These are absolutely the BEST cookies I have EVER tasted! Make a double batch and keep your waffle iron hot, as these disappear quickly!

Number Of Ingredients 6

1/4 cup butter, softened (or margarine)
6 tablespoons sugar
1 egg
1/2 teaspoon vanilla
1 ounce unsweetened chocolate square, melted
1/2 cup flour

Steps:

  • In a bowl, cream butter and sugar.
  • Beat in the egg and vanilla til light.
  • Blend in melted chocolate.
  • Add flour.
  • Mix well.
  • Drop by rounded teaspoonfuls 1 inch apart on a preheated waffle iron.
  • Bake for 1 minute.
  • Remove to a wire rack to cool.
  • Dust with icing sugar.

1 cup quick-cooking oats
½ cup white sugar
3 tablespoons unsweetened cocoa powder
1 teaspoon baking powder
½ teaspoon ground cinnamon
¼ teaspoon salt
2 eggs
1 ½ cups reduced-fat milk
¼ cup butter, melted

Steps:

  • Preheat a waffle iron according to manufacturer's instructions.
  • Mix flour, oats, sugar, cocoa powder, baking powder, cinnamon, and salt in a large bowl. Whisk milk, eggs, and butter in another bowl; stir into flour mixture until batter is just combined.
  • Pour batter into preheated waffle iron. Cook until golden brown, about 5 minutes per waffle.

2 ounces unsweetened chocolate squares
1/2 cup butter
2 eggs
3/4 cup sugar
1 teaspoon vanilla
1 cup all-purpose flour
1/4 cup butter, softened
1 1/2 tablespoons cocoa
1 1/2 cups powdered sugar, sifted
2 -3 tablespoons milk
1/2 teaspoon vanilla extract

Steps:

  • Cookies:.
  • Combine chocolate squares and 1/2 cup butter in the top of a double boiler. Bring the water to a boil; reduce heat to low, and cook until the chocolate and butter melt, stirring occasionally. Set aside.
  • Combine eggs, sugar, and vanilla in a medium mixing bowl; beat at medium speed of an electric mixer until blended. Add flour and reserved chocolate mixture. Mix well.
  • Preheat waffle iron. Drop dough by 2 teaspoonfuls onto iron. Close iron, and bake for 1 to 1 1/2 minutes or until done. Let cool on wire racks. Continue cooking cookies until your dough is gone.
  • Top with frosting once they are cool.
  • Frosting:.
  • Cream butter; add cocoa, beating well at medium speed of an electric mixture. Gradually add powdered sugar, milk, and vanilla, beating until smooth.

Sorry, the recipe didn't say how long they cook (so I guessed on the prep and cook time), or how much powdered sugar to use, and I haven't made these in awhile so I don't remember. I'm also not sure about how many dozen this makes, I just guessed.

1 cup margarine

1/2 cup cocoa
1/2 teaspoon salt
2 cups flour

1/3 cup margarine
6 tablespoons milk
1 teaspoon vanilla extract
powdered sugar

Steps:

  • Cookie: Cream sugar and margarine.
  • Add eggs and vanilla, stir.
  • Stir in flour, cocoa and salt.
  • Mix thoroughly.
  • Drop onto hot waffle iron.
  • Bake like waffles.
  • Frost when cool.
  • Frosting: Put ingredients, except powdered sugar in a medium saucepan.
  • Boil, add powdered sugar until it gets to desired thickness.
  • Cool slightly, frost cooled cookies.

1/3 cup shortening
1 ounce unsweetened chocolate
1 large beaten egg
1/2 cup sugar
2 tablespoons milk
1/2 teaspoon vanilla extract
3/4 cup flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup chopped pecans

Steps:

  • Melt shortening and chocolate on low heat. (I use butter-flavored shortening - BUT NOT BUTTER OR MARGARINE).
  • Let cool.
  • Combine beaten egg, sugar, milk, and vanilla.
  • Add chocolate mixture and stir well.
  • Combine dry ingredients and pecans. Add to wet mix.
  • Have(preferably non-Belgian) waffle iron on medium heat and drop a tablespoon on each waffle section (Some irons make two waffles, some make four.)
  • Close and cook for 2-4 minutes.
  • Cool on wire rack. Sprinkle with confectioner's sugar.

Crisp, yummy cookies which a lot of people seem to exchange around the holidays. I think the Italian verson contains anise.

1 cup butter or 1 cup margarine
1 cup sugar
1 tablespoon vanilla
1/2 teaspoon salt
2 eggs (or equivalent)
2 1/4 cups flour

Steps:

  • Preheat waffle maker.
  • Place butter and sugar in a large mixing bowl.
  • Cream together on med-low.
  • Add vanilla and salt, increase speed to medium.
  • Add eggs and mix until smooth.
  • Decrease speed to low, add flour and mix well.
  • Divide batter into 4 3/4 cup portions.
  • Using one portion, drop batter on each corner of the grids.
  • Close waffle maker and bake until steam no longer escapes (about 3-5 min).
  • Carefully remove waffle from maker and allow to cool.
  • Serve plain or with your favorite fruit filling and whipped cream.

My friend Clark made these cookies for an Oscar party. His theme was The Waffle of Wall Street. He won first prize so I decided to try them. So yummy. He used chocolate chips and butterscotch chips. I subbed mini peanut butter Reese's Pieces, since I didn't have any butterscotch. I also used half white and dark brown sugar, since I didn't have any light brown sugar. This recipe is great for summer - you don't have to turn on the oven! Don't make them too big. I baked them 8 at a time on my waffle iron and got around 40 cookies.

3 large eggs
1 cup light brown sugar
4 ounces butter, melted (1 stick)
1 teaspoon vanilla
1/2 teaspoon baking soda
1 cup oatmeal
3/4 cup flour
1/4 teaspoon salt
1 1/2 cups chocolate chips and butterscotch chips

Steps:

  • Spray waffle iron with non-stick spray and preheat. Re-spray as needed.
  • Melt butter and cool slightly.
  • Beat eggs with sugar. Slowly add melted butter.
  • Add vanilla
  • Stir dry ingredients together and add to mixer.
  • Fold in chips.
  • Drop spoonfuls of batter on waffle iron and cook from 1-1/2 to 3 minutes depending on your waffle iron. I did mine for about 2 minutes.
  • Remove carefully and cool on rack. (I used a small plastic spatula).
  • They will crisp up when cool.
