Pour in broth, soy sauce, Worcestershire sauce, rosemary, thyme and season with salt and pepper to taste. Return beef to pot.
  • Bring mixture to a simmer then reduce heat to low, cover and simmer until beef is fairly tender, about 45 - 60 minutes.
  • Add barley, cover and simmer until cooked through and beef is tender, about 45 - 60 minutes longer.
  • Stir in parsley. Serve warm.

3 pounds beef chuck - blade cut - 2 1/4 pounds ground and 3/4 pound diced (may sub pork ** see notes below)
2 Tablespoons butter
2 Tablespoons olive oil
4 medium stalks celery (chopped)
2 medium onions (chopped)
5 cloves garlic (chopped)
1/4 cup Italian parsley (chopped)
Thyme - 4 sprigs
3 bay leaves
1 quart Spicy V-8 Juice
1/4 cup red wine
2 cups beef broth
3/4 cup barley -- not instant (***see notes if gluten intolerant. )
Salt and Pepper to taste

Steps:

  • In a Dutch oven or heavy soup pot, over medium-high heat, brown the beef in 1 Tablespoon butter and 1 Tablespoon olive oil. Salt and pepper the meat as it is browning. Once the beef is browned remove it and all the juices and place in a heat proof dish.
  • In the Dutch oven melt the remaining butter in the olive oil and sauté the celery and onion until they become soft and translucent. Do not brown. Stir in the garlic; sauté 1 minute.
  • Add the parsley, thyme sprigs and bay leaves . Continue to sauté for another minutes.
  • Add the beef back into the pot and mix thoroughly. Once all of the ingredients are evenly mixed add the Spicy V-8 Juice, beef broth and red wine. Heat to a low boil, add the barley and let it come to a simmer and cover.
  • Continue to cook covered stirring occasionally. Simmer for 4 - 5 hours until meat is tender and barley is done.
  • Taste to make sure the salt and pepper is to your taste.
  • In a Dutch oven or heavy soup pot, over medium-high heat, brown the beef in 1 Tablespoon butter and 1 Tablespoon olive oil. Salt and pepper the meat as it is browning. Once the beef is browned remove it and all the juices and place in a slow cooker.
  • In the Dutch oven melt the remaining butter in the olive oil and sauté the celery and onion until they become soft and translucent. Do not brown. Stir in the garlic; sauté 1 minute.

  • Check to make sure the meat is tender and the barley is done. Taste to make sure the salt and pepper is to your taste.

1 ½ cups chopped onion
1 cup chopped celery

Warm-up during those cold winter months with this delicious and easy to make traditional beef and barley soup recipe.

8 ounces roughly chopped bacon
2 pounds cubed beef stew meat
2 tablespoons olive oil (optional)
2 peeled small diced yellow onions
3 thinly sliced leeks
4 finely minced garlic cloves
3 peeled medium diced carrots
3 medium diced celery stalks
1 peeled medium diced parsnip
1 peeled medium diced turnip
2 bay leaves
12 cups beef stock
2 cups pearl barley
¼ cup chopped parsley
1 tablespoon chopped rosemary
1 tablespoon chopped thyme
sea salt and pepper to taste

Steps:

  • In a large pot over medium heat, add in the bacon and cook until crisp and brown, about 8-10 minutes.
  • Remove the bacon lardons and set aside and add the cubed beef into the pot and turn the heat up slightly to medium-high and cook until the beef is browned and cooked through, about 10 minutes.
  • Take the beef out and set it to the side.
  • If there is not enough rendered bacon or meat fat in the pot then add in the optional olive oil and over low heat caramelize the onions and leeks for 30-35 minutes or until they are well browned. Stir occasionally.
  • Add in the garlic and cook for 1 to 2 minutes before adding back in the beef, bacon, carrots, celery, parsnips, turnips, bay leaves, and beef stock and cook over low to medium heat for 60 minutes or until the vegetables and beef are tender.
  • Pour in the barley, give it a stir, and cook for 30-35 minutes over low to medium heat for 30-35 minutes or until the barley is cooked.
  • Finish with herbs, salt, and pepper, and serve.

