1 ½ cups All-Bran cereal
1 cup buttermilk
1 egg
1 egg white
1/3 cup oil
2/3 cup light brown sugar (, packed)
1 cup grated carrots (, grated on small/medium size holes)
1 cup chopped walnuts (, optional)
1 cup raisins
1 Tablespoon vanilla extract
1 cup all-purpose flour
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda

Steps:

  • Preheat oven 375 degrees F. Line a standard muffin tin with paper liners or grease with cooking spray.
  • Add raisins to a small bowl and soak them in hot water for 10 minutes, to allow them to plump. Meanwhile mix together bran and buttermilk, let stand 5 minutes.
  • Grate the carrots and chop walnuts (if using) and set aside.
  • Add egg, egg white, oil, sugar and vanilla to a mixing bowl and mix by hand until combined. Stir in bran mixture. Stir in carrots, nuts, raisins.
  • Stir together flour, salt, soda, and baking powder, then add to the batter, stirring just until combined (don't over mix!).
  • Divide batter among muffin tins, filling them full. Bake for 16-18 minutes or until a toothpick inserted in the center comes out clean.
  • Allow to cool for a few minutes in the pan before removing to a wire cooling rack to cool completely.

4 kiwi (medium size) (peeled and diced to 1/2" size, approximately 1 cup total)
4 cups all-purpose flour
2 tbsp baking powder
1 tsp salt
1 cup granulated sugar
1/2 tsp cinnamon
2 egg (slightly beaten)
2 cups milk (*can substitute cow's milk with almond milk, coconut milk, or oat milk)
2 tsp vanilla extract
1/2 cup canola oil
turbinado sugar (for dusting)

Steps:

  • Preheat oven to 400 degrees. Line muffin tins with paper cupcake liners.
  • Sift flour, salt, sugar, cinnamon & baking power in a bowl and mix well.
  • Beat together egg, milk, oil & vanilla in a large bowl. Slowly mix in the dry ingredients. Fold in the chopped kiwi.
  • Spoon mixture into a cupcake liner & fill them to the top. Sprinkle with the raw/turbinado sugar.
  • Bake for approx 25 minutes. Muffins are done when slightly brown & a toothpick inserted into the center comes out clean.

1/2 cup sugar
1/4 cup oil
4 large very ripe kiwi, mashed
1/4 teaspoon vanilla
1 tablespoon lemon juice
3 cups flour
1 1/2 teaspoons salt
3 teaspoons baking powder
1 1/2 teaspoons baking soda

Steps:

  • Preheat oven to 350ºF grease 12 count muffin pan.
  • Blend the eggs, sugar and oil. Then add kiwi, vanilla and lemon juice.
  • In a seperate bowl combine flour, salt, baking powder and baking soda. Mix well, then fold into the wet ingredients.
  • Fill muffins cup and bake for 25-30 minutes.

1/2 cup sugar (use 3/4 cup if your bananas are not ripe enough and kiwis are tart)
2 cups flour
1/2 teaspoon salt
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
3/4 cup low-fat plain yogurt (plain or vanilla)
6 tablespoons skim milk (or buttermilk)
3 tablespoons canola oil
1 egg
1 teaspoon vanilla extract
2 large ripe bananas, mashed
3 ripe kiwi, chopped into small cubes

Steps:

  • Combine the first 6 ingredients (DRY) in a large mixing bowl; set aside.
  • Mix yogurt, milk, oil, egg, vanilla and mashed bananas together in a smaller bowl until well-combined (WET).
  • Add WET mixture to the DRY mixture, mix until just combined (DO NOT OVERMIX) - lumps are ok.
  • Now stir in chopped kiwi gently; you may also add chopped nuts if you like.
  • Bake in a pre-heated oven at 375°F or 180°C for 25-30mins (mini muffins take about 20mins).
  • Cool in pan for 10mins, then remove and cool thoroughly on wire rack.
