HERB AND CITRUS ROASTED SALMON

Citrus Herb Roasted Salmon with fresh flavors of lemon juice, white wine and rich olive oil.

2 pounds salmon (skin and bones removed)
Salt and pepper
2 whole lemons
1/4 cup olive oil
1/4 cup white wine (such as Pinot Grigio)
Small bunch of fresh parsley leaves (chopped)
Small bunch of fresh dill (chopped)
Small bunch of green onions (chopped)

Steps:

  • Begin by drying the salmon filets very well with paper towels. This will help the seasoning stick to the fish better.
  • Line your baking sheet or cast iron pan with parchment paper and scatter a few lemon or orange slices on the bottom.
  • Season salmon generously with salt and pepper and whisk together the olive oil, zest and juice of 1 lemon and white wine and pour about half of it on top of the salmon.
  • Toss together all your freshly chopped herbs and scatter them on top of the salmon filets, gently pressing down lightly so the herbs stick to the fish. Then pour the rest of the olive oil mixture on top and around the salmon.
  • Bake the citrus herb crusted salmon at 425 degrees Fahrenheit for about 10-12 minutes. Keep an eye on it because thicker salmon may take a bit longer and thinner filets, less time.
  • Serve salmon with the poaching sauce and spoon over your favorite side dish.

4 slices fresh lemon
4 slices fresh orange
4 (6 to 8-ounce) skinless salmon fillets
Sea salt and freshly ground black pepper
2 tablespoons freshly chopped dill
2 tablespoons sun-dried tomatoes in oil, plus 1 tablespoon oil from jar
2/3 cup white wine

Steps:

  • Preheat the oven to 375 degrees F.
  • In a large 9 by 13 shallow baking dish place 1 lemon slice with 1 orange slice side by side so you'll end up with 4 groups. Each salmon fillet will have its own bed of citrus. Season each fillet with salt and pepper then place each salmon fillet over the 2 slices of lemon and orange. In a small bowl mix the dill, sun-dried tomatoes and tomato oil. Divide mixture on top of the salmon fillet, then drizzle with the wine. Place the baking dish in the oven and cook for 8 to 10 minutes.

Salmon is the perfect fast food, since it can be on the table in a matter of minutes. Here, Ree cuts it into chunks and threads it onto skewers to further speed up the cooking time. Salmon also works well with a marinade and will easily absorb your favorite flavors.

1 lemon, zested and juiced
1 orange, zested and juiced
1 cup chopped fresh parsley, plus more for serving
3 tablespoons chopped fresh dill, plus more for serving
1/2 teaspoon paprika
1 clove garlic, grated
Kosher salt and freshly ground black pepper
1/2 cup olive oil
2 pounds salmon fillets, cut into 1-inch chunks
2 cups arugula
1 cup Greek yogurt

Steps:

  • Set the oven to broil. Line a half-sheet pan (13-by-18 inches) with foil.
  • Combine the citrus zests, juices, parsley, dill, paprika, garlic, 1 teaspoon salt and 1/2 teaspoon pepper in a bowl. While stirring, add the olive oil until combined; set aside.
  • Add the salmon to a separate bowl. Pour half of the sauce mixture over the salmon, tossing to completely coat it. Thread the salmon onto four 15-inch metal skewers. Sprinkle lightly with salt.
  • Add the salmon skewers to the sheet pan crosswise, allowing the skewers to hang off the edges and keeping the salmon from touching the pan.
  • Broil until the edges of the salmon become golden and it is cooked through (no need to turn), 7 to 8 minutes. Transfer to a bed of arugula.
  • While the salmon rests, spread the Greek yogurt in a shallow bowl. Top with the remaining sauce mixture.
  • Garnish the salmon with more parsley and dill. Serve with the Greek yogurt on the side.

4 (5 1/2 ounce) salmon fillets
2 lemons or 2 limes (I sliced, 1 zest and juice only)
20 basil or 20 mint leaves
2 tablespoons butter
1 clove garlic, minced

Steps:

  • Mince a few herb leaves for butter sauce and set aside.
  • Cut two deep bias cut slits across the width of each fillet.
  • Stuff each slit with a citrus slice and herbs.
  • Preheat oven to 425 degrees.
  • Combine butter, garlic, citrus zest, juice and minced herbs in a small pan over high heat, and boil for 1 minute.
  • Pour the butter sauce over fillets in a baking dish.
  • Bake for eight to 12 minutes depending on thickness.