1½ pounds beef stew meat (cut into bite sized pieces)
1 onion (chopped into ½-inch pieces)
2 carrots (chopped into ½-inch pieces)

2 tablespoons tomato paste
8 cups beef stock
1 teaspoon dried thyme
1 bay leaf
¾ cup pearl barley
salt (to taste)

Steps:

  • Pre-heat a stockpot or Dutch oven over medium-high heat. Drizzle in a little olive oil and, in 2 batches so you don't over-crowd the pot, brown the stew meat on all sides, seasoning with salt and pepper as you go. Set the browned meat aside.
  • Add the onion, carrot and celery to the pot, sauté until tender and starting to brown- about 5 minutes. Add the garlic, tomato paste, thyme and bay leaf and cook for another couple of minutes. Deglaze the pot by adding the beef stock and scraping any brown bits from the bottom of the cooker.

Salt and freshly ground pepper*
1/4 cup oil, divided
1 cup diced onion
2 cloves garlic, finely chopped

4 cups beef broth
4 - 6 sprigs fresh thyme or 1/2 tsp dried thyme, crumbled
1 bay leaf
1/4 cup pot barley

  • Lightly sprinkle beef with salt and pepper. Heat 1 tbsp oil in a Dutch oven over medium-high heat. Add beef in batches and brown on all sides, adding an additional 1 tbsp oil as necessary. Transfer beef to a plate.
  • Reduce heat to medium. Add remaining 2 tbsp oil to pan. Add onion and sauté, scraping to loosen browned bits, until softened, about 5 minutes. Add garlic and sauté for 1 minute. 1 lb. stewing beef cubes
4 cups water
3/4 tsp Kosher salt
2 1/2 Tbsp red wine vinegar
1 Tbsp olive oil
1 clove garlic (roughly chopped)
1/2 cup onion (diced)
1 cup celery (finely diced)
1 cup carrots (diced or thinly sliced)
1/3 cup red wine (optional, can omit)
1/3 cup tomato paste (1/2 of a small can)
Beef (from above)
4 cups beef broth (plus more, as needed)
1/3 cup pearl barley
1 bay leaf
Dash Worcestershire Sauce
3-4 Tbsp fresh parsley (finely chopped)
Salt and pepper (as needed, to taste)

Steps:

  • Pre-cook the beef: Combine the water, beef, red wine vinegar and salt in a large pot. Bring to a boil, then reduce heat to low and gently simmer for 1 1/2 hours. Drain, discarding liquid and reserving the beef. Allow to cool slightly, then chop into desired size for soup (or make ahead and refrigerate until needed).
  • For the soup: In a large soup pot, heat the oil over medium heat. Add the garlic, onion, celery and carrots to the pot and cook, stirring, for 6-7 minutes. Add red wine to the pot and allow to cook until mostly evaporated. Add the tomato paste and stir in. Cook the tomato paste with the vegetables for about 1 minute. Add the beef broth, cooked beef pieces, pearl barley and bay leaf. Stir to combine.
  • Bring mixture to a boil, then reduce heat to medium low and allow soup to simmer gently for 60-75 minutes. Watch the soup as it cooks and stir regularly. As the barley cooks, it will absorb the liquid. You may find that you need to add additional beef broth to the pot as the soup cooks. You don't want the soup to get too dry or the barley will sink to the bottom of the pot and may scorch. Ideally, add a bit of broth more often, rather than adding a lot all at one time, so you don't end up with too much broth in the pot and a thinner soap than you want.
  • Taste test the soup to make sure the barley and carrots are tender. If not, cook a little bit longer. If soup is too thick, add a bit more broth at the end of cooking to thin it as desired. Stir in the Worcestershire sauce and parsley. Taste soup for seasoning and add additional salt and some freshly ground pepper, to taste.

2 pounds beef stew meat ((cubed chuck roast))
1 teaspoon salt
1 teaspoon black pepper
2 tablespoons olive oil
1 medium yellow onion (minced)
2 cloves minced garlic
2 tablespoons tomato paste
8 cups beef broth
1/2 cup red wine
2 tablespoons Worcestershire sauce
1 1/2 pounds red potatoes (cut into bite-sized chunks)
4 carrots (peeled and sliced)
4 celery ribs (sliced)
4 bay leaves
2 sprigs fresh thyme
2 sprigs rosemary
1 teaspoon sugar
1/2 teaspoon dried oregano
1/2 teaspoon dried parsley
1/2 teaspoon paprika
1/2 cup pearl barley

Steps:

  • In a large pot over medium-high heat, heat olive oil. Add beef stew meat and season with salt and pepper. Sear until all sides are browned, about 8-10 minutes
  • Add in diced onion, minced garlic, and tomato paste, and cook 4-5 minutes, until fragrant.
  • Pour in the beef broth, dry red wine, and Worcestershire sauce to deglaze the pan. Add red potatoes, carrots, and celery. Season with bay leaves, sprigs of thyme and rosemary, sugar, parsley, paprika, and oregano.
  • Bring to a boil over high heat, then reduce heat to low and simmer, covered, for 60 minutes.
  • Add in the barley and let cook for another 60 minutes, stirring occasionally.
  • Remove thyme sprigs and bay leaves before serving.
  • Season with more salt and pepper to taste. Serve hot.

  • Preheat your oven to 220°C. Place the osso bucco, beef bones and onion halves on a baking tray. Season with salt and pepper and drizzle with olive oil. Bake for around 45 - 60 minutes, or until the meat has developed a deep brown colour
  • Take the tray out of the oven. Place a deep stock pot on high heat then pour in the red wine. Reduce the wine by half then place the browned meat, bones and onions to the pot. Cover with cold water and bring to the boil with the lid on. Reduce the heat to the lowest simmer possible, leaving the lid slightly adjar. Simmer the stock for 2 and half hours or more.
  • Strain the stock through a seive and set it aside to cool. Remove the meat from the osso bucco and shred into bite sized pieces, set aside. When the stock is cooled you can skim off any excess fat or impurities from the top.
  • To make the soup, bring the stock to the boil. Add the barley, tinned tomatoes, carrots and celery to the pot. Simmer on a low heat for 45 minutes to an hour, until the barley is soft. Stir in the reserved shredded meat and check for any additional salt and pepper at this point.

  • In a large dutch oven or heavy soup pot, heat 2 teaspoons of the olive oil over medium high heat. Add the mushrooms and a sprinkle of salt (about 1/4 teaspoon), cook and stir until mushrooms begin to brown and give up some of their liquid. Transfer the mushrooms to a small bowl.
  • Season the beef with with salt and pepper (about 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper. Heat 1 tablespoon olive oil in the pot. When the oil is hot and starts to shimmer and moiré, add the beef. Cook, stirring occasionally until browned, about 5 minutes. Transfer the beef to a bowl.
  • Add the remaining teaspoon of oil to the pot. Add chopped vegetables and stir to combine. Simmer on the stove for about 5 minutes or until the vegetables are slightly softened. Stir in the garlic, basil and oregano and cook for one minute until fragrant.
  • Add the beef and mushrooms back to the pot along with the tomatoes and broth. Heat to boiling. Stir in the barley, reduce heat to a simmer, cover the pot and continue to cook for 20 minutes.

  • Pat the meat dry with paper towels. Season lightly with salt and pepper. Heat 1 tablespoon of oil in a large Dutch oven, over medium-high heat, until it begins to shimmer. Add the beef in batches and cook until well browned on all sides. Remove the browned meat to a plate and set aside. Continue with remaining beef, adding more oil as needed. Lower the heat through the browning process, as needed, if the meat or fond (little brown bits on the bottom of the pan) begin to burn.
  • Add onion and carrots to the pan, scraping the bottom of the pan to loosen any browned bits and cook over medium heat until they just begin to soften about 4 minutes. Add the mushrooms and garlic and cook until mushrooms soften, another 4 minutes or so.
  • Return the browned beef, as well as any juices that have accumulated to the Dutch oven. Add 1/4 teaspoon black pepper to the pan. Crush the whole tomatoes with your hand and add to the pan. Add the rest of the ingredients and bring to a boil.
  • Reduce the heat and simmer, partially covered, until the barley is cooked and the beef is tender about 1 hour.
